Okay, the recipe is in the book too - but the authors of this book have given me permission to post it on Spark. You will not find it anywhere else online.
"Grilled meatball and pineapple kebobs with sesame-ginger barbecue sauce."
1/3 cup of your favourite BBQ sauce
5 tsp reduced-sodium soy sauce
1 tbsp grated gingerroot
2 tsp liquid honey
1 tsp toasted sesame oil
32 precooked lean meatballs (you can use the recipe posted in another thread or use your own)
31 1 inch chunks of fresh pineapple
16 1-inch chunks of red bell pepper
16 1-inch chunks of green bell pepper
8 12-inch metal skewers (I use soaked wooden skewers)
To make sauce, whisk together BBQ sauce, soy sauce, gingerroot, honey and sesame oil in a small bowl. Set aside.
Preheat grill to high setting. For each skewer, thread meatballs, pineapple, red pepper and green pepper in this order:
1 piece pineapple
1 piece red pepper
1 piece pineapple
1 piece green pepper, then repeat.
Your skewer will contain 4 meatballs, 4 pineapple chunks, 2 pieces red pepper and 2 pieces green pepper.
Spray grill rack with cooking spray or brush lightly with oil (I use a george foreman grill). Grill skewers for 12 to 15 minutes, turning and basting generously with sauce every 2 minutes.
Makes 8 skewers. Per skewer:
6.3 grams of fat
11 grams of protein
2.6 g fiber
556 mg of sodium
