Yep, CMCOLE, I chilled the coconut milk overnight. I was hoping it would whip up like cream, yet it did not. That's why I added psyllium; though on reflection another thickener like guar gum might have been a better choice. It was quite a delicious treat. :D

That sounds great.
Do you chill the coconut milk first?
I have read that helps thicken it (possibly even without the husks added). I haven't tried it yet, though.

1 cup fresh blackberries
1/2 cup lite coconut milk
1 - 1/2 teaspoons maple syrup
1 teaspoon psyllium husk

Beat the coconut milk, maple syrup & psyllium husk together until foamy. It will not get as thick as whipped cream, yet it will thicken. Add in your cleaned blackberries & enjoy.
