you have definitely been through a lot, and that can throw you off. but i love this challenge, i am in week 3 right now, and i have come to realize that eating out can sabotage your goals. there are even salads that are loaded with calories if you don't watch what is in them. i have decided for myself and my family to no longer go out to eat after Sunday Mass but to go home and make a home cooked meal and know what I am putting into my food instead of going out to a restaurant and eating a high calorie high fat meal. This past Sunday I cooked a spiral ham, rice, salad, and biscuits and I was able to watch portion sizes AND know how many calories I was consuming without feeling guilty! I was even motivated to buy a new spice rack! I have ALWAYS wanted one! =D Good luck to you!

I love this challenge. I have read through all the Week 1 information and I have to say that I used to be pretty good about planning meals and cooking at home. Over a year ago, after a stressful in-house separation (during which I stopped cooking), I finally moved out to an apartment of my own. Cooking should have gotten easier with the reduced stress but adjustment to a new life where I cook for one person half the time and three the other half (when my two boys are with me) wasn't as easy as I hoped/thought it might be. So this year I want to get back to my old habits...and improve on them. I am hoping this challenge will get me cooking again....giving up the eating out except for special occasions. I am also hoping to give my slow cooker a regular workout :) Finally I am hoping that by cooking at home and eating out less....I will save some money for my boys and I to do more fun things :)
