Last night's was onion, zucchini, mushroom, tomato and red lentils. A bit of chopped basil and a handful Italian risotto herbs to flavour it. A big (about 600g) portion worked out to be 470 cal, 70g carbohydrate, 12g fat, 30g protein. Who needs cheesy badness?
I like Sargento shredded cheese because they save me time and they use potato starch to prevent it from sticking together instead of flour! Although you could also use full-fat cheese and just choose a strong flavor and use less of it. That way you can still have cheesy goodness and not have to worry too much about calories.
