Hey everyone! Sorry I haven't done any recipes lately.. I haven't been getting my grocery lists together to try any new recipes but I decided that is IT! Back to getting some new recipes in my life this week.. I am getting bored of the same foods over and over.

Tonight I made "I'm Dreaming of a White Chili". My husband and I liked it but the kids ( 11 & 3) didn't care for it. I cut back on the green chilis by almost half so it wouldn't be to hot for the kids. It had more liquid than I thought it should, did anyone else's turn out that way?
I will make it again for my husband and myself and I think it would be good served over some rice.

I made Skewer Always on my Mind tonight and it received rave reviews. My 7 yr old had 2 helpings and my - very picky - 5 yr old ate about 4 pieces of salmon, a major coup! This was so easy to make, yummy, and the perfect spring or summer dinner. A definite repeater, two thumbs up, highly recommend, etc.

JymGirl - now you have me wanting to try those mashes "potatoes"!

I am finally up to cooking again (wasn't feeling well for a while) so I did a big shopping last night and here's whats on this week's menu:

Janet and Greta's Chicken Cordon New
Faux Fried Chicken and Coleslaw
Shepard's Pie (can't remember the name off the top of my head now!)

They are all in the recipe section of this team. Hoping my husband will like the chicken as he is more of a KFC kind of guy..

This week I made Life in the Fast Loin, which I really enjoyed. I liked it better than the BBQ'd Lick your Chops. I was going to blog it but the pictures didn't turn out too great. Let's just say they tasted better than they looked!

I made Mashed Fauxtatoes as a side, which I totally fooled my whole family and one of my daughter's friends with!!! They all thought it was mashed potatoes. The recipe turned out really well! I used my hand mixer to "mash" the steamed cauliflower.

I also did the really quick and easy Phoney Pepperoni Pizzas last night. These were a nice "light" supper. My husband actually preferred these over Wise Guy Pizza Pie. Kids liked it too.

Ok I made a couple more recipes (I guess I'm on a roll lol) last night I made Jamaican me Hungry with the tropical fruit salsa. I made plantains on the side too. It was a very yummy caribbean meal. Also, fiance liked it he said it was like 'a party in his mouth'
BTW, I mention if he liked it because he does not like 'diet' food, so I consider him a good, unbiased judge if something is just plain good, regardless of the 'healthy' aspect.

Hi Caryanne! I really want to try Viva Las Veggies.

The recipe I used is actually from the Eat Shrink and Be Merry TV show - which is very different from the "Smackaroni and Cheese" from the book. The recipe I used is posted in this group, but doesn't use Cheese Whiz.

I think I've seen light Cheese Whiz at the Royal Canadian Super Store!

Sophi - that Smakeroni and cheese looks yummy. It is on my menu for this week and I'm so excited now that I've laid eyes on it. emoticon
The bacon sub was a good idea, but I already bought the ground beef per the recipe so I'll let you know how that goes. Did you make this with light cheese whiz like the recipe calls for? I could not find the light version -- just regular cheese whiz and I'm afraid that will blow up the calorie count.

I made Oinkers Away it was very good. I made it with homemade chicken broth and beans to bring the sodium WAY down. I will be making this again it's a great lunch.

Last night I made Viva Las Veggies and it has seal of approval from both me and fiance. It was a very easy recipe. Also, it is pretty - he kept saying 'Wow it's so colorful!' lol I'll make it again also.

Hey Caryanne! Which book is the beans and rice recipe from? Mmm I love salmon and dill so I bet I'd love that 2nd recipe.

Okay so my recipe plan for this week hasn't been going too well because I had a chinese food craving. Ended up making "Beef Noodle Doodle" and "Crash Test Dumplings". They were both SO good and I can see myself making them often. (I posted pics of both in my blog)

I don't remember if I posted that I made Oinkers Away on the weekend? That was good - I am not a huge bean fan but I do like making something like this once in a while for the protein and fiber count. As far as a bean soup goes - this was really good too! I still have to blog on it.

I tried the Canajun Rice and Beans recently and didn't like it very much. It has been the first recipe from any of the three cookbooks that I haven't liked.

I had "Salmon and Dillilah" from Crazy Plates cookbook today for lunch. YUM one of my favorites

I love that you posted that because I always make my "Benefit of the Dough" in the breadmaker too! Turns out so much better than doing it by hand in my opinion. I also always go for the pre-baked crust option, I find I get a fluffier more satisfying crust that way.

I haven't tried the Thai Kwon Dough, but I think I'll put it on the meal plan for this weekend! I use "the benefit of the dough" as the base for all my pizzas...it's super easy and tastes good...if you have a breadmaker the recipe turns out great using the dough cycle as well.

We do Smackaroni almost monthly. It is one of our favorites. I love a little extra zucchini in there. Have fun with those recipes!

Ambulator! (still loving the new name)

Worth Every Penne
Smackaroni and Cheese
A Whole-Lotta Enchilada (from the TV show)

I would also love to try "La Creme de la Creme Pie" this weekend (also from the TV show). But I will have to see how this week goes and if my calorie-budget allows for a treat!

I am in love with feta so that's probably why I love Chic to Be Greek so much!

Tinbuck Tuna is one of my faves - I find it very rich! I can't believe how much pasta you can eat for such a low amount of calories.

Last night was the tinbucktuna ~ yum, and so easy... I didn't have cream of broccoli soup, so I mada a white sauce and added some chopped broccoli, with the fried onion and garlic! I usually use fresh veggies, but took there suggestion and used a Europes best! MMMMMmmmm , will do again!

~ REMEMBER ~ everyday is day ONE!

Tonight we had "I'm Dreaming of a White Chili." we used low fat yogurt instead of sour cream. It was quite tasty. We tried "Parma Chameleon" this week and thought it was fantastic. We added zucchini and green peppers to it to add a few more veggies. I highly recommend this tasty tofu treat.
