Good morning guys. This looks like a really great challenge.
I am trying to learn how to cook healthy. The reason why.
I want to have a healthy life style. Eat healthy so want to learn to cook that way.
Second reason I got a boyfriend who is a sweet heart. But can't cook.
Chris likes to eat out a lot. So maybe I can cook nice meals for him.
That are both healthy and doesn't come out of the freezer section.
(if that can be helped.) Plus, I want to teach the boys to eat well.
He has a 17 yr old and a 13 yr old who love to eat junk and not a lot of veggies.
Looking forward ot getting to know you all. Can't wait to help you reach your goals.

My goals with this challenge are to:

1. Start shopping once per week – use coupons to save money and plan my meals around my coupons.

2. Incorporate more vegetables into my diet.

3. Eat less meat while still getting protein.

4. Avoid fast-food.

5. Have a meal plan that is flexible enough for surprises and for me sticking to it (sometimes I’m not always in the mood for what I planned on eating on a certain day) but strict enough that it’s useful.

I like your goal of 4 meals per week and having one be meatless but high in protein and I also like that you are trying to eliminate waste. I want to learn how to make a meal plan that makes it possible to use my leftovers either by freezing them or incorporating the ingredient into another meal.

I like your idea of trying two new recipes for week – I have stacks of recipes and a lot of cookbooks but have yet to actually put very many of them to use. I’d like to learn how to make big batches in the crockpot and freeze the leftovers so I can use them later in the month.

I love to bake as well and I like sweets – I need to learn how to bake healthier, with substitutions. Do you have any tips, I know there’s a way to use applesauce, I think it’s instead of sugar? Or butter? And I started making flourless pancakes with bananas and eggs, they’re pretty good.

I'm going to clean my kitchen and organize it better. Having two children who want to 'help' means that things don't always get put back where I'd like.
I'm also going to plan better meals and cook more often. We have quite a commute, and two picky eaters, so when DH or I have to work late, its fast food, pizza or what we call 'kid food' (hot dogs, leftover pancakes from the weekend or grilled cheese). The kids are starting to get better about eating, but it's still a struggle.

I actually made brunch for my husband and I on Friday, baked some super healthy muffins that I shared with my in-laws that evening, and created a recipe for a healthy high protein high fiber microwave muffin that I made for myself for dinner last night.

I want to cook at least 2 healthy meals at home per week. I almost never cook currently and need motivation, skills, and confidence cooking. I especially need to eat more balanced nutrition for breakfast and lunch as I work from home and often just eat a bagel and a bowl of cereal before going out for dinner with my husband between 7:30-8:30. Need to go out less, too. Perhaps if I bake some healthy muffins once a week and maybe some higher protein fix ahead that I can grab quick.

My goal is to keep eating healthy and not fall off the wagon! Tonight was pretty decent: pan seared salmon, mixed vegies, a wonderful kale/romaine salad and a cup of clam chowder. I love cooking, and so does my husband, so that is some added support. We don't go out often for dinner meals, but if we do, they have to either have a salad bar or offer good salads!

My goal is to really watch my carb intake and make better carb choices. Also to eat cleaner. I set myself up last Saturday and today has been successful. Also tracking food for the following day the night before.

Life would be much more upbeat if there was just background music no matter when or where you were doing things.

However he still a little of a junk food guy so I am going to set up a cupboard just for me of good choices I can snack on in a pinch. That way I won't be tempted. emoticon

I am going to "try" to keep on a menu. I have no problem planning or shopping, I have issues not deciding to just go out. Since moving to Sacramento I have had less of those moments mainly since I am unfamiliar with anything here, and I despise chain restaurants. My main goal is to relearn how to be innovative with a CSA delivery and use up all the produce before it has to be tossed out. If I keep focused on the fact that tossed food is tossed money, maybe I can remain focused.

I hope I posted this correctly.

I am going to use the Zone Diet meal planning web site I just subscribed to plan just my dinners for the first week. I am starting small until I get the hang of it. The web site allows for planning three regular meals as well as several snack meals all to meet your both the Zone specific Carbs, Protein and Fat ratios and your calorie needs for as many days ahead as you pick and prepares a shopping list. You either plan the meals your self or have the site make a plan. If you don't like the sites meal choice you can click a button adjacent that meal to list possible substitutions to stay in the general Zone dietary plan. The site allows you to plan a single meal for more then one then suggests the portions according to individual calorie requirements. Eventually you supposed to be able to train the site to select from among favorite foods or to pick similar meals. I don't know how this will work out but I am game. This week I have been just using what we have on hand.... It is turning out great! I can't really do any shopping for a few days, so it makes it difficult to eat fresh, healthy, and clean. But now- I am trying my best! Come Friday- I will have my shopping done. Until then....well I will make do!

For my first week challenge I aim to create a meal plan I can follow easily in the next two weeks. I want to cook healthy meals at least three times a week and stop relying on processed foods. I want to incorporate more fruits and vegetables in all my family's meals. I'm trying to use the crockpot more. Yesterday, I made Slow Cooker Healthy Potato Soup and it is delicious!

For my first week challenge it was a difficult choice. There are 8 people in my family. 2 adults and 6 children. 2 in high school that seems to eat all the time, 2 in middle school that seem to eat all the time and 2 toddlers that eat all the time. I had been trying to mix in clean eating with comfort food and have been successful. So now, I'm cooking not only from scratch but will be working on cutting out salt and finding different ways to add flavor. Portions portions portions.

My goals for the week are to clean out the refrigerator and freezer. See what is there and try and plan for the week. I just have myself to cook for and usually just throw together something. I find it hard to plan menus and think that far ahead. I also tend not to follow through on the plan as I am hungry for something different or too tired to follow the plan, so we shall see how this works.

My second goal is to try one new recipe weekly for the challenge.

My goals are to purchase a crock pot, prepare 1 healthy meal every other day that we can eat for 2 days, only eat resteraunt/fast food 1 day a week on Sundays. I am hoping by the end of this 4 week challenge that my family's reliance on fast food is broken, we are eating more fruits and veggies and consuming much less unhealthy fat and sodium!

It has been a great week of planning out meals for my hubby and me. Stir fry's with fresh ginger, amino soy (low sodium) and lots of veggies. We are staying away from processed, high sodium foods and it feels great!

I am REALLY bad at making meal plans. I usually wind up with something good for my plan, but I am forever dashing to the store for some ingredient that I did not have at home. I also want to clean out my pantry. I know I have three boxes of saltine crackers in there that are at least 2 or 3 years old which is REALLY sad. so much wasted food is in there. so I want to start off fresh and get my kitchen up to snuff.

the goal I am trying to achieve is try and change to a healthy way of eating for the rest of my life and I'm new to mostly fresh and raw .......I have to work out good healthy swaps or substitutes

I've got no problem planning my meals. But I am looking for healthier versions of our regular meals and trying to add some tasty but healthy new recipes to my repertoire.
I aim to have home cooked meals at least 6x a week.
And I cleared out my kitchen off all junk-foods/snacks last week and replaced them with dried fruits and nuts.

I am totally dragging my feet for writing out and planning my meals. I have thought about it-and I am drawing blanks on what I can have for dinners, lunches, etc... I think for one of these days, I will have stuffed peppers for dinner. Sounds good to me!

Today is devoted to cleaning out my fridge. Ridding myself of all "old" and "expired" condiments, along with just cleaning the shelving of the unit, especially along with the two drawers at the bottom. I do have my measuring cups out on in sight, along with a food scale, but what I want to do is sort out my cabinets and dishes used for cooking. I really need to reorder them. I also already have the utensils in an open container on the counter!

I still haven't made out a menu from yesterday. I have no idea why I am dragging my feet-but today I will snap to it!! I found a printable format I really like on www.organizedhome.com for a shopping list and weekly/monthly menu plan (free printable). Take care, Jen

I know I'm a little late to the game, but my goal this week is to actually go grocery shopping and get rid of the things in my pantry I'm never going to use, like pop tarts and fake mashed potatoes I got from the dollar store.

Also, I wanted to make my lunches for next week, this weekend.

Any suggestions for cold food? My kitchen is like an inferno!

Well, now this is where the crock pot will really come in handy- for late night working and for preparing meals ahead of time-- you can large 'batch' it and then freeze it, or come home to a ready cooked meal!
