It turned out so good!! I baked it with a little water and some olive oil on it. Then did some fresh stir fry with olive oil with broccoli, green & Red bell peppers, onion, splash garlic then added the squash and then added tomato sauce. IT was great!! Just needed some cashews and I think it would have just added too it all the better. Thanks for all the ideas!!

Okay-i need to put a stop to the summertime happy hour everyday- no wine until Friday night.

Also, keep up my meal planning and trying out new healthy recipes.

And finally, I need to stop feeling "yucky"- turn my negative thoughts around......

My goals this week are to walk each morning before work, take my lunch 3 times, and to drink more water. I'm having trouble with the water drinking. Anyone else too?

I'm going to clean out the cabinets (already did the fridge and pantry).

I bought a new cookbook and am going to cook 3 meals this week with my husband and son. So they are involved in the process and understand what goes into things and such. Great family time and will aid us as a whole :)

Today I went to the store and spent WAY more than I want to talk about on fresh produce and spices!! I already bought meats last week. I feel prepared for this challenge. :)

A spaghetti squash hint: If you slice it cross-wise instead of length-wise you get longer, more spaghetti-like strands. Also, they cook up well in the microwave.

Ohhh, spag squash. Cut it in half lengthwise, scrape out seeds, bake at 350 for an hour or so on a buttered cookie sheet until tender. Pull out "meat" of the squash with a fork. Delish!!!

My goal-exersize 7 out of 7 days. Reward: Power 90 DVD kit
