LOVE IT! I usually try to make my lunches the night before, but sometimes don't get that done, and when I do, if have a dressing I put it in a separate container and sometimes my husband forgets to put his in his lunchbox. This is a beautiful idea - I like the way it looks in the refrigerator also.
Another thing I learned very recently, is the elegence of simple homemade, oil-free, sodium-free, sugar-free dressings. Our favorite is just a mixture of fruits cut into tiny pieces and mixed together. Today's sald has strawberries, oranges, blueberries and kiwi. If I have fresh mint, I put some of that in also. And top with some crushed nuts. Today's "nut" was almonds. So there's fat in the nut, but it's a healthy, whole food fat.
Another one we like is diced avocado & tomatoes.
