ARDENLY just cook up sme carrots in the microwave and run them through the blender. Cut them small add just a small amout of water and blend away. The colour is almost the same and it will noy have the banana flovour, not thta it is a problem but I think it will be closer to pumpkin.Carrots are so much less expensivebuy in 5lbs amounts and you can freeze in cup measures as needed for your recipe.

Might be good with mashed bananas to make spiced banana cookies. I'd add the same amount by volume as the pumpkin it calls for. The consistency should be about the same.
Alternately, you could use "pumpkin pie filling" and a non-spice cake mix that has the same density as spice cake - maybe a pound cake mix?

I saw this recipe for pumpkin cookies that used a can of pumpkin, a spice cake mix, and chocolate chips. I was so excited to try it, and then couldn't find pumpkin anywhere! "It's a seasonal item, we won't get it until around October". Any substitution suggestions? I was thinking applesauce, but I don't know if that would change the taste or not.

Laurie you're in luck - no calculation needed. if the recipe calls for 1/3 c oil use 1/3 c applesauce :)

Christine, I've heard others talk about subbing in applesauce, but have never tried it. Is it a straight one-to-one swap? If my recipe says 1/3 cup vegetable oil, is it then 1/3 cup applesauce? That I could do, but any calculation type stuff tends to foul me up. Math is NOT my friend! LOL!

I am trying to make over some of our favorites to make them healthier. One thing I have done successfully in the past is to substitute unsweetened applesauce for oil in recipes like brownies or cake and doing about 1/2 whole wheat instead of white flour.

I love to bake but I find most recipes use too much of too many things so i love to experiment. I think that healthy cooking should only contain truly healthy ingredients. Made from scratch and no chemicals added at all. I only bake with natural sweeteners, Honey and sugar are natural to me SPLENDA, is not. Serving sizes are also important and so are the actual nutritional information. I am making a recipe book just for our own use in which i personally RATE what I like what I omitted etc. The worst thing that happens is making a recipe, altering it, making it so much better but NOT KEEPING TRACK OF WHAT YOU DO. This is a SparkPeople recipe for Carrot Pumpkin Bars and they are SO TASTY! Of course, I'm in love with anything pumpkin so I'm a little biased. Be sure to let them cool completely before cutting and making them a day beforehand really lets the spices permeate the whole pan, I think they are better the second day.

Finding a healthy chicken recipe is pretty easy, but I'm having trouble finding healthy baking recipes to try. And SparkRecipes.com only separates by "dessert", so that's not much help - when I want to bake, I don't want to make a smoothie!
Has anyone found favorite baking recipes that they'd like to share? I'm already starting on ideas for how to pare down my existing recipes, but I'd like some new ones to try out.
