Last night we tried a SP recipe that was yummy - Dr Pepper Chicken!

1 can Diet Dr Pepper
1/2 cup ketchup
2 chicken breasts

Combine liquids in frying pan, add chicken. Cook for 30-45 min until meat is cooked and sauce reduces. Serve over rice.

I cut the chicken into bite size pieces before cooking (that let me feed family of 5 with only 2 lg breasts). And added 1 tsp garlic salt for a more adult flavor. Fun way to get a low calorie, BBQ chicken dinner that's easily GF.

Hi Everyone: My one son loves Kale.... Have not steamed it as yet.... He loves it in the oven.. You cut the stems off, wash them, shake the excess water off. Dab with a paper towel. Then you brush them with a little oil, and add some salt and pepper... Bake it 350 - 400 for about 10 mins. It becomes like a chip... This is the only way he will eat it... We both fight over it. My other son and husband won't touch it... Next I am going to try it with parsnips... Aspargus are good that way too...

Brandin9 Rudi's gluten free bread has egg whites in it but none of the other ingredients. I have issues with eggs but seem to be able to eat egg whites. The cookbook "Cooking free" by Carol Fenster has recipes and recommendations for substitutions for all of those allergies. It is available at amazon.com and at borders bookstores. I use almond milk for dairy substitution, egg replacer for baking, butter or spectrum brand shortening for baking, and read lots of labels.
Feel free to post questions for me on my sparkpage. My daughter is allergic to soy and I have celiac and have learned to cook soy, dairy, gluten and egg free. I have been able to add back in some cheese, eggs and cream soups after 3 years of being all free of them but still need to be careful and continue to eat absolutely no gluten. Cooking this way seems daunting at first but take one day at a time. You can do this. Barb

You probably have the gluten free "tamari" kind, but just in case-beware of the gluten in the soy sauce!

Hi Everyone: I like making Shirtaki noodles with some soy sauce and veggies stir-fry... I am looking for Gluten Free Bread that is nut free, all dairy, egg free and casein free....or a great recipe....

I have been on single pan meal ideas kick lately. Latest one is to add 1 tsp coconut oil to a cast iron pan over med high heat and add in a quarter cup of chickpeas, add after a few moments shredded kale. I like the taste of olive oil so I add 1 tsp to the mix then add diced squash and boiled red potato. I added zest from orange and I squeezed fresh orange juice over it and seasoned it with thyme, garlic powder and fresh pepper.

Found a recipe for salmon:

4 to 6 oz salmon cut into 2 to 2.5 oz portions
1/4 cup soy (I use wheat free tamari)
1/4 cup honey
1 clove garlic smashed

Mix tamari and honey together, put in plastic bag add garlic and salmon. Marinate at least 10 minutes, 30 is better. Now the recipe called for baking at 350 in a baking dish covered by tin foil. I broil it for about 4 to 5 minutes. Careful as the liquid will burn quickly.

With summer coming I need to get a blender. I am lusting a Vitamix. I keep checking Craig's list for one.

I got Rudi's original bread and it is my favorite GF bread so far. Had toast with my eggs this AM.

Today was my first year anniversery of becoming GF. I feel like a new person and have lost 15 pounds.

I made a new smoothie this week and it was so good. My daughter and I were fighting over who got the last of it. Recipe: 1 large organic ripe mango, 1 cup vanilla almond milk,1/2 cup water, 1 cup frozen marionberries and 1 tblsp acacia fiber. Blend until smooth and enjoy. Yum!!!

Sorry about the reaction Cindy--- I heard that the original and the cinnamon raisin were also good though I have not tried them. Hope they are corn free! I reacted to eggs and dairy and bananas when I first started on Celiac diet and know how frustrating it can be with multiple allergies!! Barb

I tried the Rudi's multigrain bread and liked it. Unfortunately, it did not like me. Got a rash from the cornmeal. I have recently started reacting to corn, probably because I was eating so much of it as a result of the gluten intolerance. I am going to try the non-multigrain.

I had the kale and eggs this am, it was great!

I have had the same problem with bread. The only kind I liked was one that my mom made. I love Rudi's multigrain bread toasted. It is the best I have had in 3 1/2 years. I get it at costco now in a two pack and am so thankful. It is found in the freezer section of store. Smiles Barb

The kale and eggs sounds good. Gotta get to the store for the kale. Gonna look for Rudi's bread too. It is one I have not tried. Still looking for a bread that I like. I can tolerate Udi's but dont really like it.

Made Creamy gravy and chicken with brown rice for dinner tonight using the Pacific Foods new Gluten Free Cream of Chicken soup as a base. Smells yum!! Will let you know how it tastes.

Oven Fried Baby Red Potatoes
I cut up 5 baby red potatoes into 1 inch peices, tossed them lightly in olive oil and sprinkled them with parsley, basil, rosemary, minced garlic and salt and oven baked them at 375 degrees. Just right for a side dish for my family of 3. I use a silicon liner in my baking pan so they don't stick and can use less oil that way. YUM!! Smiles Barb

Here is one we are hooked on right now:

Cod Gumbo

1.5 cup diced onions
2 cloves of garlic
1 cup diced poblano peppers

steam in skillet until tender

28 oz can diced tomatoes
12 oz can crushed tomatoes
2 cups sliced okra (I use frozen)

add to onion mixture bring to a boil

1 lb of chopped cod (I have also used shrimp)
1 Tbls. cajun seasoning (I use Chacos brand)

return to boil for 10 minutes

Hope you like it!

I made No Bake Chocolate Oatmeal Cookies from spark recipe site and they are delicious and around a 100 calories for a yummy treat. I made them gluten free by using Bob's Red mill gluten free oats and processing them to make them more like the instant oatmeal called for in the recipe. I also cooked them in the microwave instead of on the stove top making this an easy recipe too!! I am keeping them in my refrigerator and they taste like little cold candy bar treats but with 3 grams of fiber per serving are good for me too! My family is enjoying them as well!!! Smiles Barb
