Another of my favorite books is "The 30-Day Vegan Challenge". I just became vegan last October and there are lots of really good tips on cooking with all the different ingredients. Learned a lot about Tofu from this book.

Have been to fatfreevegan.com and gotten recipes there. Also just got one today at savvyvegetarian.com. Pasta Fagioli.....and replaced the pasta with extra green beans. Really really good!!

If a website counts- Fatfree Vegan is amazing. Made the african peanut-potato stew for dinner, with the drop biscuits or scones (that one was actually from Bryanna Clark Grogan, but was on the website)- seriously amazing. So much food, such bright flavors, keep thinking she must have calculated the calories wrong on the soup.

One more recipe to mention from Appetite for Reduction- sushi roll edamame salad. Seriously amazing, 5/5, surprisingly filling. Husband and toddler loved it, teenager didn't like the dressing (which I thought was the best part!)

I've made two recipes from Appetite for Reduction so far, and both are winners. The first was Vietnamese Rice Noodle Salad with Grilled Tofu. I give it a 4/5 because the sauce seemed to need just a little something to me (probably more oil!). But the flavors, textures and colors were awesome. I used sugar snap peas instead of the string beans, and red cabbage in place of some of the greens. The serving size was generous. My husband, toddler and teenager all ate it happily.

The second recipe I made was the 40-clove chickpeas and broccoli. My expectations weren't super high, since the main ingredients are chickpeas and broccoli. But the flavor was out of this world! It was easy and cheap too, no fancy ingredients. I even used a bag of thawed frozen broccoli, probably not what she intended, but it worked just fine. What I love about her recipes (besides the convenient nutritional info, missing from most of my other vegan cookbooks) is that the calories are low enough I could almost have another meal the days I make them.

I just purchased "Peas and Thankyou" it's a vegan family cookbook. Sorry I don't remember the author's name, but I'll give a plug to her blog/website. Just love this book

I love Isa's cookbooks. I've been spending a lot of time with Vegan with a Vengeance lately. I haven't purchased Appetite for Reduction yet -- let me know how you like it. I've heard good things.

I am a total cookbook junkie. I have more cookbooks than I have days per month to cook.

Some of my other favourites:

reFresh by Ruth Tal (Canadian owner of Fresh restaurants in Toronto - I get so excited to go to T.O. so I can eat there). I always feel so healthy when I eat something from this book. All vegan and many are gluten free too. Sandwiches, wraps, salads, rice bowls, smoothies and juices.

How it all Vegan by Sarah Kramer. Check out Govegan.com (another canadian!) I swear these are the easiest recipes ever.

Melinda there is absolutely nothing healthy about those cupcakes. The only healthy cupcakes I can think of would be the ones in Ani Phyo's book, it's a raw food book so most of the ingredients would be things like nuts dates cacao things like that. I just made some truffles inspired by her Trail Mix Cookies with:

Almonds 1/2c
Cinnamon 1t
Salt 1/2 - 1t
Walnuts 1/2c
Dates Pitted 1c
Sunflower Seeds 2T
Raisins 2T
Coconut Oil 1T
Raw Cacao Powder 2T
Water 2 - 3 T

put the first 3 ingredients in the food processor then add the walnuts, process. Then add the rest of the ingredients except the water, process. Add the water a little at a time until it mixture forms a ball.

Roll into small balls and refrigerate for a few hours. You can also freeze these. I will have these first thing in the morning or when I am starving when I get home from work.

Wow, you guys have some great suggestions! I've never heard of powdered peanut butter. I'm going to call my health food store (The Mustard Seed, which is the largest locally-owned organic store in the US I've been told- it's as big as a regular supermarket and is about 90% organic) and see if they have it. They probably do. There is a smaller health food store near me where I usually go, and they may even have it or be able to order it for me. Awesome!

Are the cupcake recipes "healthy"? I mean, what do they call for as sweetener? What is the nutritional content of most of them? I'm interested of course in any book that is about vegan cupcakes (cupcakes being my favorite desert).

My husband and I loved the Ceci and Roasted Red Pepper soup I made out of Appetite for Reduction last night. It was easier to make than I thought it would be and really hit the spot. I had 3 bowls (it was okay because it's so healthy and fit with my calories for the day).

Sunny I just started reading VegNews and really like it - will probably subscribe. I'll have to look for that recipe, I LOVE peanut soups.

My vegan cookbook collection is off to a slow start. I get a lot of recipes off of the internet. I do like Viva Vegan, Vegan Cupcakes Take Over the World and Ani Phyo's Raw Dessert book. I also have Vegan with a Vengeance, the Vegan Table, The Complete Book of Raw Food and Alyssa Cohen's latest raw food book but haven't made anything from them yet - oh wait I lie, I made pancakes from VWAV...

I have almost all Isa's cookbooks, and the ones she wrote with Terry Hope Romero, and I have Terry's "Viva Vegan" which features all kinds of Latin dishes. One I have used a lot is "The Vegan Table" by Colleen Patrick Goudreau.

Anyone else subscribe to VegNews? I love that magazine! It's a hip, vegan-centric, glossy mag with tons of great recipes, health info, sources for everything vegan, cool advertising aimed at vegans, and did I say recipes? Tonight I made Sweet Potato Peanut Soup from the current issue but didn't have the diced tomatoes, so I mixed it up with a similar recipe on Spark Recipes so I was able to gauge the nutritional info. Sweet potatoes, veggie broth, onions, garlic, peppers, and paprika, cayenne, pepper, ginger, and peanut butter! It was awesome! Filling and satisfying. Probably higher in fat than is necessary. I want to get some of that PB peanut butter powder people have been talking about (MUCH lower fat).

Mine would have to be Jennifer Cornbleet's Raw mFood Made Easy (for 1 or 2 people)...her Marinara sauce is to die for. I just bought her Raw for Dessert book but haven't tried any recipes yet as I am on the end of a 40 day fast and want to finish that first.

Someone here suggested Appetite for Reduction by Isa Chandra Moskowitz (author of Veganomicon) and I thought the title was pretty catchy, so I got it this past week.

After looking through the recipes, I"m dying to try it! She's so creative. The book is co-authored by a nutritionist. He analyzed the food for nutritional value and balance. The recipes seem heaven sent!

I'll let you know when I've started trying them.
