Last week I made homemade cream of celery soup and added shredded chicken and rice, I made enough for 7 or 8 servings. The husband asked for pork chops one night so I added the soup mixture to the pork chops and it was very tasty.

I love using leftover turkey ham and vegetables in western omelettes than my family loves. Also, left over beans in soup or just a romaine and cheese salad.

It's amazing what great recipes Sparks gives us to make. I have been making a lot of different salads. Some of them are for four servings which I like so I don't have to think about what I should eat everyday.

I make homemade "tv dinners" by placing leftovers in individual servings and freezing them for days that I don't have time to cook healthy.

I made recipes for 4 to 8 people so that I don't have to cook every day. I pop a meal in the microwave and enjoy it once and plus again.

I'm cooking only for myself, but will frequently make the whole casserole or soup and use part and my house, then take part over and put in my folks' freezer, so they have an easy meal another time. Other times I just have it for dinner several times in the course of a week.

When I cook dinner I make enough for lunch the next day. Any time I fix a meal I try to fix enough for another meal. emoticon

I take care of my husband who has next to nothing of an appetite. Because of that I sprinkle Chia and Flax in his food for that extra oomph.

As I live by myself a I tend to cook extra portions of things then freeze them for another day. I also cook extra veges when I do a roast and then make a soup with them.

We went on one of our Senior trips which I know their portions are rather large. I take most of my husbands meal and some of mine. It's great for me because it's a treat to have someone else cook for me for a change.

For me, I use leftovers as a time-saver. I'll make a large recipe deliberately so I can have leftovers for work lunches. I'll make an extra-large batch of brown rice and then freeze portions to thaw later, because it can take so long to cook and sometimes I don't have the time to wait 40 minutes for brown rice. I'll make up extra-big batches of pancakes on the weekend and freeze them for a future mid-week breakfast treat. The rare time I have leftover veggies they become snacks or get rolled into a future meal, because extra veggies are always awesome.

I sometimes plan leftovers into my menu, too. Make up some rice on Monday, and save the extras for Wednesday to do fried rice, for example (because fried rice works best with cooked & chilled rice, I find). And sometimes we do "mish mash" dinner, where we just pull out all the leftovers and eat whichever ones happen to be in the fridge.

I hardly ever take home leftovers. My partner does but usually we end of throwing them away a few days later - or it's left in the car to smell it up overnight.

One thing I've done is ordering items separately --- I do sometimes pay a little more -- but Im getting a more management meal.

Share with someone so there's no leftovers?

Some places here let adults order from the kid's menu's and some don't. So places have senior meals that are little be less costly and smaller -- maybe one side less.

I have a husband who is not a big eater. When we go out to eat he orders from the children's menu. Perhaps you can try that.

Hi,
My point was that I don't always want to eat the left overs as I don't want the calories involved in that meal the next day so I wish restaurants would offer 1/2 size meals as an option.

the other tricky part is that if they are restaurant left overs sometimes I just don't want the calorie count again but darn it they don't offer the 1/2 price for 1/2 a meal deal....

That's good to know because sometimes when you reheat meat it can loose its flavor. I also like to use leftovers with my eggbeaters and add vegetables to make omelets which turns out pretty tasty. emoticon

When I am cooking meat that is in pieces (hamburgers etc), I will not cook the left overs for quite as long. That way for reheating they will be in the just right category and not the overcooked.
I will also chop up pieces of meat that are leftovers (beef, pork) and cook it with veggies for a stir fry type meal. I really don't like the same food multiple times, so I am always looking for new ways to re-purpose.

I dehydrate tomatoes that I later add to soups - gives a richer flavor. Haven't really tried the fruits, more other vegetables.

I love freezing!! I'll open a large can of green chiles, use what I need, and then freeze the remainder in ice cube trays. Pop them out into a small freezer bag and voila, easy to use portions. I freeze chopped veggies, canned tomotoes, chopped fresh jalepeno, chopped herbs.

take some left overs and put in a oven dish and add eggs beaten . pour over it and bake for 25 to 30 at 375 temp . the left overs can be anything veggies and a bit of meat add pasta . make it as big as you need to feed your family . i have small cassrotles dish from rachel ray and use them but not the first time i made it . it was way to much and had left overs of my left overs . hence i learned to cut back . you can use anything you have on hand add salt and pepper red pepper . spices as you like .

Freeze freeze freeze! Today I froze freshly squeezed lemon in 1 teaspoon portions in an ice cube tray.

Also I had some soya milk that was excess to requirements after baking a loaf, and DH suggested making another loaf and slicing and freezing it, to save wasting the soya milk.

I am not a big left over eater, but my hubby is. I pack portions out for him to take to lunch with him. I enjoy quick cool food for my lunch; salads, sandwiches, smoothies. I do use portions of protein from the leftovers after I have removed hubby's portions and add them to salads and such.

To take advantage of BOGO fruits I bought strawberries and blueberries and raspberries and we had quiches for breakfast and lunch one day with light cream cheese and light whip creme and they were delicious! The whole family went crazy over it and the fruit wasn't wasted!

Sunday I roasted a bunch of boneless chicken thighs and breast for dinner and had them with a cake, onion & tomato salad and fingerling potatoes. Today I took some of the leftover chicken and made a stir-fry. Tomorrow I am going to make a chicken, lettuce & strawberry wrap that I saw on Pioneer Women. Leftovers have endless possibilities.

There are endless possibilities with leftovers! Especially with Italian cooking! Sometimes I just throw stuff into a fry pan with some olive oil and create something! It can be fun!
