I've had a real hang-up about my week one goal. One of my main goals through this journey is to make a lot more of my food at home from scratch. Currently the going number of meals I make is a whopping zero. So this is a huge change in lifestyle. And whenever the thought about making my food came up, it would cause anxiety. And so I pushed it off.
How mind you, instead I ate fruits and vegetable five time a day for my goal (still productive) but still not healthy COOKING.
Last night, I managed to do it! I grilled some chicken, asperagus, and a vidalio onion. And it was so easy, good, tasty, etc... It was such the positive experience I needed to motivate me to keep on going! I have a couple more items to grill sometime this week and one more recipe for sweet potato curry soup I want to try.
I'm happy with my progress. It may not be as fast as I wanted but it's getting done!
