Tofu Ice Cream

1 lb Soft Tofu
1 1/2 Cups Soymilk
2 Bananas
1/4 Cup Spenda Brown Sugar
1 Tsp Vanilla
1/4 Cup Smooth Peanut Butter

Crmble tofu into the food processor or blender and blend until smooth. Add remaining ingredients into processor/blender and blend until well mixed. You may have to do this in small amounts. Place mixture into an ice cream maker, and follow the manufacture's instructions for ice cream freezing.

Salmon Cakes

1 can salmon makes 8 small patties

Drain water, separate all the bones, skin and stuff you don't like..

Then with the good salmon:
fork it/or crumble with your hands so it's all fluffed up texture.

-Add 1/2 onion chopped small
-Then add 1/2 egg or enough to hold the ingredients together (to make a sort of dough like ball).

-Separate into 8 divided equal patties (make patties)
-1-2 TBSP Olive oil in pan. (heat pan and oil_
-Dip patties in remaining egg quickly (patties should not fall apart - They should hold together. Dip quickly)
-Put in pan and brown lightly (press with spatula to flatten patties)
-Turn to other side and brown.

Can freeze these and are great to add to scrambled eggs -breakfast.
Lunch add to salads, with veggies, or add in pita's
-Dinner sauteed with tomatoes, olives, and other veggies.
-As a side dish with soups.

1/2 Cup GrapeNuts cereal (add apx 1/4 - 1/2 c. soy milk of your choice.. or milk of your choice)
Microwave 60 seconds. This just softens Grapenuts but doesn't get mushy.

Add in fruit of your liking. (apx 1 cup worth)

Top with yogurt of your choice.
w/ 1 tsp sugar.

And why not add some real nuts.

Nice meal or heavy snack.

These aren't SP recipes, but they're yummy all the same. The barley is these recipes is pearl barley which isn't as nutritious as hulled barley. You could substitute or just use the pearl barley which is still full of fiber and good flavor. This is a great idea, we also need to add this to the spark recipe files so people have healthy choices when searching recipes. A nice goal would be to add at least 1 healthy recipe a week, will do one later.
