My favorite holiday cookies used to be my Mom's spritz cookies. I even still have the cookie shooter that has to be from 1972! LOL Anyway I made them today and they came out great with a few small modifications...
Preheat oven to 375. I used 350 convection.
1 cup butter or margarine 1 1/4C. powdered sugar 1 egg 4 tsp. vanilla extract 2 cups GF all purpose baking flour 1 tsp. Xanthan gum 1/4 tsp. baking powder 1/4 tsp. salt
Beat butter or margarine, add sugar slowly and beat until fluffy. Add egg and vanilla and beat well. Add dry ingredients in 3-4 additions, beating well after each. Fill cookie shooter and follow directions for use. Alternatively, drop on cookie sheet in small dollups, about 1/2 tbsp. Sprinkle with colored sugars and bake for about 10 minutes until edges just start to brown.
