For week 1, I made two recipes in large batch form. I made Split Pea Soup and Orange chicken that I put over broccoli. Since I am cooking for one, I make enough for several and then put it into small containers. I then have grab and go meals for the week. Then (like last night) when I am really hungry and not in the mood to make anything and ready to hop in the car to pick up pizza, I really have no choice since I have a ready made meal in the fridge.
I did learn that I need to make more than two items so I have a bit more variety.
