i love my big crock pot. i uae all the time and believe me i always fill it up. one of my favorites is all veggies i buy the big can og green beans at wal mart and add 2 pounds of carrots with a pound of potatoes slow cook all day and i eat all week as i freeze portions for myself. i love my crock pot emoticon

i started this at 248.8 pounds and am hoping i can lose at least 50 in one year.

I Love to cook but my problem is I live alone and I sometimes dont have the money to eat as healthy as I want to. I bought the Sparkpeople coolbook and plan on making things that are in that. I like to double the recipe and freeze the rest for later that way all I hav to do is get it out of freezer and warm up. Im not always in the mood to cook so I grab what ever is handy and thats not always healthy. But if u do hav the freezer space its good to make more and freeze it in serving portions.

For someone who doesn't cook a lot, there certainly will be a few challenges. In the next few weeks, my goals include:
1- Preparing all of my lunches during the work week
2 - Trying at least one new recipe each week
3 - Portion control once I cook things l like
