I finally made this soup, Autumn Sweet Potato (ie Yams) last night. It's so simple and sooo goood! I left out the cumin and used extra ginger for a 1/2 recipe and hand blended until slightly chunky. Main ingredients are onion, yams (orange) zucchini and diced tomatoes. Peanut butter if not allergic. I love this soup!

I found a buttermilk chicken recipe on All recipe.com and used Mom's Place "Mom's flour blend" with the spices it reccomended. It calls for peanut oil which someone in the family is allergic to. Used corn oil instead. If you are ignoring your calories for the day it's a good way to go. Chicken stayed moist and dd who can be a picky eater liked it. It turned out darker than I like.

SCARLETCURLZ No I haven't. My sister has made gluten free bread, cakes, and cookies. I'm sure there are recipes online. Or you can go into a bookstore, snatch a recipe and see if you like it. I do that sometimes before I commit to buying it. Good luck to you!

Has anyone tried making gluten free pasta? I've been wanting some ravioli, haven't had any since I went gluten free three years ago. None of the stores around here carry a gluten-free ravioli.

The comment about Nutella was from 2009. We don't know 'when last checked' was or where the information came from. On the Nutella website www.nutellausa.com/faqs.htm they say no gluten derived ingredients are in Nutella. So using it depends on your own approach to gluten free.

Success! I made GF Macaroni & Cheese for our Lenten meal and no one was the wiser! My girls are usually so picky that I was afraid I would be eating it by myself but they gobbled it up and never said a word. So, I'd say that means it is a pretty tasty recipe.

Except for the cheese - it would have been dairy free too. My girls are lactose intolerant but they can handle small amounts of hard cheeses and I wanted this to have some authenticity. I imagine if you are used to eating vegan cheese already, you could sub it in pretty easily. Here is the link if anyone is interested.

Made breaded chicken parmesan from connie563 and altered bread crumbs. We buy GF bread crumbs at the store and added Italian seasoning to get similar effect. Easy recipe and turned out good.

You are in a tough spot with no stove! Can you cook while you are working? Do you cook for your client? I work in a group home and I can do a little cooking there. Could you get a cheap crock pot? That would help make meats for your meals, soups, and even veggies and cereals. I got my small one for $12.99. Look for GF lunch meats, Hormel Natural Choice is one I know of. Canned tuna, canned chicken, there are also GF frozen meals if you have a good grocery store or health food store in your area. You can microwave frozen or fresh veggies, and if you really had to meat or fish (It is not the best tasting or texture). I think a crockpot is your best bet at this point. You can make anything in there really, and with a rice cooker and a microwave you are in business! There is a GF crockpot website with a lot of ideas too. Look in the Favorite Links thread....

Ok, I am Alia. I am gluten intolerant. I don't have a stove or hot plate to cook on. I just have a microwave and a rice cooker that I can use and the other people that I live with eat gluten. How can I make food safely that doesn't have gluten in it? I know the oatmeal is really gluten-free but if it is made in a factory with wheat products (which is normal practice for most companies) then it can't be considered gluten-free. I am also a HHA (Home Health Aide) so I need to bring food to work with me. My main client needs round the clock care, so I am a live-in three days a week. How am I to support my diet here as well?

I made the Chicken & Asparagus Pasta recipe from SparkRecipes last night using Notta Pasta Rice Fettucine. It was great! It's easy & quick to make and you can vary the vegetables and seasonings.l

just thought I'd share the link to a recipe I've come across today and am making in my crockpot, (minus the tomatoes. We'll see how it turns out...)

I'm taking this one day at a time.
Mold (ferments) Ragweed (nightshades) or (fruit/veggies with tiny seeds.

Well summer squash is in the ragweed catagory...I wasn't thinking...tongue swells..hmm

Sooo. The question is what do I eat?
I don't do breads...wheat and yeast.
I'm live by myself, with an apartment sized freezer, I use very little processed foods...pantry is Carnations milk, tuna in olive oil.
I use PAM and xv-olive oil. Simple cook, can't combine a lot of foods in a recipe.

Meats don't bother me..hamburger, bacon (oooh), chicken (occasionally) , beef pork, eggs...no cheese?? I was told to use Velveeta and Cheeze Wiz..haven't gooton that far yet. nI'm still new at this.

NO DAIRY...I was told yogurt is fermented...Is this true? Lots of questions.

I did notice I'm not teary eyed, nose is clearing up.

I just wanted to pass on my knowledge about Udi bread! It's reallllly good. I've been gluten free since I was four... I'm now almost 19.. so I've experimented a LOT. Udi bread is THE best gluten free bread I've ever had as far as sandwich bread is concerned. They also make very good pizza crusts and muffins when you need a craving. lol But yeah if you google them you'll find there website and it can tell you where they sell them. :) I buy mine at Whole Foods.

Thanks to all who contributed.

I printed almost all of the suggested recipes that I can eat. Unfortunately, that eliminated several that call for eggs and dairy. (I can substitute flax seed for eggs in some of them.)

What I find I like for breakfast is whatever I had for dinner the night before! (I try to follow a rotation diet and this really simplifies things. No real thinking involved since all I do is plan one extra serving when I fix dinner.) My sister had a hard time watching me eat grilled asparagus long with cucumber/avocado/tomato salad and a lamb chop for breakfast; but HEY! It works!

Here are a few recipes I make for breakfast and snacks:

My oat/nut/flax-cake:

1 Tbsp GF oats
1 Tbsp flax meal
1 Tbsp almonds/walnuts (I mix them)

I grind up the above in the food processor so it is crumbs. I mix the crumbs with 1 egg white, cinnamon, and something a bit sweet (1/2 tsp honey or agave or a bit of stevia), and then I fry it like a pancake. I usually make a batch of the dry stuff big enough to last the week.

My granola:

1 cup GF oats
2 Tbsp whole buckwheat (kasha; I find this in the bulk section at Whole Foods)
1 Tbsp sesame seeds
1 Tbsp each ground up walnuts and almonds
1 Tbsp flax meal
2 Tbsp 100% juice (I've been using V8 fusion acai berry, but apple or grape or orange would work too)
2 Tbsp honey
1 Tbsp coconut oil (canola oil should work too)

I mix this all up, spread it out on a baking pan (I put it on parchment paper, but the pan might need grease if not) and bake at 350 for about 20 min.

Here's a recipe I use quite often...

"crepes"

2 TABL Pamela's baking mix (or any GF flour)
1 egg
2TABl water (scant)
- stevia (optional)
- almond extract (optional)

whisk together and cook it on a large crepe pan or skillet

I then use about 1/2 TABL of maple syrup
OR
spread with nutella

If you feel the need to get out of your breakfast rut, here are some ideas posted on the then named ST.John's listserve. I've done some minor editing to update some replies. No more boring breakfasts! Barb

Poster's Summary:
I had a wonderful and overwhelming response to my question about breakfast food variety. My sincere thanks to the great bunch of people who responded. You were all great! Here are the creative responses. I hope this is helpful to others, as well.
a.. lots of cereals recommended, too many to list most people add dates, raisins, nuts (I am not a big fan of cereal though. I eat it more for snacks than breakfast.)

b.. Rice cakes with peanut butter, pb and walnuts or cream cheese in various flavors

c.. Yogurts

d.. Waffles with cinnamon sugar and walnuts (this is yummy, I tried it) This person recommended Mesa Sunrise waffles (8 to a box, not 6 like Van's - I tried them and they are great!)

e.. Glutino's and Kinnikinick's frozen bagels (almost equal recommendations)

f.. Kinnikinick donuts -van. frosted or choc. frosted.

g.. Muffins, coffeecake make and freeze to use as needed

h.. Smoothies (good suggestion - 2 cups of fruit or combination of fruit and juice, ice water and sweetener. The source says p.b. and banana is good. I recommend strawberry and banana. Yummy!

i.. Buckwheat groats with raisins, banana, avocado, goat yogurt, walnuts butter and olive oil and kiefer (what's kiefer?) ed - keifer is a type of yogurt

j.. Glutano rice wafers with pbj or pb and banana

k.. polenta fried with butter or cheese; can buy premade 6 in. log in dairy section

l.. corn tortillas with egg, ham, cheese or apples and cheese

m.. rice pudding (Kozy brand is good)

n.. pumpkin pie filling (no crust)

o.. deviled eggs

p.. potatoes with bacon, peppers, onions

0.. deviled eggs

q.. fried mashed potatoes (these are great fried in butter!)

r.. gluten free cookies with various fruits

s.. gf meal replacement drink

t.. lentils with green peas and curry

u.. gf oatmeal. Some add apple, other, cinnamon sugar, vanilla, etc.

v.. Pamela's pancake mix, also can freeze and reheat

w.. cooked egg wrapped in ham

x.. French toast with gf bread

y.. Manischevitz potato pancake mix (these are delish!) The homestyle are best!

z.. German pancake 1/2 c. milk, 1/2 c. gf flour, 1/2
tsp salt, 2 eggs. Mix, bake at 350 in pan with 2 tsp. melted butter to coat.

aa.. corn tortillas with cream cheese - others put leftover meats, cheese in

ab.. some folks just eat leftover dinners (works for me) ex: tuna salad on cucumber slices, hamburger, chili, vegetables in tortillas, etc.

ac.. Cream of rice, cream of buckwheat

ad.. Grits with lots of butter yum!

ae.. Lots of bread recipes, homemade or mixes; Anna one recommended baking in a donut ring and one in mini angel pans from Wal-Mart some add onions, garlic, seeds, etc.

af.. Whole foods cornbread, muffins, scones and other goodies

ag.. Sterk's gf bagels with cr. cheese and jelly

ah.. Enjoy Life bagels. ryeless rye and reg. gf bread

ai.. granola

aj.. cottage cheese with additions like fruit

ak.. egg fried with mashed banana

al.. Omega smart bars

am.. PB/apple

an.. Gillian's raisin muffins

ao.. Quinoa, cooked and sweetened with stevia (several people sweeten with stevia

ap.. Ruby range southwest pancakes=20

aq.. Frittata with corn, egg, sour cream and cheese

ar.. fry slice of gf bread, buttered on one side,jam on soft side

as.. Carnation or other instant breakfast (read labels)

at.. Quinoa flakes hot cereal

au.. food for life brown rice tortillas as breakfast burrito

av.. fry a handful of frozen chopped onions, toss in saved cooked rice and curry powder

aw.. reheated rice topped with: applesauce, banana, cinnamon and nutmeg mixed in blender

ax.. rice porridge by Orgran

ay.. fried, salted ground pork cubes with rice and honey

I am enjoying breakfast these days and out of my "waffle rut" thanks to all of you great and helpful people. THANKS AGAIN!!!!!

AVOCADO PUDDING

4 avocados
1/4c honey or amount to desired sweetness
1 c cocoa powder or less to desired chocolateness
Dash of sea salt
Add water to desired consistency, or pineapple juice from pineapple side


You pop this into a really good blender, like the Vita-mix (or whatever!) and it's creamy goodness, esp with strawberries and fresh pineapple!

Hey everyone,

I am still sort of new to this group but I do have one quick thing I love to eat when I am in a rush with no time to cook.

I haven't found a good brand for bread yet that is GF. So my alternative to a PB & J on bread is put it on some rice cakes. I usually make an open faced sandwich (just because two cakes piled high is one BIG bite!). You can do the typical peanut butter and jelly or swap in honey with banana or other fruits. It's a great thing for me to pack for my evening classes.

I don't know if this is posted yet on the boards elsewhere (there are so many posts to read through!!!) Hope this opens one more alternative meal choice for people!

I know of 3 different gf oats that you can buy.

2. www.glutenfreeoats.com
3. www.creamhillestates.com

I've never tried the Bobs Red Mill yet, but, I hear it is very good. (I have not seen it in any of my stores yet.)

I've eaten both the Cream Hill Estates Oats and the Gluten-Free Oats. I have not had any problems.

I try to buy from the stores, if possible. I did buy the Cream Hill Estates Oats on line--but--the postage is so expensive !!!!!

YOu mention gluten-free oatmeal. Can you tell me more about it. I never heard of this product and did not think any such thing existed.

A few ideas for eating breakfast like a King.

--Raw nuts--one or several handfuls of raw almonds, walnuts, pecans, pistachios
--Cheeses--the real, traditional sorts like gouda, goat, Swiss, edam, etc. (not Velveeta, Cheez Whiz, etc.)
--Eggs, Egg Beaters, or Eggology egg whites--and "spice" them up with sun-dried tomatoes, salsa, olives, tapenades, olive oil, onions, green peppers, etc.
--Yogurt (real, of course), cottage cheese
--Ground flaxseed, --as hot cereals or added to yogurt, cottage cheese, or other foods. Esp. helpful for reducing both total LDL and the proportion of small LDL.
--GF Oatmeal--slow-cooked, not the instant nonsense.
--Soups--great for winter.
--Dinner foods--chicken, beef, fish, green beans, asparagus, tomatoes, etc., most easily added by saving left-overs from dinner. You'll be surprised how filling dinner foods eaten at breakfast can be.

Peanutty Fruit Salad

Serves: 6

Peanut & yogurt dressing give this fruit salad an exciting twist. Reprinted with permission by Public Health - Seattle & King County.

INGREDIENTS
1 (8 oz.) can crushed pineapple
1 cup peeled, shredded carrots
1/2 cup chopped apples
1/2 cup chopped pears
1/2 cup peanuts
1/4 cup raisins
1/3 cup plain lowfat yogurt
2 tablespoons peanut butter

DIRECTIONS
1. In a medium bowl, stir together the first 6 ingredients.
2. In another bowl, blend together the yogurt and peanut butter.
3. Add the yogurt "dressing" to the salad and stir to coat.

Fat: 8.9 g
Carbohydrates: 27.4 g
Protein: 5.6 g

Crazy me hasn't tried any quinoa yet (despite it being recommended over and over as to how many health benefits there are and having a few boxes in the cupboard for 18 months now ... probably should throw them away!)

I wish I could say from personal experience what it's like, but I can't. I've had buckwheat for breakfast: it was gelatinous.

Another idea I liked when first diagnosed was a slow cooker overnight cooking brown rice with additions of choice which could include: dried cranberries, butter, cinammon, nutmeg, raisins, almonds and/or walnuts, honey, chopped green apples, etc.

Let us know what you try and what you like!

Ooh great suggestions! One question: I've never been a fan of cream of rice cereals, but I like the idea of hot cereal for breakfast. I'm curious to try quinoa flakes as you suggested, but I'm not sure how to cook/flavor them! Any ideas?

tzatziki is a yogurt and cucumber dip, often served with calamari in greek restaurants. I think if you search on line, you can find a recipe, its very yummy, with veggies or fish too.

My Newest Fave Fish Recipe is This ONE.. It used to call for 2 TBSP flour, and i used to make it that way, but since being GF, i have omitted it with NO change in taste or texture to the overall recipe.

4 - 4 oz fish fillets (salmon, snapper, bass, etc)
~~~~
1/4 cup fat free sour cream or yogurt
1/4 cup real (GF) Mayo
1 tsp or to taste Mrs Dash - Lemon or Garlic
1 tsp dill
Salt and Cracked Pepper to taste.

-Place fish fillets on greased or *Pammed baking pan.
combine sour cream, mayo, Seasonings in small bowl. Stir well - taste.. adjust seasonings as you like it. ( I sometimes use lemon, lime or orange zest or a crushed garlic clove )
Spread 1/2 sauce over fish pieces. Bake at 400* oven, for 5 minutes or so. Turn fish over, spread remaining sauce over fish. continue to bake until done. ~ fish should flake easily when checked with a fork
This would probably be good in the Lettuce wraps too.

*Okay, there's also a picture of this in the magazine and what I really appreciated here is the idea to use radicchio which I have not used much of ... is radicchio just another name for purple cabbage? I REALLY liked that idea to use purple (or green for that matter) cabbage leaves as a taco! I hadn't thought of it and it might not fall apart as easily as a lettuce leaf.

I've never heard of tzatziki either, I'll have to learn more. If anyone has used it before, please share your experience.
