I used xanthum gum in almost all of my gluten-free baking. I made gf pumpkin donuts over the weekend and they were AMAZING. I served them at a dinner party (alongside my husband's donut soup--oh yes, donut soup) and everyone kept saying, "Are you SURE these are gluten-free?" :) I will post the recipe when I get a chance.
