yes, xantham gaum is to bind like gluten.

I'm new to gf baking as well. Most all of my baked gf stuff is ready made. Some of the flours and such like xantham gum and tapioca starch are a bit intimidating.

I can never have too many recipes! I will also try the xanthan gum in my next batch. They are so good I'm sure I will make these again and again.

I used xanthum gum in almost all of my gluten-free baking. I made gf pumpkin donuts over the weekend and they were AMAZING. I served them at a dinner party (alongside my husband's donut soup--oh yes, donut soup) and everyone kept saying, "Are you SURE these are gluten-free?" :) I will post the recipe when I get a chance.

No. I didn't even think to use xantham gim. I have some too. Not used to gluten-free baking. These are cake donuts, and they have a nice fine crumb.
Is xantham gim used more for bready type of things? Like bread? Or is it also in things like cakes nd muffins?
I'm really new to GF.

OMG! These turned out so good! I had 2 for dessert last night and one for breakfast today with some yogurt.
I froze them individually so they would stay nice and fresh.

You could maybe try it with Bob's Red Mill gluten-free baking mix or any type of GF flour you like.
