I haven't tried any of these but since we all have different tastes and other sensitivities so there should be something for everyone emoticon

Elana's Pantry (new favorite recipe site) has an almond flour Irish Soda Bread that I plan on making this week! She also has a healthy green eggs recipe.

Gluten Free Irish Soda Bread

1 1/2 cups GF flour mix
1/2 cup tapioca flour
1 1/4 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons xanthum gum
1/2 teaspoon salt
3 Tablespoons sugar
1/2 (1 stick) butter
1 cup sour cream (I have used plain yogurt which also works well)
milk for brushing

Sift flours, soda, baking powder & soda, xanthum gum, salt, and sugar in a large bowl.
Cut in butter until the mixture is crumbly (or use a food processor). Add the sour cream or yogurt, and mix until blended.
form the dough into a round mound in a 7" greased cassarole. Brush with milk. Bake for 50 to 55 minutes. Remove from pan and cool on a wire rack.
