I hear ya. Today I ate really well, but exercising has been hard. I live in the high desert. Normally we are hot and dry, but the last few days we have been hot and humid. I am no used to that, and I am dragging today. Hopefully when it cools down some I can get in some exercise.

I finally figured out, for me, how I can enjoy eating Chinese luncheon and not gain a whole lot of weight. I now do not have to cringe when we go there more than once a week. Happy household.

I think fruit is fine. Kind of like Avocados. Avocados can be higher in fat, but it is a healthy fat.

I find that the sugar amount is hard to keep low. Some of the fruits have a lot. Someone said that the sugar in fresh fruits do not count. I can't seem to find any written answers. HELP!!

One thing I have learned is that "moderation" is the key. I used to feel so guilty if I went over my fat limit when I first started spark people. Now I pretty much know how much to eat at one time. If I go over my fat intake a bit at the end of the day, then tomorrow is another day to do better. A small piece of cake won't hurt you if the rest of the foods you eat are small proportions. And of course, if you enjoying baking, then you can modify the recipe to make it lower in fat or sugars. I am a big tea drinker. I stopped putting sugar in my tea a few years ago, and use Stevia instead. You will get it down to where you want to be.

My Hubby bought pepperoni pizza tonight for dinner. I didn't have much of a lunch, so I had one peace of pizza. We seldom go out for dinner anymore, but I usually bring half of my dinner back. My Daughter eats what is left. I am getting better. Hard when one of your favorite foods is before you lol.

I am finding it difficult to loose another 5 pounds. I keep kicking 2 pounds back and forth. I'm eating 1200-1250 calories a day. My husband loves this Chinese restaurant which we have been starting to eat there twice a week. Slowly I have been eliminating some of the items trading them off with vegetables. Today I pledge that I will give up the egg roll.

Simple goal for me:
I have a full pantry that I need to empty out before I move and I have a summer CSA that runs from three days ago to mid October. My Healthy Cooking Challenge is to learn to cook without choosing my ingredients - I want to get better at looking at what I have and making good stuff with that. Hoping to limit my summer shopping to the occasional gallon of milk, dozen eggs, or pound of feta, and I'll get all my dry staples from the pantry and my fresh fruits and veggies from the CSA stand.

Good for you JHennington. I know its not easy changing your way of eating. In the long run of things its well worth it. I have several things wrong with my back and shoulders. I found sitting in the chair doing yoga is very helpful. You can have your Italian food too. Spark People have a lot of recipes. Good Luck.

Make sure the fish you buy isn't from China or Thailand that is farmed raised. We buy fish that is from the U.S., or Canada.

I joined the team because I need to eat better due to my many health issues..like Gerd, high blood pressure. I have decided to eat more plant based food, I will fresh fruits . I will eat some fresh fish, and chicken..I am drinking more water now and have just recently gave up pop...I feel better and I know if I can just keep it up the weight will come off. getting in al the exercise i need is challenging because I have fibro and balance issues but I am working on it.I also love to cook.. and I love Italian food.. but with Gerd.. can't have tomatoes to often

Hello Hickok-Haley, thank you for your encouragement. I did very well on our first half of our trip. Now for the second one. I think I can, I feel that I can make it back just as well this half.Time will tell. I did have wedding cake but ate mostly veggies and salads. Ate enough not to be hungry.

Wait until you are my age. You will always be forgetting something lol. That's why most of the time I need a list. My Hubby sidetracks me sometimes too, but like you, I enjoy my time with him. I did really well this week. We had one day where we had to take our dog to the Vet.Ear infection. Made for a rushed evening, therefore, ordered food to take home. I did eat good that day though, so I didn't go over my fats. The rest of the week we cooked our meals at home.

Made my menus and shopping list for the week. My husband went to the store with me again. I enjoy my time with him but it seems every time he is I forget something or over spend. I did forget to get cantaloupe but did get plenty of fresh vegies and other fruits.

My challenge goal is to cook more healthy foods this week. I tend to eat leftovers more than I like. I'm a vegetarian while my family is not. I always end up cooking basically 2 meals for each meal. My biggest challenge that I face every evening is getting my youngest son to eat vegetables. that are not always yellow or orange.

I used to make my own Spaghetti Sauce, and Burritos using Potatoes. I mentioned to my Hubby I need to start doing that again. You are right, if I make a big batch, I can freeze half of it.

I am not a highly organized person, never have been. I have never set down and planned meals ahead of time. It is a good idea though. It does help with shopping etc. I found writing down what we wanted to eat for the week didn't take me that long. We have our own veggie garden. We always use those veggies with some of the dishes we make. My Hubby has a tendency to buy box dinners. That is ok if you are having a rushed day, but I want to start having more home made meals.

I do go through the recipes that I haven't tried yet. Most of the time I need to purchase one or two items to complete the meal. I find that I'm never bored eating the same meals week after week. Works for me!

My #1 goal in this challenge is to learn to plan ahead so that I have a healthy meal prepared 6 out of 7 nights a week.

I hate cooking and tend to throw a meal together at the last minute. This basically means I fix whatever is fast and easy, and most of the time, we go out. But - For the past 3 weeks, I've been cooking at home even though my planning isn't very good. I joined this challenge hoping to be able to make a habit of planning ahead, cooking healthy food, and eating at home most evenings.

I have a ceramic frying pan and have just realised it requires no oil, so my first goal is to dry fry my vegetables etc in the pan.

Goal 2 is to halve the amount of margarine used when making my bread in the bread every day - every little helps.

Goal 3 is about using butter. I will not add butter to soups, sauces etc and spread it very thinly on bread, or not at all if serving bread with soups.

Goal 4 is to grill sausages instead of frying - my goodness, I can see how much fat I have been eating over and above what I need,

Goal 6 is about my favourite meal of the week, roast chicken and roast potatoes. I will only use 1oz of fat to roast the potatoes, and instead of using the fat from the chicken in my gravy, I will drain off the fat. I was shocked when I did this the first time, yesterday. The fat I drained from the chicken was about 5oz!!! We would have eaten that in the gravy. I scraped off the fat and underneath was some delicious chicken jelly which can be used to flavour soups during the week.What a difference this should make each week.

Goal 5 is instead of making a cheese sauce loaded with cheese, I will make a plain white sauce and then just grate some cheese on the top at the end.

I have a husband who hasn't a clue to what I go through when he constantly wants to eat out. I plan my meals and then I give in and go out. I have been kicking the same two pounds around for the last week. It makes me feel so discouraged. I don't like that feeling. while writing this I have come to the conclusion that I have to put my foot down and say "NOT TONIGHT".

Hello All,

New to this challenge. My goals are:

1. Create shopping
2. Meal prep for Mon-Fri on Saturaday
3. Salad in jars to last Mon-Fri
4. Find simple crock pot recipes

I never heard of Tajin seasoning. Is it a mild or hot one? What would you add it to?

Mrs Dash is good and it is low in sodium. (My ankles tell me so). There are three different varieties also.

My goal for week 1 is to plan in advance some healthy meals- especially breakfast and lunch as those meals I'm generally not at home for. I also would love to find some new recipes for suppers that would incorporate more vegetables for my family to eat.

I have found that Mrs Dash adds a lot of flavor for me. I also like basil, oregano and parsley to name a few of the seasoning that I add to my food. Perhaps if you haven't been using them you can try them to see if you enjoy them in your cooking. By experimenting with a few other herbs I have really spiked up my meals without adding any calories.

@Harriett14, you are so right...I feel like a broken record saying it.

I think one of my challenges will be to learn how to use different seasonings to add flavor rather than some of the more typical things like cheese and butter.

I like learning about things to swap in recipes. Such as using applesauce in place of other wet ingredients. Not sure how you calculate measurements or things like that--but it's one of my goals to learn how.

My goals for the challenge are to take my skills and improve them, to learn how to cook healthier meals. How to use different seasonings. I'm a great cook so says my hubby...but I want to be better. Especially cooking with seasonings and experimenting with flavors.

Tomorrow as everyone knows is Easter Sunday. I will be with some of my children and grandchildren. I was busy cooking vegetables that are a little bit more fancy than the norm but I did cut down on the fats. I have it in my head that I will be watching myself not to go too over board. Thinking it will be another day only with some of my family. Cheers to you all!

I'm excited to start this challenge. I'm a "southern cook" who just wants to learn to cook the meals my family loves in a healthier way(i.e. less fat, less butter) that still tastes good. I also need to work on meal planning.

I find it difficult sometimes to pick a low calorie lunch or dinner when dining out. I keep saying to myself no creamy, no fried, no this no that. So whatever I order I eat just enough to satisfy myself. It works!

I know that process foods are real easy to go to when in a bind. There are some that I really enjoy. I do indulge once in awhile. I have found that when I make a recipe for more than two sittings I'm much better off.

I want to do my best to stick to my meal plan. I use my weekends and prep healthy lunches for my entire family. Salads, fruit bowls, and healthy prepped protiens and veggies. A lot of times though I stray of course by throwing in a candy bar, or eating junk for dinner.

Some days, no, most days fly by without any problems. Then comes a day when nothing goes right and you can't wait until it's over. This happened to me awhile back and I felt like I was beating myself up. So, I began to think that I should indulge myself once in a while. Now I do. Once a week or sometimes a week goes by and I don't think of something extra. This has been working for me for about a year now. I hope that I helped some.
