1 egg, 1 tsp baking powder, Tapioca flour, salt and pepper.
Beat egg, add baking powder, and beat until incorporated. Add tapioca flour in small amounts until pancake batter consistency.
Cut fish filets into manageable pieces and dredge in some tapioca flour, then coat in batter and fry. When golden, drain on paper towels.
