Thanks so much for all those yummy suggestions. I am really getting into cooking w/ beans so this will help immensely!

You don't have to sit with a bowl of beans. A Bowl of beans are usually as a soup. Think of chili with beans or a bean casserole.
After washing, soak beans over night. Drain and rinse. 1 part beans, 3 parts water, onion, bell pepper, seasoning. Allow to come to a boil, then lower to a low heat but more than a simmer. Takes about an hour. Put that on with a roaster in the oven when the roaster is done so is the beans.
I don't like rice mixed in the beans. but I use it as a side dish. There are all sorts of prepared beans, look at the ingredients to give you an idea. Mustard I like the brown in white/navy beans, ketchup, stewed tomatoes, hot peppers. I do black beans because they're less in carbohydrates.
Black beans, cinnamon, cloves, sugar, salt, pepper, onion, garlic...smells like a desert but oh! so good.

You mentioned beans (many varieties). I am intimidated by beans. I never grew up eating them and everytime my mother in law makes them it is refried and with a lot of oil and fat. I want to use them in the worst way, but don't know how to sit down to a bowl of beans. Any suggestions?

My veggies are: cabbage (all) collards, kale, turnip greens (occ) string beans in it's broth all cuts.
Quinoa and wild rice. brown (occ). black beans, pinto bean, black eyed peas. Onion, garlic spices.
Not much but playing around with it is fun.

I had a dark dish for lunch of wild rice, black beans, kale. (Wild rice is high in calories so I use it as a sprinkle). 1/2 cup of kale, 1/4 cup black beans, 1/4 cup of wild rice, 3 oz ground chuck.
Topped off with 1/2 Tablespoon of olive oil, onion and spices. 1/2 rice cake. I wasn't able to eat it all. very fulling.
I'm quite sure you can add bell pepper, garlic and tomatoe. or add a dash of ground cloves, and cinnamon.
I hoped this helped for a healthy dish. Note: wild rice is expensive but you use little of it and it's not starchy. Hmmm

I have already been trying to cook healthier at home, but I would like to makeover more of my recipes for healthier ones. I need to be better about planning meals for the whole week as well.
