Where I live some of the stores will sell a half a melon or a wedge or slice of watermelon. I like berries a lot as they don't usually come in large quantities. Also peaches are a great alternative as are plums. This time of year I love fresh fruit in all shapes and sizes.

I'm stumped on what to do with fresh fruit that is too large for one person, specifically watermelon, honeydew, and cantalope. I love these and want to enjoy them since they are in season, but they are just too big to eat before they go bad. I also don't want to eat watermelon everyday for a week and cantaloupe the next week, etc. I haven't had any luck freezing these.

Of course, these were no problem before, but now I'm looking at portion size - even double portions

Maybe pureed and served with some whole wheat bread toasts and cheese as an appetizer or a snack?

I bet if you pureed it you could make some very interesting spicy popsicles! Frozen things are pretty welcome in this weather. I'd think you'd want them fairly small with those flavors.

Excellent suggestion! I did this the first day. Fish tacos with mango salsa. it was a hit.

I would pair with leftover meat or fish, some mashed avacado with a bit of lime, and tortillas for tacos.

So I have about 5 cups of mango salsa leftover from a recipe. I would love to get your ideas on what to do with it:

Mangos
Onions
Orange Juice
Jalapenos

Cooked and reduced. Mostly Sweet. All ingredients are in a chopped form, but obviously, food processing is an option.
