Yes it will work, but one small suggestion. Toast the bread ever so slightly first. It will have a much better texture.

Anyone tried using Udi's for a breakfast casserole before? (Think eggs, sausage, bread.) I have to make a breakfast casserole for a church brunch and I want mine to be gluten-free so I can enjoy it too. I'd like to use Udi's bread if you guys think it would work.
