I am going to cook healthy meals because I know that they are good for me. Cooking two meals plus doubling them is such a great idea someone shared. There is enough in the freezer for a week.

My goal was changed. I now plan to watch my potasium level and heart rate at the gym because of my chronic kidney disease my heart rate is not suppose to go over 120, mine has been 125 at gym,too hard a workout for me. I changed all menus for the week to lower my potasium so I do not get sick with the help of many other websites that state exact amounts in food. I will do better with my health now and hope to lose more weight. I will walk today for 60 minutes and be more careful at the gym.

I made up my mind that I was going to eat fruit as my after dinner snack with the usual Greek yogurt. So far so good. It makes me feel full and contented.

I started making a weekly menu years ago not as a way to lose weight, but to manage my grocery budget. I wrote up the menu, made a list of the things I needed, and if something wasn't on the list, I didn't buy it. it helps keep my grocery budget on track, and when I plan healthy meals, it helps keep my calories on track!

We already cook most of our meals at home, so my goals this week are to try some new (toddler-friendly) recipes, and to plan my snacks better so I'm not tempted to buy a muffin or other bad treat. I work downtown and there are far too many options for baked treats (a weakness of mine), etc.

On the 27th I stated that I wanted to stay on track. Want and doing are two different ways of the mind. Went on a trip with my Senior club and the mind or whatever took over. May 1st. is a new goal, gonna lose that two pounds plus I hope.

I just made a meatloaf in the microwave oven. Took all of 15 minutes and it was done. My goal is to lose those two extra pounds that seems way out of my reach. Been trying for months. Been with the same two pounds back and forth.

Hi! My goal for week 1 is to get into cooking more at home! We eat take out way too often.

I'm just lazy about cooking, so looking for easy ideas!

I want to meet the goal of cooking at home 2X/week.

I admit, I wish this was in the Oficial Spark Challenges.... I like checking in and earning points for completing a daily goal and finding everything in 1 place instead of having to check an E-mail! Will SP consider adding this to the challenge section?

Goals for the Challenge:

Plan breakfasts and lunches as well as dinners. At the moment, I plan dinners for the week but not my breakfasts or lunches so I want to plan my weekday breakfasts and lunches so that I can have a bit more flexibility on the weekend.

Try a new recipe for at least one meal per week. We are very much stuck in a rut with our dinners, e.g. burgers on Saturday, fish on Friday, sausages on Tuesday... Need to try something new to get out of the rut.

We gave up our garden two years ago so I have been planting tomatoes, herbs and flowers in pots. They have worked out very well. This year I'm going to start the seed planting earlier to make sure that I will have what I want.

Goal for the start is to get better at meal planning and that starts with tonight getting my grocery list together along with the menu plan. I have also decided to start large batch and freezer storage cooking and made spanish rice (some with black beans and seasoned ground beef and some without the meat) I also made a large batch of chili which is cooling and will be stored tonight. For tomorrows cooking adventure I took a turkey breast out of the freezer to thaw and make into a casserole and mini homemade pot pies for storing. Doing this so I can control the sodium and fat content and have a variety of meal options.

I have to wait until spring so I can get into my garage and get a cabinant that got put out there and that will help me to organize my kitchen better and give me more surface area to prep on. I am also gathering together all the plans, seeds, equipment and other ideas for gardening, cooking and canning this spring and summer. Have to start planning early, maybe that will give mother nature the hint that I am sick of winter already.

Kitchen makeover has been done for quite sometime. Organized cabinets and frig. Very little in either that shouldn't be there.

My goal this week is to plan our meals for the week on paper. By knowing what recipes I will prepare, I'll check if I have all the ingredients and will add the ones missing on the shopping list.

It's a challenge for me because I'm used to do this exercise mentally only, and if something is missing, I improvise and bring a twist to the recipe. But I'm determined to try it the best way.

My goals for this week are:
1. Try another gluten-free recipe
2. Use the groceries I bought today to make four dishes, which will provide leftovers for several more meals
3. Find two recipies (old or new) to make for next week.
4. Finish cleaning out my cupboards, tossing any expired food. There is no junk food in there!

Cooking one day a week is what I like to do. I found that if I cook for 2 or 3 hours, fixing what I want to eat for the week. I have food in the refrigerator to heat and go, all week long.
This works if you don't mind "leftovers".

Something else I did the other day: I did notice I had all kinds of different food in my freezer, not being used. I seen this on a site,so decided to try it..... taking my food and making crock pot meals. I went thru the freezer, taking out all the food, except my frozen fruit. Put it out on the counter, taking out my Food Saver and I went to work. I made bags of crock pot meals. I did have to buy some meats, (lean grass fed beef and ground turkey). I would dump a little of; corn, peas, kale, spinach..... into each bag, along with whatever else I wanted in that meal. Adding veggie broth. I did NOT add the seasonings. I want those fresh. When I was done with a bag, I would seal it up and back into the freezer it would go. I now that 12 different crock pot meals in my freezer. woo hoot!!!

I am trying to get my mind off food. It's a challenge that is very slowly taking place. I'm happy to say that it isn't a 24 7 deal but there are times when the thought is in my head and I start looking around for something that I can put in my mouth. It's a day at a time but I'm hoping that there will be many days between the longing.

My goal is to try to maintain my weight because I have been working hard to keep it down in spite of all that is going on at my home. I am trying not to let things up set me to the point of over eating. I am guilty of turning to unhealthy food when up set. Tonight has been that type of evening. I can't wait till the morning to begin to eat healthy again.

Hello Stephanie, I wish you all the patience to get on your healthy quest. I have found that SP was/is my best helping hand that I ever had.
My goal is to stay healthy, keeping my weight down and to be able to accomplish all that is in store for me.
When I know that comes a day, there are many, I would not have time to cook a meal I prepare two to three days ahead so that I can just go into the refrigerator and pull out our dinner.

Cook more often instead of reaching for fast and easy already prepared meals or canned and bagged items, also make healthier meals and food choices. Introduce myself and my boyfriend to a better lifestyle. Really reach out and get involved in SparkPeople other than just the trackers. Have better numbers on my blood work for my kidney disease functions and be lower in weight when I go back to doctor in November. Get more active and try new exercises that will keep my attention and make me want to do them again all while not hurting myself physically. Have a fun, safe and for me candy free Samhain (Halloween), get prepared to cook a more healthy Thanksgiving meal and enjoy the holiday season with less stress and pounds gained. These are some of my goals and I wish everyone the best of luck in reaching all of yours.

Eating healthy can be a challenge all in its own. Eating healthy and finding new recipes on Spark People is something I find very easy. I love the salads that I'm eating. Most of the are for 3, 4 6, and 8 people. I don't mind making them because I have been rotating them each day till they are gone.

I see where I made a type error. I meant walking. I do enjoy talking too. I cannot claim an injury there.
Several years ago I was painting my bedroom and I foolishly tried to move my double dresser away from the wall. It wouldn't have been so bad if there wasn't a rug under it. The damage was too server for surgery. I also was involved in two auto accidents.
We went to the gym yesterday and I was told to take it slow and easy. Which I did. Going again on Friday.

I already make most of our meals at home, but my challenge this week is to eat clean even though my husband is eating differently from me. He is supportive of my meals but he is a snacker especially in the evening in front of the tv. It is so tempting as I see him snack.

I am 4 days into clean eating so far and I want to make it a habit so this challenge will hold me accountable. I also need to plan meals further out so I don't have to fix something quickly that isn't what I really want because most foods are frozen. emoticon

This coming Monday my husband and I are joining the gym in town. My goal is to attend it three times a week. Hopefully!!!!! I'm really not an exercise person. I use to love to talk but because of two accidents injuries it is lost to me. Will let you all know how the gym works out.

I hae numerous challenges. One I work 2nd shift, so my clock is off kilter. Second, my wife keeps buying junk food. Things I used to eat, that I don't want to any longer. And I am the sort of person that hates to waste anything. But I will work on getitng my meals planned for the week, and if it works for her, okay, otherwise I need to look out for myself.

I often join these challenge teams, but I never set a clear goal to try to reach. I think that's why I fail so often.

My main goal for this challenge is to cook a minimum of 5 healthy dinners a week. I have been doing well so far this week, and blogging the recipes that I like on my food blog, but I know myself enough to know that I lack staying power. By writing this down, I hope I can come back to it and remember when my motivation fizzles out.

Received three very large zucchinis from my daughters garden. With four of Spark Peoples recipes I managed to cook them all up. I made a file for each category of food on my computer. When we enjoy a recipe I type good on the bottom of the name. This way I keep trying different ones each week. When I have enough of a variety for each vegetables, grains, salads etc I will have my own cookbook.

My week 1 challenge goal is to cook a new recipe. So often I am relying on the same old meals for dinner. Trying something new sparks me and my husband enjoys a change, too.
