If i know I'm gonna be rushed later in the week and might not have the time or inclination to cook, I'll make 2 meals in one night and throw the other in the fridge or freezer for later in the week. Or if I'm making something that's a favorite i'll double the recipe and we'll have it twice that week.

I love the idea of this challenge and I'm so excited to get started! My goals for this upcoming week are just to try and focus on cooking at least two dinners at home for my boyfriend and I. I do pretty well with breakfast, and lunch, but dinner is where I fall short. If I can get myself cooking every night and eating healthy foods I think it will help a lot in hitting the weight loss goals that I have for myself.
