Charlene, thank you and your sister for the pie crust recipe! What a success my apple dumplings were! The first one I rolled out between two sheets of waxed paper as directed, and the dough was a whole lot easier to use than the previous gf dough I've used. After the first apple dumpling, I just took the balls of dough, mashed them flat and patted them around the apple. It worked just as well and they weren't unattractive. I took a pic of the finished product (before snarfing one down) and put it on my blog here so you can see. emoticon emoticon

Ok Cadyann here is the recipe for GF pie crust
Once you try it, let me know how it came out.

Prep time is 20 min.
cook time: 10 - 12 min
Makes one 9-inch pie crust

1/3 cup brown rice flour
1/2 cup tapioca flour
1/3 cup potato starch
1 Tbsp cornstarch
2 tsp sugar
1/2 tsp baking powder
1-1/2 tsp xanthan gum
1/2 tsp salt
1/2 cup Butter - softened
1 large egg cold
1 tsp apple cider vinegar

Preheat oven to 350 degrees F. Sift together all dry ingredients into a mixing bowl. Cut butter into dry ingredients with a pastry cutter until butter is incorporated into the dry ingredients. The dough should hold together when squeezed. Beat egg with vinegar together and then mix into dough. Form dough into a ball with your hands. Add a little tapioca flour if the dough is too sticky. Roll out the dough between two sheets of waxed paper. The dough should be about 1-1/2 inches larger in diameter then the pie plate. Peel one sheet of wax paper away from dough. Place pie crust in pan with remaining wax paper on top. Remove top sheet of wax paper. Trim excess dough and crimp edges to form a decorative border.

TIPS:
Before baking, crimp tin foil around the crust of the pie so the pie crust does not get burnt. If you are making a pumpkin pie and any other pie that requires baking, pie crust does NOT need to be baked first. No pricking is required.

If the recipe calls for a baked pie shell, prick the dough with a fork and bake at 350 degrees F for 10-12 min. Cool before filling.

Tammy, so far I have not found a good, stretchable pastry dough. But I have had success with making some really good baked goods. Avoid the traditional rice/tapioca/potato starch mixes. They will disappoint you. Mixes that contain sorghum, bean flour, amaranth or other newer grains will give you better results. For some really good recipes check out www.gingerlemongirl.blogspot.com/

Have you tried the web to see what they may have? I really don't eat that much bread and stuff like that so I only look for stuff like pancakes or waffles to eat. I probably will look for breads later but I have to be careful because most of them have corn products in them.

I found a recipe to make apple dumplings with crescent rolls (homemade, gf) but I was wondering if anyone has a successful GF apple dumpling recipe that they'd share. (Didn't find one on sparkrecipes!) I've had some trouble with making GF dough that has the "right" flour blends, so that it will be stretchy and roll-able. Any suggestions would be much appreciated!
