Mmm...That sounds yummy! I just figured out what the BLDS stood for. I'm slow today. Hee Hee.

I don't feel like cooking so dinner will be 'Make Your Own Sushi Wrap'. I place shred red onions, red cabbage, carrots and lettuce and add shrimps and small pieces of cooked salmon in a platter. We'll each have a few sheets of soy wrappers to make our own rolls with a Thai peanut dip I make or Tamari. We'll each have a bowl of Japanese miso and nori soup, salad with grape tomatoes, chopped celery and pumpkin seeds and a bit of brown rice.

Dessert will be zero cal. plain lactose-free yogurt with frozen raspberries blended together to make a sort of sherbet, sprinkled with walnuts.

B ~ Cottage cheese with flax seed, banana and strawberries and a cup of cocoa/coffee
L ~ Balsamic Orange glazed pork loin, wild rice, asparagus
D ~ Broiled Tilapia, Broccoli, Spinach salad
S ~ Apple, oranges, banana, Strawberries, might have some garbanzo biscuits.

All with lots of water.

Eggplant Pizza: CORRECTION ... I actually MICROWAVED them this time. (I very seldom use the microwave but I was broilng salmon steak).

So NUKE them for 4 - 5 minutes first, then turn them, dress them and nuke again 'til the cheese melts (40 - 60 seconds) SORRY ABOUT THAT!

Eggplant pizza: I cut four 1" thick slices of eggplant, brushed an itsy bit of olive oil on the bottom of a glass pie plate, broiled the eggplant for about 4 - 5 minutes; added a chunk of lactose-free cheese, a grape tomato quartered to make it look like a flower and sprinkled oregano for colour and flavour 'til the cheese bubbled. And voilà - four mini, yummy pizzas.

I am sure there are recipes for them online...the sodium laden ones I was referring to taste like a chicken broth with different spices and then they all have a spicy chile oil. My favorite was the spring onion, there was a lemongrass, a curry and a garlic. The Thai basil would be great!

Bo - I have not tried the Thai rice noodles yet, but I went to an oriental market recently and bought some. Any suggestions for cooking them Thai style? I love those flavors. Have to get some Thai basil seeds to plant this spring.

Our big experiment this week was sushi rolls. Took a class last week and made them for a Chinese New Year party we went to today. They went over really well.

Here is what I made for myself tonight since everyone else was having a gluten filled dinner (and I am GF). 1 serving rice noodles; 2 cups of broccoli and 2 tbs San-J peanut sauce. Cooked the noodles and stir-fried the broccoli, noodles and sauce. Not going to win any awards, but it was very quick and tasty.
Breakfast was one piece of millet bread and an egg. Lunch was tandori butter chicken. Snack was a pear.

On my menu every day is steele cut oatmeal. A great replacement for pie crust and a healthy addition to any diet. Instead of pie crust I create my own cup'o'pie using 1 serving oats and all the main ingredients to satisfy 1 serving of what ever type of pie I want.

Example: Savory Lunch was cup'o'pie chicken style. steele cut oats in 1 cup of low sodium fat free chicken stock, cook it slow and add 1 cup fresh or frozen veggies of your choice ( peas, carrots, mushrooms, corn, etc) Cook til all is tender and enjoy. Need a bit of creaminess? Stir in cheese.

Example: Sweet Lunch, oats in water with cinnamon and Truvia, while slow cooking add 1 cup chopped fresh or frozen fruit ( apples, blueberries, peaches, etc) It's cup'o'pie fruit style.

With a GF diet it is crucial to be creative so you don't get bored. If a dish sounds strange to others, don't worry about it as long as it tastes good to you!

I cook for the week on Sundays and Thursdays. Today I am cooking shrimp gumbo and hummus. I still have pinto beans and rice and roasted pepper salsa from Thursday. That takes care of lunch and dinner and a couple of snacks, along with fresh veggies and grapefruit. For breckfast I usually have two eggs over easy on a tostada with salsa.

It is freezing cold here today. I had gf bread from my local bakery , toasted with i can't beleive its not butter spray. At lunch i had a packet of plain tuna with my rice crackers. (those things are awesome and i never would have found them if not for celiac!) i also had one Lara bar for snack and tonight i am going to make chicken no noodle soup for dinner. Unfortunately i have to run by the store to pick up some carrots, onion and celery, but at least i have the chicken and the broth already to go. Yesterday i had really good chili and it felt wonderful! What's for dinner tomorrow?

I got groc at Trader Joe's yesterday and finished at Fry's today. Good meat at TJ's and found gf Bisquick and a couple kinds of bread mix. Had Shrimp at Red Lobster so having grapes and I don't know what else until I start looking around. Don't seem to be able to stay organized the past few days. Never home. Still haven't been to Sunflower. Oh - yes gf crackers with peanut butter.

Today i had my gf bread with peanut butter for breakfast. Lunch is A taste of Thai peanut noodles, and dinner is going to be lean ground beef with gf mac and cheese and progresso cream of mushroom soup with an extra can of mushrooms and two slices of kraft american cheese. i make a casserole my mom made for us growing up and it is an awesome comfort food. over the weekend i am making chili and then some chicken soup and trying the gf spaghetti noodles. i can't wait!

That's a good question -- I'd like to know how to do it. Though I'm thinking we just put in our own foods with the calories, etc., and they will become our food guide anyway. then we also give whatever our calorie count is supposed to be. I have not even tried on the food/meals goal, as I've still been trying to get all
portions and more gf foods before I try to figure that out. Besides - I think it may be a little complicated for me -- brain fog. chuckle

My mind is racing trying to figure out what to make that I still have something to cook in. lol My caregiver can't come tomorrow and every pot and pan and dish (or so it seems) are sitting and piled in the sink and I've needed to groc shop 3 days ago.

For "breakfast" I had a can of Trader Joes Gluten-free tomato soup and added a handful of cooked shrimp. As for the rest of the day -- I'll think of something. I know I have to try to do some dishes. I just have a terrible time standing that long and using my arms that much.
