Flourless PB Cookies

1 cup sugar (white or brown)
1 cup peanut butter (creamy or chunky)
1 egg

Mix all, bake at 350 for 7-10 minutes. These make great PB Blossoms if you want to add a Hershey Kiss or Reeses PB miniature to the middle after they're cooked. You can also do the standard sugar-fork-press, or mix in choc chips or nuts.

They are best the same day, but it's a smaller batch so we rarely have leftovers anyway!

Chocolate Chip Brownies

1 (16) ounce jar salted almond butter, smooth roasted
2 eggs
1 ¼ cups agave nectar
1 tablespoon vanilla extract
½ cup cocoa powder
½ teaspoon celtic sea salt
1 teaspoon baking soda
1 cup dark chocolate

1. In a large bowl, blend almond butter until smooth with a hand blender
2. Blend in eggs, then blend in agave and vanilla
3. Blend in cocoa, salt and baking soda, then fold in chocolate chips
4. Grease a 9 x 13 pyrex baking dish
5. Pour batter into dish
6. Bake at 325° for 35-40 minutes

Makes about 24 brownies

I found the recipe for the GREEN TOMATO CAKE I tried at our local celiac Thanksgiving dinner. I don't even remember the taste, other than it was so good I took the recipe (very moist). I don't know the source of the recipe - wish I could give credit where it's due.

GREEN TOMATO CAKE

1c (2 sticks) butter, softened
2-1/2c sugar
3 large eggs
3c gf flour mix
2tsp xanthan gum
2tsp cinnamon
1tsp baking powder
1tsp salt
1/2tsp nutmeg
2-1/2c diced green tomatoes
1c raisins (golden preferred)
1c pecans (or walnuts)

Preheat oven to 350*. Grease and flour a 12 cup bundt pan or 9x13 cake pan.

Beat butter and sugar with electric mixer until creamy. Add eggs, one at a time, beating well after each addition.

In a medium bowl combine flour, cinnamon, baking powder, salt and nutmeg. Gradually add to butter mixture, beating well. Stir in tomatoes, raisins and pecans.

Spoon batter into prepared pan. Bake for 55-60 mins. or until tester inserted in center comes out clean.

Let cool in pan on wire rack for 10 mins. Remove from pan and let cool completely. Spoon icing over cake or frost with cream cheese frosting.

Gingersnap Pumpkin Pie

I found this recipe at www.recipezaar.com and substituted GF gingersnaps for the regular one. My family loved the pie. It’s the first GF dessert I’ve baked that everyone enjoyed.

1 3/4 cups gingersnap crumbs, finely crushed (about 43 cookies)
2 1/2 tablespoons reduced-calorie stick margarine, melted
2 tablespoons granulated sugar
cooking spray
1 1/2 cups fresh pumpkin puree or canned pumpkin puree
3/4 cup brown sugar, packed
1 tablespoon cornstarch
1 teaspoon cinnamon, ground
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon nutmeg, ground
2 large egg whites
1 large egg
1 (12 ounce) can evaporated skim milk

Preheat oven to 325.
Combine first 3 ingredients in a bowl; toss with a fork until moist. Press into bottom and up sides of a 9-inch pie plate coated with cooking spray.
Bake at 325 for 5 minutes; cool on a wire rack.
Combine pumpkin and remaining ingredients in a bowl.
Pour into prepared crust. Bake at 325 for 1 hour or until a knife inserted in center comes out clean.
Cool on a wire rack.

10 min no bake!

PEARS WITH ORANGE GINGER TOPPING

Ginger adds a zing to Pears for a savory dessert.

6 oz low-fat vanilla or soy yogurt
3 T undiluted frozen orange juice concentrate
1/4 t grated fresh ginger
2 T honey
2 fresh Pears

1. Whisk orange juice concentrate, ginger and honey into yogurt until the honey is well incorporated and the mixture is smooth.

2. Cut pear in quarters and core. Dice into 1/4" pieces and divide into 2 dessert dishes.

3. Spoon the yogurt sauce over Pears.

hint: if you don't have fresh ginger, 1/2 t powdered ginger may be substituted.

5 Quick Serving Ideas for Pears:

1. Serve sliced Pears with gorgonzola, goat or blue cheese for a delightful dessert (make sure it's gf of course).

2. Pear and Watercress Salad: Combine pear slices with watercress, thinly sliced leeks, mustard greens and walnuts for a delicious salad. Serve with Healthy Vinaigrette (see below).

3. Pear and Millet Porridge (see below): Add 1 medium chopped Pear, 1 t grated fresh ginger and 1 T honey to millet porridge for a pungently sweet breakfast treat.

4. Pears w/Lemon Sauce: Drizzle sliced Pears with Quick Lemon Sauce (see below).

5. Pears with Almond Cashew Cream: Make cashew cream (see below) using gf almond extract. Slice 1-2 Pears and sprinkle with lemon juice. Dip Pear slices in sauce. Optional: sprinkle with cinnamon.


HEALTHY VINAIGRETTE:

3 T extra virgin olive oil
1 T fresh lemon juice or balsamic vinegar
sea salt and gf pepper to taste.

QUICK LEMON SAUCE (can also be made with lime)
(a versatile sauce that is quick and easy to prepare and complements many types of fruits.)

3 T cream honey (whipped honey, often at health food stores)
2 t lemon juice
1 t lemon zest (use organic to avoid wax coating)

1. Mix all ingredients in sm. bowl.
2. Spoon over fresh fruit or low-fat yogurt.
3. Squeeze lime or lemon juice and a few drips of gf tamari onto avocado slices and enjoy.


CASHEW CREAM
(this creamy sauce is great on fruit or as a pudding.)

1 c cashews
1/2 c water
1 T gf maple syrup or to taste
pinch of sea salt

1. Blend all ingredients in the blender on high speed until smooth (2-3 mins).

2. Add additional water in small amounts to create desired consistency.

Optional: Soak the cashews in water for 2 hours before blending for creamier consistency.

variations:
-add 1-1/2 t gf almond or gf vanilla extract for a different flavor
- add cinnamon to recipe.

Baked Apples with Walnuts and Figs

4 lg apples such as Granny Smith or Gala
2 tsp cinnamon
3T maple syrup
2 dried figs, cut up (use kitchen scissors) in sm. pieces
2 T walnuts, chopped fine
1 c filtered or bottled water

1. Preheat oven to 350.
2. Core apples and place in baking dish.
3. Mix cinnamon, maple syrup, figs, and walnuts. Divide mixture among apple cavities. Any remaining mixture can be poured over the apples.
4. Pour water around the apples and bake in oven, uncovered, for 1 hr or until apples are soft.
5. Serve hot or cold.

Amaranth, Quinoa and Dark Chocolate Cake

You need:

4.5 oz dark chocolate, 70 % cocoa (Valhrona for me)
7 Tbsp butter, unsalted
1/2 cup blond cane sugar
3 Tbsp amaranth flour (1 oz)
3 Tbsp quinoa flour (1 oz)
1 tsp pure vanilla extract
1/3 cup pecans, chopped coarsely (1 oz)
3 eggs
Pinch of salt

Steps:

Preheat your oven at 350 F.

Butter a 2 x 7 3/4 “rectangular mold and line it with parchment paper.

Melt the chocolate with the butter in a double-boiler (or a bowl placed on top of a pot full of simmering water).

Separate the egg yolks from the whites.
Beat the yolks with the sugar and vanilla until light and white in color.

Add the chocolate preparation and mix until well incorporated.

Add the nuts and the flours, and mix well until smooth in texture.

Add a pinch of salt to the whites and beat them until light and firm. Fold in the previous preparation, making sure that it stays light.
Pour the batter in the mold and cook for 45 min or so. Check if the cake is cooked by inserting the blade of a knife. It should come out almost dry, but not totally (the cake is moist).

Remove the cake and let cool slightly before unmolding. Let cool on a rack.


"For this recipe, I was quite curious to experiment with two flours I have grown quite fond of for taste and nutritional values: quinoa and amaranth. Adding them both to chocolate worked perfectly: they left the cake light, adding a grainier texture too. While amaranth flour adds protein and fiber — amaranth has three times more fiber than wheat, five times more iron, it contains calcium, iron, potassium, phosphorus, and vitamins A and C — quinoa flour gives a moist nutty texture to the cake, perfect combined with chopped pecans tossed in the batter.

For the curious ones, I am not gluten intolerant but currently somewhat gluten sensitive. And I must say, adapting and experimenting with different gluten-free baking products has been a pretty enriching experience, pushing me outside my comfort zone.

PS: The cake can be enjoyed as such. I also love to eat it with plain yogurt or a vanilla-flavored crème anglaise, as shown on the picture*."

This recipe looks wonderful. I wonder how many I could eat and not gain weight???
In our house, I usually make fruit salad for dessert, and only when we have company. Otherwise, it's a piece of fresh fruit, or maybe for a treat it's a pineapple cut into chunks.

Veggie Carrot Spice Cake (Muffins)

1/2 c. minced green cabbage
3 ripe pears, chopped
3 organic carrots
1 small organic apple
1/4 c. agave nectar
2 T. walnuts
1 T. almonds [ oh god why can't these be in my version!! :( ]
1/4 c. raisins (optional)
1 T. sunflower seeds (optional)
1/2 c. shredded coconut

1 T. almond flour
4 T. ground flax seed
5 T. organic coconut flour
1 T. rice bran
1 c. organic buckwheat flour
1 T. baking soda
1 T. sea salt
1 T. baking powder (non aluminum)
2 T. Earth Balance vegan buttery sticks
1/4 c. unsweetened apple sauce
3 eggs (or equivalent substitute)
1 c. water

Spices:
1 t. cloves
1 t. ground ginger
1 T. cinnamon
1 t. nutmeg

Use the Salad Master or your food processor to finely grate carrots, green cabbage, and apple directly into a large mixing bowl. Mince ginger in a food processor and add to veggies. Add spices, eggs, melted butter, applesauce, water, and dry ingredients to the veggies and mix well.

Spray two 9" cake pans with nonstick cooking spray and preheat oven to 350. Add batter to cake pans and bake for 25-30 minutes or until toothpick comes out clean.

*Muffin Option*
Cook for 12-15 minutes at 350 or until toothpick comes out clean. Let cool completely before frosting cake or serving muffins. I used my new vegan frosting concoction made from coconut milk to frost the cake.


Coconut Frosting (Vegan)

1 15 oz. organic coconut milk
2 T. potato starch flour (we use Ener-G brand)
2 T. corn starch
5 t. unflavored psyllium husk fiber powder
2 T. natural brown sugar (can omit, but potato starch is slightly bitter)

Mix all with a hand mixter until smooth and thickened. I whipped it for about 2 minutes and added the psyllium fiber 2 t. at a time while mixing until the frosting set into a spreadable form.

In retrospect, I would just use coconut milk, cinnamon and a lot of unflavored fiber powder (2/3 c. or more or until the frosting thickened). Some ground flax, coconut flour, or almond flour would also do the trick (but then it wouldn't be nut free for almond flour). I used this to frost the Carrot and Veggie Spice Cake, but it would work well on any cake where you would normally use cream cheese type frosting.
