Freeze freeze freeze! Today I froze freshly squeezed lemon in 1 teaspoon portions in an ice cube tray.

Also I had some soya milk that was excess to requirements after baking a loaf, and DH suggested making another loaf and slicing and freezing it, to save wasting the soya milk.

I am not a big left over eater, but my hubby is. I pack portions out for him to take to lunch with him. I enjoy quick cool food for my lunch; salads, sandwiches, smoothies. I do use portions of protein from the leftovers after I have removed hubby's portions and add them to salads and such.

To take advantage of BOGO fruits I bought strawberries and blueberries and raspberries and we had quiches for breakfast and lunch one day with light cream cheese and light whip creme and they were delicious! The whole family went crazy over it and the fruit wasn't wasted!

Sunday I roasted a bunch of boneless chicken thighs and breast for dinner and had them with a cake, onion & tomato salad and fingerling potatoes. Today I took some of the leftover chicken and made a stir-fry. Tomorrow I am going to make a chicken, lettuce & strawberry wrap that I saw on Pioneer Women. Leftovers have endless possibilities.

There are endless possibilities with leftovers! Especially with Italian cooking! Sometimes I just throw stuff into a fry pan with some olive oil and create something! It can be fun!

I have used eggbeaters in recipes, but from an experience years ago - I may be allergic to them, so have not actually had the nerve to put them in my mouth. They probably are even made different today - it was so long ago.

I use eggbeaters with no cholesterol, they are okay to use once a week, taste pretty good for an omelette

I am fighting high cholesterol - so I am avoiding eggs, but truly miss an occasional omelette. Yesterday I sautéed an onion, added leftover broccoli and fresh spinach. I finished with thin slices of swiss cheese - I didn't even miss the egg - it was good to the last drop!

I always have frozen shrimp in the freezer. Tonight I am using leftover rice stir fried (saute in olive oil) with onions, celery (left over from lunch) and spinach and throw in frozen shrimp. I will season with light soy, celery seed and ginger.

I really like to cook.... once in a while. (Well it also has to do with how busy I am, how much energy I have (post polio syndrome) etc.)

So when I cook I make lots. Enough for another meal or two goes into the frig. The rest into containers for the freezer. Then when I have no idea what the next meal will be, or no desire to fix one, I go and dig through the freezer. I make feeble attempts to store different kinds of leftovers together, beans and soups in one stack, pasta or casserole in another. But they usually get mixed up. So I dig: A lentil soup, frozen baked squash, corn from the neighbors garden, green beans from our garden. After all this food is heated, there is usually enough leftovers for another meal

Hello, Leftovers are the best, yesterday I made chicken fingers, and had leftovers-- so today I chopped them up and put them in a casserole dish on top of some crunched up taco chips and covered with a few spoons of refried beans, and sprinkled some shredded cheese and baked it.... it was great with some low fat sour cream, avocado and salsa on the side!

I love leftovers. They always seem better the second time around . I really enjoy using leftover meat in a salad or make a pot of soup. I keep a container in my freezer for bits of leftover vegetables and when I make soup, I add the veggies in. Gotta love leftovers.

Those are great ideas! My problem is that DH eats whatever is there! If I make 2 pork steaks he will eat just 1 but if I cook 4 he will eat 2! I guess I will have to make sure I put leftovers in the freezer before dinner is served! LOL

I quite often use my leftovers for lunch. If it is a casserole I send it as lunch for my son. He doesn't like sandwiches in his lunch so this works out great.

I honestly don't mind eating the same meal twice. I realize it's not very creative but if I liked it the first time I'll like it the second time too. My only problem is knowing how long I can save leftovers safely. If I think I might have left something in the fridge for too long I toss it, which is not at all a creative way to use leftovers. I am going to look for some SparkPeople articles on safe food storage and then make sure I stick to those guidelines.

I love leftovers. When there is any food left over from a meal, it gets put into containers and either frozen or refrigerated. I try not to mix sauces in with the pasta, rice, potatoes until serving the meal then if there is a leftover it is more easily incorporated into the next meal. Example spaghetti sauce can be used for lasagna, goulash, veggie soup broth (added to liquid), even use it for bbq sauce and add other spices.
Mashed potatoes can go on top of a shepherds pie.
Roasts of any kind can be thrown into soup, stew, tacos, casseroles.
Flavored meat (like taco seasoned) can be put into an enchilada dish, sloppy joes, or calico beans.
I've learned to use my imagination. Most of the time my family has no clue that a leftover was used in the meal. I once changed an original meals leftovers into a full week of new meals!

try to turn one meal into two. If I make a whole chicken for instance I will have it with a vegetables and the leftover chicken I will shred and than cook on stove on med low with barbeque sauce and then have pulled bbq chicken on buns and left over vegetables (which sometimes I will put in oven to roast quickly to get a bit of a crisp.

I will try to plan meals to utilize leftovers in something else. It takes a bit more planning and thinking out but it sometimes can work well. Like if you have a beef roast on Sunday. On Monday have beef burritos using some of the leftover roast meat. Then maybe on Wednesday, use the remaining leftovers in a quick stew.
I will also plan on leftovers for lunches as well if I'm not using them in something later on.
This week I made chili one night, I have it save for lunch for one day (can freeze) and I have enough to make a chili mac another night.
Another option is I'll bake up a bunch of chicken breasts and then use them in different ways over the week - but I only have to bake them once (chicken for salad, chicken sandwich, chicken casserole, chicken with pasta, etc).

I don't really think of things as leftovers. Generally, when I prepare food, I know how many servings I'm preparing and plan when those servings will be eaten.

For example, yesterday I made broccoli slaw and I knew I had three servings so it will be included in three lunches this week.

Part of my healthy lifestyle switch is to think of food less as entertainment and more as medicine so I'm not bothered by eating the same thing for several days in a row as long as each day has enough variety.

It seems all my leftovers become soup, stew or make up an omelet
Luckily, not to many leftovers. There are just two of us. We buy in bulk, break up the packages and freeze seperately. I cook for two - and I serve for two. We rarely even have seconds.

you can make pork burritos. a tortilla, green chilies, onion, cheese if you like, wrap it up. yummy! or you can make enchilada's, corn tortillas, green chilies, onion, green chili enchilada sauce. yummy again!! :-)

when i have leftover meat i will sometimes get special breads/ rolls to eat the sandwhich. even wrapping something in a tortialla or pita will give the leftovers a new texture or new flavor.

I got a little crazy yesterday so I melted some fat free shredded cheddar over a 1/2 cup of garbanzo beans. Then I covered it with some medium salsa. Doesn't sound too good but it was pretty tasty. emoticon

Last night I made Lentils and had leftovers. So this morning I turned the left overs into a Salad and added it to the recipe box for the future. I love to cook and make new recipes. Now I have something different to go aside grilled venison tonight!

I use the bones too once I tear off most of the meat for chicken salad or anything else. Boil the bones in a pot of low sodium chicken broth and water, remove the bones add veggies of choice and any hidden meat left on the bones. Makes great soup.

When I make a roast chicken or buy a rotisserie chicken, I get a bigger one than I need. I love to use the leftovers to make different types of pulled chicken dishes. I have made pulled chicken bar-be-que quite a bit because it is a family favorite. I have also tossed it with a green chili and tomatillo sauce which is also very good. I also use it as an ingredient for soups, such as my green chili chicken posole. I am always on the look out for new ideas to use with it, and will probably try to find a Spanish style recipe to use with the leftovers from tonight's orange and saffron roast chicken.

I like to package my leftovers and take them to work the next day. Most of my co-worers drool over my food because it is homemade rather than boxed or bought in the cafeteria.

I am on the road a lot so have started packaging 1 portion servings to freeze and take with me on the road. That way I don't need to bring so many ingredients and I still get a home made meal!!!
Salmon is a great leftover . I usually bake or poach it the first night and then turn it into a salmon pasta or rice casserole with a home made sauce using poached mushrooms, celery and peppers in some low sodium chicken broth and thyme or dill which I then turn into a low cal 'cream sauce' by adding some skim or 1% milk and thickening with corn starch cause I'm gluten fee. Add salmon and serve over rice or quinoa or pasta with a sprinkling of parmesan.

I chop up leftover venison roast or beef roast and mix it with chopped onion, potato, & carrot and fry up my own hash which I serve with fried eggs (or poached). It's great and this way I can control the amount of sodium.

Slow but sure is the way to go.

We had leftover turkey, so we pureed about a pound of it with a cup of zucchini, some garlic, onion, peppers, and other herbs and spices and made turkey veggie burgers! Yum!

If I have leftovers, I either take them to work for lunch or freeze them in individual portions for later meals. I'm trying to stop wasting food.

Taken left over chicken and veggies put into a white gravy and put over mashed potatoes...or great over toast.....a la king......kids use to love it.

When I have leftovers my favorite thing to do is to make a really basic fried rice. It gets ride of that little bit of rice I always seem to have leftover when I eat something and it gets ride of leftover veggies and eggs that are about to expire. If I ate meat I imagain it would be a nice way to get ride of that as well. It's also a nice quick meal for when I don't have time/energy to cook much or for when I'm scraping the backs of the cupboards right before pay day.

mossacoli - cook once and and 5 main dishes worth of leftovers. i add a veggie or a side salad or a filling meal.

Left over meats like Turkey or Chicken is always used up in various ways. Soup is a good way as a little goes a long way. My Rice dinners make leftovers interesting and an easy meal as well.
All I do is add lots of chopped up vegetables like onions, bell peppers, zucchini, mushrooms, crushed garlic with some peas and sweetcorn to some uncooked rice in a large frying pan. Add herbs and spices to taste and boiling water to cover and let it gently simmer until the rice and vegetables are nearly cooed through then add the cooked left over meat.Sometimes I add spoon of light philedelphia cheese to it for a creamy texture.

Add cooked chicken to cooked wholewheat pasta and salad vegetables and serve with a vinaigrette dressing on the side for a great lunch. You can take it to work and tuck into a healthy salad.

I always have too much mashed potato when we make it so I freeze the extra that way I have some ready to use on top of cottage pie.

Left over stews, cottage/ shepherds pie or casseroles are great to freeze for a meal that you simply thaw out and re-heat on those days you are extra busy.

Left over's are always used up in different ways in our house and the results are always appreciated

We don't usually have very much left over because I try to cook a small amount since there's just the two of us. But if there are leftovers, I portion them out into containers and my husband takes them for lunch at work.

Cooking Beans from scratch takes time as does chili, spaghetti sauce (homemade) and other "prep item," these I cook in large amounts and divide into either individual serving, family servings, or both and I label and freeze them for later use. I also paracook some meats to speed up the cooking process on those days I know will be busy.

Leftovers can make a pretty good and easy meal for the next day. For example, leftover whole grain rice, mixed with red leaf lettuce, fresh spinach, other veggies on hand (tomatoes, mushrooms, carrots, etc) and a little dressing make for a nice and filling lunch the next day.
