I used xanthum gum in almost all of my gluten-free baking. I made gf pumpkin donuts over the weekend and they were AMAZING. I served them at a dinner party (alongside my husband's donut soup--oh yes, donut soup) and everyone kept saying, "Are you SURE these are gluten-free?" :) I will post the recipe when I get a chance.

No. I didn't even think to use xantham gim. I have some too. Not used to gluten-free baking. These are cake donuts, and they have a nice fine crumb. Is xantham gim used more for bready type of things? Like bread? Or is it also in things like cakes nd muffins? I'm really new to GF.
