I had sweet potato "pasta" stir-fried with onions, rosemary, paprika and smoked sea salt alongside chicken thighs

By pasta I mean thinly sliced on a mandolin or spiral slicer, so that it's a quick stir-fry

Julia that sounds delish and easy! I did a quick kale,spinach and mushroom saute with my home made fra diavlo sauce over whole wheat ziti!

I like to eat wholesome foods, yet also like simplicity. Tonight's dinner was soba noodles (Japanese buckwheat noodles) topped with stir-fried broccoli. The broccoli had garlic and a finely chopped serrano pepper added. Topped the whole thing with two tablespoons of Thai Peanut Sauce.

It made a simple and fun meal.
