There are vegan no-chicken broths. The one I use is "Better than Bouillon". They make a vegan no-chicken and no-beef as well as vegetable broth. A small jar has 32 uses in it so it is really economical.

If you haven't tried the Spark recipe for Quinoa and Spinach, give it a shot. I made it as a side for dinner tonight and it is really delish Apparently it was a WW recipe and if you do a Spark recipe search and just type in quinoa and spinach, it will come up. You do use chicken broth in it so if you're a vegetarian, maybe you could substitute vegetable broth. DH really loved it too. I did cut some grape tomatoes in half and used them along with the spinach in mine. It not only tasted really nice but it gives it a nice color with the spinach and the tomatoes.
