I'm stumped on what to do with fresh fruit that is too large for one person, specifically watermelon, honeydew, and cantalope. I love these and want to enjoy them since they are in season, but they are just too big to eat before they go bad. I also don't want to eat watermelon everyday for a week and cantaloupe the next week, etc. I haven't had any luck freezing these.
Of course, these were no problem before, but now I'm looking at portion size - even double portions
