Hi Everyone, I can tell you which recipes that I made and enjoy. Hoping that you will find them just as good. Salsa Turkey Burgers, juicy and surprisingly delicious. Spinach Stuffed Salmon. I didn't stuff the salmon because I had frozen pieces of 4 oz. I put the spinach mixture on top of each one. That was very good too. The Garlic Brown Sugar Chicken was good too. I hope that you all will try these recipes and let me know it you too enjoyed them.

I doubled making the Pumpkin Pie Oatmeal having 4 breakfasts. I also made Asian Broccoli slaw which will also last me for a while.

Just started this challenge to help me plan my healthy meals and snacks for at least five days a week. What is the secret to doing this? I have dinner out or at boyfriend's 2x a week at least. have two dinners with my elderly parents and don't know what they have to cook until I get there. But I can have oatmeal with nuts and fruit for the two breakfasts and plan and take food for the first dinner and my lunch and snacks.

My goal this week is to plan meals around food that is already in freezer. O have a chest type model and I have to rotate what in it so it doesn't spoil. Veggie packs slip to the bottom and the frequently used items are on top .

Each day is a present, Make the most of it!

I think its great to be able to wake up in the morning and know exactly what your going to eat. Same for the rest of the meals. There is only two of us. Most of the time my husband does eat the food that I do so I have many meals ready on hand. Makes it easier for me. I take care of my husband who is suffering from early dementia and eats very little.

I have kept my fridge cleaned out. No unhealthy stuff in there. I have plenty of room for the healthy fruits and vegetables along with fish and chicken. We are enjoying our good eating plan. The crock pot has been a nice addition to some of the meals I prepare, as you indicated - no thinking what to eat at the last minute. Thinking ahead is the smart thing to do.

I used my crock pot to make oatmeal cereal for three mornings. Now I don't have to think about what I will have cause its already made. Same with making three peanut butter banana wraps.

To plan and cook dinner at least 5 times this week. We eat at church 1 night a week and depending on how week goes sometimes will eat out friday or saturday evening.

My goal for this challenge is to have a healthy dinner planned for every night, with a couple of quick meals ready for days when my schedule unexpectedly changes.

I seem to lose energy and motivation in the late afternoon so if I haven't planned ahead or if something unexpected comes up I am very tempted to resort to takeout.

I need to use more of my resources - crockpot, prepping ahead, well stocked pantry - and keep them organized.

I started to clean my closets one at a time until I rearranged stuff. It was a job and a half and took the week to do it. I took everything out of my freezer one shelf at a time and made a list which I posted on the door. Didn't realize that I had so much.

I want to get back to healthy cooking using real ingredients. I plan to cook at home five times each week. I will take leftovers from home for my lunch at the office.
I want to lose 3 pounds in February. (I have already lost 1.8 this month).

Joined the Healthy Cooking Challenge. I make healthy choices on the fly but it's easier to order out when I don't plan. It's a vicious cycle and the scale isn't moving. Week 1 meal prep. Printed the Weekly Grocery Shopping List found recipes using Spark & Pinterest and I am ready for the week; breakfast; lunch and Dinner! This week's goal is to stick to the plan & make my husband stick to it too.

I do a lot of the week one items, my problem is the energy to actually do the cooking when the time comes. I need to strengthen the good habits I already have and figure out how to bust the cooking inertia.

I had a friend tell me that she sets up the cooker the night before, hers has the removable crock, and puts the crock in the fridge, then the next day she just puts it in the cooker. Definitely going to try that!

That's a good idea. Some people set the cooker before they go to bed. I for one do not like that idea. Setting it up between breakfast and lunch is better for me. I'm retired.

Thanks Harriett14, I do cook extra and use the leftovers for lunches. I've just started trying to use a slow cooker but I find that I often forget to set it up and then "poof" it's dinner time. I'm going to try setting reminders on my calendar.

When I cook I cook recipes for four or six people this way I don't have to cook everyday. Using a crock pot makes meals easier. Perhaps you would like to try that method.

My husband has some things wrong with him and one of them is lack of appetite. That has not stopped me from food shopping. My freezer was a mess and I didn't know exactly what was in it. I bought some open trays, took everything out shelf by shelf and entered them on Excel, printed out the sheet and put it on the door of the freezer. Now on to the freezer in the refrigerator. Its so much easier to prepare when you know what you have.

I am going to cook up some different types of dinners this week such as apple stuffed acorn squash and layered Mexican dip. I know that it's a dip but I'm going to eat it as a salad leaving out the tortilla chips.

What I do for the days that I don't feel like cooking is go to my freezer. There are so many recipes to choose from on Spark that are any where from four to eight servings. I freezer at least two of them. You can try that.

I used to eat a lot of Lean Cuisine, until I really checked out their sodium content! I'll probable pass them by from now on. WAY too much for my liking.

My next problem is Sunday. I don't cook that day, so what do I have now. Sunday was my Lean Cuisine night.

Next is my laziness. I enjoy cooking, but it is definitely not my favorite thing to do. We live in the boonies of NH, and it is hard to get a variety of fresh vegetables, but I suppose I will have to start looking harder.

I'll try this and see how it goes.

Made the two salads and I must say that I liked the bean salad better than the blueberry one. I have half of the jicama left and am going to try the watermelon and jicama salad next. I find this to be very exciting.

Good for you , Jan. I made Stuffed Peppers which I had put into the freezer. When I took them out they were just as good as when I first cooked them.

Today I made a new dish, Eggplant Stew. It was delicious. My goal is to try different fresh vegetables from the Farmers Market. SP makes it easy due to all the great recipes.

I planned my menu this week and the grocery store was a breeze. Did not end up with any junk in the cart for myself...BIG WIN..

My kitchen has always been well organized I love to be in the kitchen no matter what I'm doing. We have a island and I sit there and do a lot of different things that don't include food.

I am in the process of re-organizing my kitchen. I never realized how much clutter I did not need in there. Now I have everything I need right at my fingertips. Makes it easier to fix meals when I am not searching all the time for something I need.

We went on a Senior trip yesterday. I kept saying to myself that I will be picky with what I will eat. I did well at first then I blew it on dessert. My goal went down the drain. Today I will follow my proper meals.

What do you hope to accomplish during this challenge? I guess I would love to make healthier meals my whole... picky... family will eat and want again!

Do you hope to cook a certain number of meals each week? I normally cook the 5 days a week, so maybe switch that to 6 meals a week made at home (wink ~ One day to rest, hee hee)

Cook faster? Quicker and easier meals... BUT healthy!!!

Make over your favorite recipes with healthier ingredients? Made over my Mac-N-Cheese and it was a hit! Still not the best for us, but still good to enjoy every few months or so. Looking to do the same with another family favorite! Have to think of one. Maybe our Chicken/Turkey Pot Pie?!!??

My goal was changed. I now plan to watch my potasium level and heart rate at the gym because of my chronic kidney disease my heart rate is not suppose to go over 120, mine has been 125 at gym,too hard a workout for me. I changed all menus for the week to lower my potasium so I do not get sick with the help of many other websites that state exact amounts in food. I will do better with my health now and hope to lose more weight. I will walk today for 60 minutes and be more careful at the gym.

I made up my mind that I was going to eat fruit as my after dinner snack with the usual Greek yogurt. So far so good. It makes me feel full and contented.

I started making a weekly menu years ago not as a way to lose weight, but to manage my grocery budget. I wrote up the menu, made a list of the things I needed, and if something wasn't on the list, I didn't buy it. it helps keep my grocery budget on track, and when I plan healthy meals, it helps keep my calories on track!

We already cook most of our meals at home, so my goals this week are to try some new (toddler-friendly) recipes, and to plan my snacks better so I'm not tempted to buy a muffin or other bad treat. I work downtown and there are far too many options for baked treats (a weakness of mine), etc.

On the 27th I stated that I wanted to stay on track. Want and doing are two different ways of the mind. Went on a trip with my Senior club and the mind or whatever took over. May 1st. is a new goal, gonna lose that two pounds plus I hope.
