Wow,that recipe sounds so good!have to try it when I get some tofu!meanwhile love portabello mushrooms-have some bay ones to make the stirfry!
my recipe today is a cabbage -carrot stirfry!
1/2 green or red cabbage grated
3-4 carrots-cleaned and grated.
coconut grated
cumin seeds
mustard seeds
Pop some musatrd seeds in a tablespoon of olive oil..then add the cumin seeds and roast till a nice aroma comes-add the veggies and let cook-the water in the cabbage cooks the carrots as well and add the coconut at the end ..Add turmeric-1 pinch, salt to taste and a tsp of chilli powder(intensity according to your taste.Enjoy!).

I got this recipe from SparkPeople, I only make it once a year, it's incredibly rich, but it's sooo good.

Silken Chocolate NO BAKE Tofu Pie

A vegan alternative to chocolate cream pie.
Minutes to Prepare: 15
Number of Servings: 12

Ingredients

1 graham cracker pie crust- ready made
1 box Mori-Nu Lite Silken Tofu, Firm.
1.5 cups Semi-sweet chocolate chips (you could substitute carob, bittersweet or mil chocolate, but the nutritional information is based off semisweet chocolate)
1/4 cup strong, black coffee
1T vanilla extract
1 cup fresh raspberries (or strawberries are delicious, too)

Directions
Makes 10-12 servings, no baking necesary.

15 minutes to prepare, 1-2 hours to chill and set.

1. Melt chocolate chips in the top of a double boiler or in the microwave. In the meantime, blend the silken tofu in your blender or food processor until smooth.

2. Add chocolate, vanilla, and coffee to blender and precess until smooth and uniformly mixed

3. Pour into pie crust and chill, covered for 1-2 hours (or over night).

Top with fresh berries and shaved chocolate (optional, not included in calorie count)

Nutritional Info

Thanks, I think I'll try them with DH who is diagnosed with MAI and on big time meds for 6 months.

This info is from Amazon.com about a new book "Chloe’s Kitchen features vegan food like you’ve never seen it before.

Classically trained Chef Chloe Coscarelli brings fun and energy to this healthful, animal-free cuisine by reinterpreting 125 of America’s favorite foods with great-tasting ingredients and clever techniques. Chef Chloe burst onto the culinary scene by winning the Food Network’s hit reality show Cupcake Wars—the first time a vegan chef captured the top prize—which delighted her many fans who had been loyally following her on chefchloe.com. The new face of vegan cooking, Chef Chloe is luring foodies of all stripes to try her ingenious, accessible recipes for delicious, vibrant, beautiful food.

Chef Chloe’s first-ever cookbook is illustrated throughout with gorgeous full-color photography of the mouthwatering dishes. She begins with helpful advice on how to set up your own kitchen for stress-free, healthful eating. Chef Chloe also explains how to get all your nutrition from a plant-based diet and why it’s so healthy, with support from the foreword by renowned physician Neal D. Barnard, M.D. Then, in her fresh, dynamic style, Chef Chloe provides a huge array of incredibly appetizing, inventive recipes she has created, from savory starters to decadent desserts. Her comforting macaroni and cheese, creamy Fettuccine Alfredo, crave-inducing sliders and fries, and adaptations of the most popular Chinese, Indian, and Mexican dishes win over carnivores, omnivores, vegetarians, and vegans alike.

With Chef Chloe, eating vegan doesn’t mean giving up your favorite treats and flavors. With instructions throughout for making these meat-, egg-, and dairy-free recipes without gluten and soy, here’s how you can enjoy family favorites and her renowned, coveted desserts—including the first publication of the recipes for her Cupcake Wars– winning vegan cupcakes—without busting your belt."

From Dr Oz enewsletter 3/9 "Oyster sauce is the lowest calorie Chinese takeout option. When ordering takeout, try beef and vegetables in oyster sauce for a healthy and tasty dish. "

I think this can be done with just the oyster sauce over the vegetables only.

Mmmm, wow, that sounds fantastic. Lentils are funny for me: I don't love them, but they always fill me and make me feel very satisfied.

I'll have to look up some Sambar recipes. That sounds like a good lunch recipe for me.

Me, too, I love raw oatmeal. I have it sometimes with 1/2 cup almond milk, a sliced banana and cinnamon. Delish!

I love brussel sprouts! Sambar -- what's that? I bet it's hearty and good.

The butternut squash dish I had I got at a restaurant near where I work. It was so filling and delicious. I liked it so much, I looked up recipes for it as soon as I got back to my desk.

Today's rerun told of PB2 which is a vegetarian peanut butter that has the fat removed and is a powdered form. It's easy to carry and have in the office to reconstitute. A nutritionist recommended it. I love peanut butter, would I like this? Has anyone tried it?

Hi everybody, the challenge is back open-at least two vegetarian/vegan meals with one raw meal if possible. This will improve our freggie intake towards the fall/winter season when normally we tend to eat more carbs.I am avoiding white rice, white pasta ,white bread-and my aim is to try to increase multigrains and hopefully some of you will join me! emoticon emoticon emoticon emoticon emoticon Please post in this area with each week's points-one for each meal-every Friday.

So good to see you Ranjini4.
I just did my fitness and also added at the Quick Track on top 30 min and then typed in hill climbing. And save. It would work for your PT. Decide how much time you are in movement and then type in what you were doing--parallels bar walking, lifting leg weights or anything. You can quick track several times on one day with different pt activity or jus once and type in pt

Should have used raw chocolate for the kale-the cacao nibs were bitter.found out something new, though!Mix about 2 tbsp of chia seeds in a 8 oz glass of water and let stand for 5 mins-they will form something like a pudding-add your favorite flavors and enjoy-they are good for you-not only by filling one's stomqch up but also by lowering cholesterol-about 10x as powerful than flax seed!Hope this was useful!

I like your dehy;drator idea. don't know if we'll ever get one, but maybe.....

company went grocery shopping during the week and we have fridge and hydrator doors so full we don't know what's in there. We found grapes at the bottom of one drawer. Smashed some. But good. This is a grateful day to have so much good food left for us.

It is true that most true vegans are def in B12 but in vegetarians and flextarians-only if too strict in dietary restrictions. Some meds do cause the B12 def also-like-metformin and so after 50 I recommend that we take some B12 and Ca,iron and Magnesium and Vit D and if we can-fish oil of good repute or krill!Algae are a good source of omega 3 as well as glycosamino glycans as well! All this is on the DR oz shows recently!

Hi Ranjini4! My friend egrammy asked me to post what I wrote on my blog the other day. I hope you like it. I very much look forward to looking at this thread! WOW! Such a lot of wonderful posts and ideas! You've really sparked :-) something exciting here!!! (((HUGS))) ~ Molly :-)

Tonight we celebrated my mom-in-love's birthday so I made a full vegan meal! :-) I can't post the link but if you go to ChefChloe.com, and search her Avocado Pesto Pasta, you'll find what I made. And it was delish!! Really well received by everyone. I also made garlicky kale and roasted butternut squash. I really struggled with dessert because my mother in law isn't really into desserts so I bought one of those Claim Jumper Dutch Apple pies. Soooooo not even CLOSE to low fat/calories but it made the house smell heavenly AND it's vegan! :-)

All our guests raved about the meal so it's a blessing to know that I can cook my way in my own home and still have people leave happy! :-)

Thank you all for your support and encouragement! If you told me I'd do this a few months back, I probably wouldn't have believed you. But with you all on my side, I know this is one of many "firsts" for me and my new life!

Love,

~ Molly :-)

One of the Spark Trivia questions is about Vegans need to take B12. They said yes. My research indicates they need to take it if they are low in B12., not just automatically What do you know?
