I have the recipe on file so not going to bludge into it yet. Easy does it in the line of me baking things. Ha,ha those desserts . You mentioned coffee. I have Timmy's coffee on weekend only and I use coffeemate rather then the coffee cream and it does not bother me. Now the Cappuccino is deadly for me. Pains .

Choc I can have some but never go at it too much. Then it does me in with bad headaches and upsets of tummy. I have had no chocolate turtles or chocolates in a box or even a sweet cookie of any commercial things. I was getting I needed a fix in sweets now though. So this is when my hubby got these G.free blueberry muffins. I eat one a day only.
I eat jelly or Jello people may say. I am hooked on all flavors. I do not take the no sugar Jello. Forget that.
I have vanilla pudding watching all ingredients before making it and it is fine. I use skim milk. No bad effects. I make it quick in the micro. No lumps or standing near the stove so it won burn. Perfect.
I had gained a pound back of the three I loss and today I loss one pound and I have kept my food digested for 12 hours now. Which is a blessing. I am doing well.
It has been like my 3 week coming up on G.Free

I really feel good. I have my strength back.

My hubby came to me and said. Guess what I found in the cupboard . Fudge. So you see how I was eating. I said. Well forget it now. It is my # one enemy.

So If I can say. No thanks and mean it to fudge which also was my food weakness. I have come along way considering my Christmas and New years eating which was plain being sick of pigging out. Wrong things.


June mentioned the cake mixes to use for variety of things to make. That does sound good.

I am a sweet tooth. What lady does not. Now Valentines coming. Hmmmmmmm

JUNEBUGABEE, caffeine was hard alright, cause I loved my cuppa joe, too. Chocolate WAS sad, but I'm pretty over it (don't tempt me w/a bar cause I don't know what I'd do - lol). Once you've not had something in a long while, you forget about it. "Kinda" like gluten!

BEESPARKLE, you're going to have to try the recipe and let US know if they're moist. My thinking is they would be. Doesn't it seem most cake mixes are?

I am not a butter person really. So I can use butter my hubby eats it but then I can just down somewhat on the salt in the recipe. I have done that before. I do not eat salt at the table but we do have sea salt which my doc suggested to use if needed. I see it says sift the powdered sugar. Powdered sugar? Hmmm. Sounds like back when my Mom used to do that sifting. I just read you can use veg oil if you do not want dairy. So options here. looks good. So does the bottom recipe. So have you tried them to say they are moist the muffins?

Right mow as I said the muffins prepared I got. Are sooo delicious.

Hi Bee,

Salt isn't the issue; but most baking recipes call for unsalted butter because you are also going to be using salt in the recipe. If you use salted butter, the result is too salty!

I think they also make unsalted butter substitutes, if you can't have butter... not sure about what options are out there, though.

Absolutely, and the cake mix ideas look really cool, too. I like the idea of using the cake mix in a variety of ways to produce a different result.

Sorry about the agave/chocolate problems. I can't imagine a sadder thing than avoiding chocolate emoticon

Hi Gals,
I bought the G.free blueberry muffins already made from the freezer at the health store two days ago. G.Free. I checked all the ingred. They are so moist still. The third day and I keep them in the frig. They have not upset me. I have one in the afternoon for snack. The first bite was so good. To think I used to buy commercial muffins before when you bite into them they crumbled and you were picking up the crumbs on bottom of plate more then the whole muffin in your hand. Then you had to down them as they were so dry with a drink.

I see where you can make them here. I looked at the site. Are they going to be moist after? I am so tired of Muffins that are dry and crumble big time.

Are these ones here moist after making? Did anyone make this type muffin's to have experience the texture.
Does everyone use unsalted margarine or butter. Why is that? Can we not have salt in marg or butter? I use Basel marg. I am not eating butter only once a month at the most.

Just asking here. Thanks.

You're right, it's hard! People have different preferences re: texture/flavor, right?

Re: Elana: I have her cookbook. :) Her desserts use agave nectar and chocolate - both from which I'm abstaining for different reasons (bg and caffeine). In other recipes I try to sub less honey or applesauce, or even none at all.

I know a lot of people use cake mixes: that's why I shared the option.

Thanks for sharing! I'm totally in that place of experimentation right now to see what recipes work, and what ingredients yield the right texture/flavor, etc. It's hard!

I just discovered elanaspantry.com, and I strongly recommend looking at her site. She uses very short, simple, natural ingredient lists, and I just had the date walnut bars--- delicious! Eaten up by a bunch of non-gluten people who couldn't believe they were gluten free.
