I usually do shepherd's pie.
I was often doing it as a vegetarian version, but then re-read the label on the 'ground meat' and discovered it has wheat protein in it (so not GF).

It didn't have cheese in it, though.

The 'crust' was made of mashed cauliflower and squash or sweet potato
The filling was ground meat, lots of veggies, and a few other ingredients.

Awesome, but now I'll likely have to make it with ground turkey, or a mixture of beef, turkey, pork or whatever, instead of the vegetarian version, if I want to share it with GF friends.

I made the casserole with no cheese, bleck. So I will be adding some cheese, just maybe about 1/4 of what I use to use.

lol :) I guess I can't say I "need" it. But I definitely like it! And it adds calcium and protein, both things I have to watch to make sure I get enough in my diet!

Sorry, this is where I would have to get off the train. Who needs cheese? I do! If it doesn't have cheese in it, why eat it?

Our family motto is " Just add cheese". No, we don't live in Wisconsin, but we are midwestern and we love our cheese here.

Last night's was onion, zucchini, mushroom, tomato and red lentils. A bit of chopped basil and a handful Italian risotto herbs to flavour it.
A big (about 600g) portion worked out to be 470 cal, 70g carbohydrate, 12g fat, 30g protein. Who needs cheesy badness?

I like Sargento shredded cheese because they save me time and they use potato starch to prevent it from sticking together instead of flour! Although you could also use full-fat cheese and just choose a strong flavor and use less of it. That way you can still have cheesy goodness and not have to worry too much about calories.

That sounds delicious!

I live in a small tri-city and so far cannot locate anyone selling low fat cheese, which is the reason that there is zero cheese in this one.

I haven't done any gluten substitutes, just use rice and gluten free oats so far.

I am batch cooking today and I made a casserole that has ZERO, yup ZERO cheese in it. Will see how it turns out!
