I looooove laughing cow cheeses. They make so many flavors for different dishes and the light versions are only 35 calories.

I love mexican food and love chimichangas! So I decided to make a healthy version tonight. I used whole wheat tortillas, fat free refried beans, seasoned chicken, and laughing cow queso flavored wedges. Folded it up sprayed a little canola oil on them n stuck them in the oven. Then topped with shredded lettuce, tomato, and a small dollop of greek yogurt. Also made mexican rice using brown rice. Came out Delicious!!!

 Pounds lost: 7.0
