My first week was a success. I think my biggest challenge with weight loss (and gain) was being disorganized. Without having a plan, I usually caved and went for the fast food on days I was starving. And even days when I wasn't, getting food on the table for the kids was always such a hassle, I usually ended up serving the same things, with little variety and lots of complaints--pasta, lemon chicken, canned soup, sloppy joe, frozen whatever it is, and yes, even Top Ramen (ducks for cover).

Not having ingredients on hand was always my biggest hinderance. NOT ANYMORE! I am hitting the grocery store with a purpose now, and aside from stopping on my way to work to pick up fresh produce mid-week for end of the week meals and the drive through dairy barn for milk a few times a week, I am only spending one day a week at the supermarket. It is wonderful!

This week has been amazing for me and my family. The kids have helped me with the planning, cooking, and clean up just about every night. We have all been sitting down and eating together, and we have been getting much more balanced meals. Some of my meals were not low calorie, but because I knew ahead of time what I was having, I was able to plan the rest of my meals accordingly.

Today I cleaned out my cabinets, threw out tons of expired spices and found bags of Halloween candy that has been hidden away (for years I'm guessing) GROSS! Really, I had about 4 mostly full containers of bay leaves that expired between 2005-2008! All went in the trash. All of my spices are in one spot now, and they are all current. And now that I am cooking every day I will know which ones to buy in bulk, and which ones I need to limit.

I'm looking forward to week two, in which I will utilize the crockpot most of the week. I am going away for the three day weekend next week, so I will enjoy eating out while on vacation, but when I get back I made sure I already had the first few nights planned out (using ingredients I already have on hand) so I'm not left floundering when I get home.

I am so thankful for Sparkpeople for creating this challenge. This is the most positive change I've made so far, because it isn't just about me, it is about my entire family!
