1 1/2 cups GF flour mix 1/2 cup tapioca flour 1 1/4 teaspoon baking soda 1 teaspoon baking powder 2 teaspoons xanthum gum 1/2 teaspoon salt 3 Tablespoons sugar 1/2 (1 stick) butter 1 cup sour cream (I have used plain yogurt which also works well) milk for brushing
Sift flours, soda, baking powder & soda, xanthum gum, salt, and sugar in a large bowl. Cut in butter until the mixture is crumbly (or use a food processor). Add the sour cream or yogurt, and mix until blended. form the dough into a round mound in a 7" greased cassarole. Brush with milk. Bake for 50 to 55 minutes. Remove from pan and cool on a wire rack.
