My goals are to purchase a crock pot, prepare 1 healthy meal every other day that we can eat for 2 days, only eat resteraunt/fast food 1 day a week on Sundays. I am hoping by the end of this 4 week challenge that my family's reliance on fast food is broken, we are eating more fruits and veggies and consuming much less unhealthy fat and sodium!

It has been a great week of planning out meals for my hubby and me. Stir fry's with fresh ginger, amino soy (low sodium) and lots of veggies. We are staying away from processed, high sodium foods and it feels great!

I am REALLY bad at making meal plans. I usually wind up with something good for my plan, but I am forever dashing to the store for some ingredient that I did not have at home. I also want to clean out my pantry. I know I have three boxes of saltine crackers in there that are at least 2 or 3 years old which is REALLY sad. so much wasted food is in there. so I want to start off fresh and get my kitchen up to snuff.

the goal I am trying to achieve is try and change to a healthy way of eating for the rest of my life and I'm new to mostly fresh and raw .......I have to work out good healthy swaps or substitutes
May have to make a few changes this week as we will be going away
But next week will be week one

I've got no problem planning my meals. But I am looking for healthier versions of our regular meals and trying to add some tasty but healthy new recipes to my repertoire.
I aim to have home cooked meals at least 6x a week.
And I cleared out my kitchen off all junk-foods/snacks last week and replaced them with dried fruits and nuts.

I am totally dragging my feet for writing out and planning my meals. I have thought about it-and I am drawing blanks on what I can have for dinners, lunches, etc... I think for one of these days, I will have stuffed peppers for dinner. Sounds good to me!

Today is devoted to cleaning out my fridge. Ridding myself of all "old" and "expired" condiments, along with just cleaning the shelving of the unit, especially along with the two drawers at the bottom. I do have my measuring cups out on in sight, along with a food scale, but what I want to do is sort out my cabinets and dishes used for cooking. I really need to reorder them. I also already have the utensils in an open container on the counter!

I still haven't made out a menu from yesterday. I have no idea why I am dragging my feet-but today I will snap to it!! I found a printable format I really like on www.organizedhome.com for a shopping list and weekly/monthly menu plan (free printable). Take care, Jen

I know I'm a little late to the game, but my goal this week is to actually go grocery shopping and get rid of the things in my pantry I'm never going to use, like pop tarts and fake mashed potatoes I got from the dollar store.

Also, I wanted to make my lunches for next week, this weekend.

Any suggestions for cold food? My kitchen is like an inferno!

Well, now this is where the crock pot will really come in handy- for late night working and for preparing meals ahead of time-- you can large 'batch' it and then freeze it, or come home to a ready cooked meal!

I work in retail and I close 2 nights during the week. I need to start planning my meals so that I make enough to have healthy leftovers for myself and my husband. I never really did this just kind of winged it when it came to meals but now I am more committed to eating healthier so I'm learning a new skill. This is exciting!

The uses of a crock pot are endless!!!! I have learned so much with using one from baking items in it to pulled pork!!! use the internet, plus there are so many cook books out there! plus Sparks has a lot to offer for crock pots! Have a ball with your crock pot, especially when it comes to keeping the kitchen cool during the summer!

Living far north, in the north country of NY-- makes buying produce tricky! We have a VERY short season and the produce is not the greatest picken's! Plus most of the summer stuff is local and very expensive! Our farmers have to take advantage of a very short season.... that being said, I can only buy a small amount of produce to make it last a few days without it starting to spoil in the summer heat, and then be creative to use it up quickly as to not waste money.... but we do what we can do to get the health benefits and to enjoy eating a lot of fruit and fresh vegetables. We travel far to the grocers. We don't grow our own because of where we live(heavily wooded and mostly root and rock grounds) so we have to buy.

My goal is to get back to cooking healthier meals instead of stopping for fast food. I like to cook, but somehow I got off track for a while.

I did do some meal planning this afternoon at work while I was eating lunch. Then I went to the Global Market after work. Got lots of good (healthy & tasty) stuff. I'm actually getting excited about the meals I've planned for this week & the extras I'll freeze for later.

I am not sure this challenge is for me because I always cook at home, but I am finding more creative ways to make favorite recipes lower calorie now. My meal planning depends on what is on sale at the grocery often, I always plan to get fish for at least one meal, this week was haddock, one meal was planked haddock on the grill, and the other one poached haddock, yum! I took my usual Chicken Cacciatore recipe and slimmed it down, I used eggwhite to dip the boneless skinless chicken in and 1/2 oz of fresh grated parmesan cheese and browned it in 1 tsp olive oil. Then used 1/2 cup homemade sauce and 1 oz mozzarella cheese per serving, I served it with 1 oz multigrain pasta, all this cut the calories by half and it tasted delicious paired with a salad. I made two individual servings and put one in the fridge for later in the week.
I am learning that I used to use way too much oil and butter to brown items, now I measure out a 1 tsp in a non stick pan and it does fine and cuts a lot of calories and fat.
I work nights so lunches are packed or you don't eat at night, occasionally people will order out chinese, because it is the only one that delivers, I scanned the menu last time and ordered shrimp chow mein with white rice instead of fried rice and no appetizer, it was enough for several servings for my weekend!

I plan on making better use of fresh produce before it goes bad, sometimes that is hard when cooking for one and you can't buy smaller portions but I will try to plan several meals with the produce used in different ways so I don't get bored with the food. Looking forward to fresh produce from my garden but I would also like to utilize it better before it goes bad or to seed. I. want to make better use of foods in the freezer, planning meals that use them rather then buying something else.

My main goal with this challenge is to shift my mind from "diet lingo" like low fat, low carb thinking to healthy balanced eating. My nutrition tracking often indicate that I am missing nutrients and usually not enough calories. I have been reading that the body goes certain levels and enough calories or it goes into starvation mode.

I plan on eating more fresh fruits and vegetables. I will be cleaning out my pantry, getting Rid of junk food. Maybe I'll take it to work. They always seem to be looking for munchies. I also plan on eating out no more than 1-2 times a week. We go out several times a week more for convenience after work not having to cook. If I plan meals for the week, I can also prep ahead so, I won't have to eat out.

My main goals for this challenge is to start feeding my body better (any my family). So often, we rush around looking for dinner. I would love to create a habit of making healthy dinners a priority for my family. :) (And looking better as a result is only a perk!)

my challenge is to eat healthier. more fresh veggies and fruit and less processed foods. when my boys leave for the summer I tend to not cook very often, but this year that is going to change

make eating out and cooking healthy a habit (which will take time--I have to remember that) and to ignore the voice in my head that will last-second bypass my debate and come straight out my mouth asking for something unhealthy.

I also want to try a new small recipe each week and get a feel for making good veggies and simple meals well.

my challenge is to eat more fresh fruits. I eat plenty of veg, but do not eat fruit, it spoils on the counter and in the fridge. I like fruit salad (just different fruits cut up) but find that it does not keep and I do not like the time spent washing and chopping. Anyone have any storage ideas for fresh fruit or for fruit salad?

My goal to get my kitchen organized is done! Finished my fridge and freezer today. emoticon
Bought some smaller containers to take lunches to work. Made up some kale salad, boiled eggs, cooked up a batch of 7 grain cereal for breakfast. I didn't plan my meals for the week, but do have ideas ready to go.... emoticon emoticon

My goal for this challenge is to learn to make at least 4 new recipes for evening meals from the Eat for Health book by Joel Fuhrman. That means one recipe per week.
I also would like to learn to make at least 2 new dressings.

Ok, so I super bad in the morning with making breakfast...I will eat breakfast if it appears (or I buy it out) but I don't usually make the effort. I am anemic so I am trying to add protein to my meals (especially breakfast). This past week I made an effort to take food to work with me that is easy to eat (boiled egg, slices of red pepper, some cheese, baby carrots) and making the effort to prepare this the evening before (also a challenge because I feel tired a lot and I can be quite lazy after work). Since I've been doing this, I feel better and I'm not as cranky...but I'm still getting something on the fly before work to "tide me over." This is bad.

I found this challenge and thought it might help me get over the rest of this hurdle and add in healthier home-cooked meals for lunch and dinner.

My goals are such:

1. No eating breakfast out
2. Limit Prepared foods
3. Engage whole family in meal planning so that we are all happy with the choices being served/eaten

We often do meal planning, especially when money is tight...so this is not new to us. We shop about three times a week and from a list, so we're good there. Our typical fall down is follow-through. Whether we are tired, lazy or just not in the mood, we often don't make the meal that we have planned and we eat out or graze on less healthy foods.

So, this afternoon we are going to plan our meals for the next 7 days, make a list and buy the items for the next 3 days (we don't have a car, so typically don't buy all our groceries at once because it's not possible to get it home.

Then we will group meal items together in the fridge and cupboard and prepare veggies for breakfast and snacks the evening before. If we all participate, it won't seem so daunting and if we challenge each other it will be harder to "cheat!"

I am not a fan of cooking or the kitchen in general. But I have decided to make, an attempt. Months ago when I again started WW I cleaned out all my cupboards & fridge of the realltly unhealthy foods. Recently purchased their Power Foods cookbook. I pick out my recipes for the week, only purchased the food needed. So far, food is delicious, satisfying, filling, & best of all simple!

i am planning to officially restart this challege on may 1st. In order to do it properly, i am going to prepare so i am ready and can do it successdfully.

1- Plan your meals for the week. I go to the store a couple times a week. i went yesterday and planned supper for 3 nights.

2- Make over your kitchen: this is a work in progress. i did a little today. Wednesday is garbage night so i am going to go through the kitchen a little each night so i have a proper kitchen inventory and can make meal plans and back up plans.

3- Set Your Goals. What do you hope to accomplish during this challenge? i want to make sure i am eating more veggies for supper. i do well with eating fruit during the day. i want to have leftovers 1 or 2 times for work as well. I dont want to be tempted by fast food.
i have not made a SMART goal for this yet but i will have to put more blanning into that.

I found myself bored of eating the same food over and over. My goals are to cook at least one new meal a week, cook something at home once a day, and to plan my meals the night before or the morning of so I don't end up eating the most random things for dinner trying to meet my quota.

Actually I used to do this and now I stand with the refrigerator door open and look inside hoping something will inspire me! But this last week I made a meal plan, picked out my groceries I'd need, oh and I had the notation of where my recipes were on the back of the grocery list, then it was so busy last week that I only made one or two of those meals. So this week I'll make the rest. It does feel better though to have a plan instead of at the end of the day when I am tired and it is time to cook dinner, to stand holding the refrigerator door open and staring inside. emoticon

I was not able to get the meal plan done for last week. My cupboards and fridge were a mess. I did make good choices for eating last week just not planned. So my goal for the weekend is get organized! Half way done. Went through the cupboards, cleaned out, organized. I was shocked at what was hiding in the back! So nice to know what I have. Next is the fridge/freezer. My least favorites job! Then onto the meal planning for the week....I am feeling determined! emoticon

I am a trained chef. So cooking isn't my problem. My problem is that I learned to cook without a recipe and focusing on flavor. I have changed a lot of my habits but not enough. I usually make a menu out for the week. But i don't go to the store with a ingredients list. If I do I often change or add things based on new ideas or just what I am seeing in the store. My goal is to make a complete ingredients list that I do not change. This is what I hope to work towards during this challenge.
