I changed my thinking: making breakfast & lunch is enjoyable for me! And since I cook for one, I arrange my meals around work & volunteer opportunities. Joining this challenge a few days ago, the first thing I ran into was time management. I had given up two days of vacation to attend trainings so I packed my cooler and off I went! I love my cooler and it has served me well. Dinner was another thing. I spend way too much time on SP receipes looking for something that appeals to me. Luckily it's summer & I love salads, fruits, and vegetables so I made quick dinners. For the rest of this week, I'm using the SP meal plan.
I'm going to continue with this challenge and work on making it a habit. I have heard that if you do anything for 21 days, it becomes a habit. I intend to make that true!
