I decided to send a note to Authenic and my tried and true recipe for banana bread and they said I would need 1/4 t of xanthan gum. I was glad I checked as I would have added double the amount. I have found after baking GF for 10 years that not all all purpose flours work for for a good substitute for a normal recipe.
Do any of you have a good banana bread recipe using the Authenic classic blend flour? I have a bunch of flour that I need to start using. I have lots of desserts but no quick breads. I have a favorite recipe that I like for my banana bread but found it doesn't work with that flour. Maybe the problem is how much xanthan gum to use. Too much or too little causes problems.
