I'm not sure if adding spices would break the beaten egg whites or not, but it's worth a try! This was also my first foray into beating egg whites to stiff peaks, so I was trying to follow the recipe to a T for the first go-round.

Amber512 - what if we spiced them up like the pizza crust which I have also tried and found it not too bad but definitely on the eggy side.

I gave up corporate life because it was too busy and now I am even busier so waiting to have time to get healthy is not an option. My time is NOW!

Well I tried it this morning and it's definitely more bread-like this morning. It really does look like a hamburger bun. Unfortunately, it tastes completely like egg. Which makes sense, but I was hoping the cottage cheese would cover it up more. Maybe the cream cheese version is better? I don't know, but blech.

I actually have tried cauliflower crust pizza (what I'm making again for lunch right now!) and I don't taste the egg in it at all. It does taste like cauliflower, but the spices (oregano, parsley, garlic, etc) really does help as well as the cheese that some versions call for. Yum!

I was doing some research and found low carb gluten free bread here is the link.
(http://www.julianbakery.com/ ) I am going to go to the store that carries it and buy a loaf, I will report back and let you know how it is, unless someone has tried it and let us know how it is. The almond bread is 100 calories per slice, the coconut bread is only 40 calories per slice.

Heavenly Morning - that is a tough one. That is why I was so excited to find this option though it will never be like your good old white bread. There are LOTS of excellent gf bread options that are commercially available but most are not low cal or low carb. I have found alternative solutions to bread for the every day. I use lettuce wraps for most of my "to-go" sandwich type meals. I use a thermos almost daily and triple up my meals when I cook to have leftovers which I store in individual yogurt containers already portioned out. I like hard boiled eggs as a lunch option, I have to fight my 9 year old son for them :)

There is a way to make this doable. Message me if you want to hear more about how I handle it I would be happy to help you out.

Thanks for the recipe and I think that I will try! Has anyone tried a pizza crust using a very similar recipe? It works very much like this? It always taste of the egg whites. Can you let me know if there is a preference between Cottage or cream cheese?

I just started gf and am looking for a bread that is not only low in calories and fat but also carbs, any suggestions?

How funny, I just made some today!

I read that it is best the next day, so I'll have to check back in. I tried a piece (and my husband did too) and for the same-day version it just tastes like eggs. Like crunchy eggs.

But the reviews say how important it is to wait until the next day....so we'll see!

Barb - I have a local bakery that does absolutely lovely bread, buns and bagels gf but I have been desperately trying to get rid of 40 lbs so a calories adjustment was in order. I love my hamburger buns but am thrilled to have found something I could potentially use to eat a sandwich that is both under 80 cals and gf ! I'll let you know.

I always use Kinnikinnick's Bread & Bun Mix. A photo with a hamburger is in my Spark Photos. I've also tried Robin Ryberg's Baking 5 min or less all of which are done in the microwave.
