My veggies are: cabbage (all) collards, kale, turnip greens (occ) string beans in it's broth all cuts.
Quinoa and wild rice. brown (occ). black beans, pinto bean, black eyed peas. Onion, garlic spices.
Not much but playing around with it is fun.
I had a dark dish for lunch of wild rice, black beans, kale. (Wild rice is high in calories so I use it as a sprinkle). 1/2 cup of kale, 1/4 cup black beans, 1/4 cup of wild rice, 3 oz ground chuck.
Topped off with 1/2 Tablespoon of olive oil, onion and spices. 1/2 rice cake. I wasn't able to eat it all. very fulling.
I'm quite sure you can add bell pepper, garlic and tomatoe. or add a dash of ground cloves, and cinnamon.
I hoped this helped for a healthy dish. Note: wild rice is expensive but you use little of it and it's not starchy. Hmmm
