I find it difficult sometimes to pick a low calorie lunch or dinner when dining out. I keep saying to myself no creamy, no fried, no this no that. So whatever I order I eat just enough to satisfy myself. It works!

My goals are to get better at planning healthy meals ahead instead of a last minute scramble to figure out what I'm eating, and also trying more healthy recipes... instead of sticking with whatever's quick or convenient.

I know that process foods are real easy to go to when in a bind. There are some that I really enjoy. I do indulge once in awhile. I have found that when I make a recipe for more than two sittings I'm much better off.

I want to do my best to stick to my meal plan. I use my weekends and prep healthy lunches for my entire family. Salads, fruit bowls, and healthy prepped protiens and veggies. A lot of times though I stray of course by throwing in a candy bar, or eating junk for dinner.

Some days, no, most days fly by without any problems. Then comes a day when nothing goes right and you can't wait until it's over. This happened to me awhile back and I felt like I was beating myself up. So, I began to think that I should indulge myself once in a while. Now I do. Once a week or sometimes a week goes by and I don't think of something extra. This has been working for me for about a year now. I hope that I helped some.

i will plan to try 2 new recipes each week. I have picked out 3. one for friday night and one for tonight. I still need to make one old meal because my husband doesnt like trying new recipes as a separate meal for him and baby. I really hope this works.

I found that I can eat out, choosing reasonably, twice a month without gaining more than one pound. Since I have been eating healthy I find that I don't look for anything to eat that's too far off my regime.

I cook at home a lot. Biggest challenge is eating healthy when we go out. I've been trying at least one or two new recipes a week. We mark our favorites and then when we have about 30 we rotate them throwing one or two new recipes in that month. Then we add to them to our list if we really like them. Cooking and eating healthy is a challenge but we are making it part of our adventure

I plan to make at least two new recipes each week. I have lost 46 pounds so far. Yeah for me!!
Only 5 more to goal. It's been a great three years. I thank one and al. Couldn't do it on my own ant longer.

Good morning guys. This looks like a really great challenge.
I am trying to learn how to cook healthy. The reason why.
I want to have a healthy life style. Eat healthy so want to learn to cook that way.
Second reason I got a boyfriend who is a sweet heart. But can't cook.
Chris likes to eat out a lot. So maybe I can cook nice meals for him.
That are both healthy and doesn't come out of the freezer section.
(if that can be helped.) Plus, I want to teach the boys to eat well.
He has a 17 yr old and a 13 yr old who love to eat junk and not a lot of veggies.

My goals with this challenge are to:

1. Start shopping once per week use coupons to save money and plan my meals around my coupons.

2. Incorporate more vegetables into my diet.

3. Eat less meat while still getting protein.

4. Avoid fast-food.

5. Have a meal plan that is flexible enough for surprises and for me sticking to it (sometimes Im not always in the mood for what I planned on eating on a certain day) but strict enough that its useful.

I like your goal of 4 meals per week and having one be meatless but high in protein and I also like that you are trying to eliminate waste. I want to learn how to make a meal plan that makes it possible to use my leftovers either by freezing them or incorporating the ingredient into another meal.

I like your idea of trying two new recipes for week I have stacks of recipes and a lot of cookbooks but have yet to actually put very many of them to use. Id like to learn how to make big batches in the crockpot and freeze the leftovers so I can use them later in the month.

I love to bake as well and I like sweets I need to learn how to bake healthier, with substitutions. Do you have any tips, I know theres a way to use applesauce, I think its instead of sugar? Or butter? And I started making flourless pancakes with bananas and eggs, theyre pretty good.

I'm going to clean my kitchen and organize it better. Having two children who want to 'help' means that things don't always get put back where I'd like.
I'm also going to plan better meals and cook more often. We have quite a commute, and two picky eaters, so when DH or I have to work late, its fast food, pizza or what we call 'kid food' (hot dogs, leftover pancakes from the weekend or grilled cheese). The kids are starting to get better about eating, but it's still a struggle.

I actually made brunch for my husband and I on Friday, baked some super healthy muffins that I shared with my in-laws that evening, and created a recipe for a healthy high protein high fiber microwave muffin that I made for myself for dinner last night.

Starting weight 219 November 1, 2014
Out of 200s by March 15, 2015
Enter my 40s no longer obese forever (184 pounds) by August 17, 2015.
Greet 2016 under 165 pounds.
No longer overweight (154) by May 31, 2016.
Reach my goal weight of 150 (and maintain) by August 17, 2016.

1. Shop smarter (see intro).
2. Use up all the food I purchase.
3. Prepare meals that are low fat, chol, carb, (and) sugar, protein, salt (close to nonexistence), and delicious!

I joined the challenge to cook healthier meals for my family and I, and to plan meals and shopping trips better.
So my goals...
1. Plan weekly Dinner menu with shopping list.
2. Clean Kitchen

I want to cook at least 2 healthy meals at home per week. I almost never cook currently and need motivation, skills, and confidence cooking. I especially need to eat more balanced nutrition for breakfast and lunch as I work from home and often just eat a bagel and a bowl of cereal before going out for dinner with my husband between 7:30-8:30. Need to go out less, too. Perhaps if I bake some healthy muffins once a week and maybe some higher protein fix ahead that I can grab quick.

My goals for week 1:
- Plan my meals one week ahead
- Shop max. 2 times a week
- Cook 2 times a week and prepare the meals

I really want to learn to eat healthy.
I have the feeling that it is really hard for me, because my family didn't care about smart and healthy food choices when I was a kid. But I love fruits and vegetables and believe it's not to late ^^
