Fage yogurt with flax meal.

Lunch is pork loin in a mustard sauce w/onions.

Dinner--no idea. I have jazz class tonight and need to give my cats a bath. Dinner will probably be something easy.

Getting the Pork/beans and greens ready for the oven. Mom will be here about 2:00 and we'll need lunch. I have all the groceries she needs - I can't eat her food. Had a really large groc list. She'll be here for two weeks. We'll have fun, but lots to do.

Have a terrible time listing everything. Still working on that. but for "brunch" am having what I grew up with called "egg pancakes" or "German pancakes" or "Swedish pancakes". Not as delicate as crepes. And I substitute some GF pancake/waffle mix for flour and use a little water for the liquid instead of milk. Will experiment with some vanilla rice milk and also some coconut milk.

Breakfast--Gluten free waffles (van's I think), 1 small nectarine

Lunch--Jensen's gf multigrain bread, tuna, mustard, cucumbers (from my sister's garden-yum), 1 small nectarine

Dinner--Roasted red pepper soup, gf crackers, more cucumbers. Mango popsicle for dessert.

Hmm. A little boring today, but I am trying to eat as many cucumbers and nectarines as I can before they disappear! Plus, I'm moving this week and we're trying to keep meals simple.

I must say eating light is more calories than densed for me. I like it because I'm hitting over 1000 cal.

Yeah, I'm closer to primal than veg too!

Yesterday's dinner:

In crockpot: crushed tomatoes; diced zucchini, yellow squash, green pepper, farm fresh onion; chopped kale, chard, fresh basil; garlic granules; oregano; black pepper; banana peppers; ground chicken

Cooked all day and ate with Trader Joe's brown rice fusilli and parmesan cheese, yum! Also, salad on the side with millions of mixed greens.

Nope, not a veg. Trying for more Paleo/primal here.

B - 2 Hardboiled eggs, coupla cherries, cup of blackberries, handful of greens out the door for appt.

S - nothing & so hungry. no bar on hand. hate when that happens.

L - romaine lettuce, seaweed, white kidney beans, olives, juice of 1/2 lemon, omega-3 oil, sardines in olive oil, more cherries (they're getting ripe, gotta eat 'em)

S - rice cake w/sunflower butter sprinkled w/flaxmeal & sliced banana.

D - too hot. don't want to cook. ate some sunflower seeds.

I bought my bagels from my health food stores. They are from Kinnikkinnick. You can buy from them but they are more expensive. If you have a Whole Food Store where you live you may want to ask them. The ones that I have are very good. I got the Sesame ones.

As far as bread, the only bread that I have now is the Orange/Cranberry Bread which is very good. I just put them in the toaster oven for toast. I get them from www.celiacspecialties.com My sister, who lives in Michigan (she also has Celiac) knows these people and gave me the website. If you do not want to pay for shipping you would have to buy $50.00 or more and the shipping is free. I also buy their rolls which are called Croissant Style Rolls and they are absolutely delicious. I use them also for hamburger buns. You can check out the website and see what you want to do.

As far as Xantham Gum you can buy them at the health food stores also. You may also see if your market carries gf foods.

Talk to me about all the GF breads and bagels you all use. I need some ideas!

Also, anyone bake with xantham gum? I need to buy some, but I have no clue where to find it. Do I have to order online? Or would they have it at Whole Foods?? Any ideas?

Not too bad yesterday

This is today's menu

B - 1/2 bagel - gf/1/2 tsp of margarine, 1 cup of sweet cherries, 2oz of peach yogurt w/2 tbsp of milled flax-seed
L - We went out for lunch - I had three (3) mini tacos with shredded beef and one (1) enchilada w/shredded beef
D - Beef & Pepper Stir Fry/w/noodles - gf - very good

How did you all do yesterday?? My 4th was terrific. I feel pretty good this morning, though I know i did a tad too much indulging last night!

I hope we'll get more traffic today... I need some inspiration for cooking!

My plan for today:

B - Egg White Cheese Omelet
L - Brown Rice w/ GF veg burger and broccoli
D - going out AGAIN. Ugh. So sick of eating out!
Snacks: Popcorn, Carrots, Oatmeal

Making gluten-free, summer fruit chex mix and red, white and blue (blueberry, cherry, and white chocolate) cheesecake for a BBQ that will have burgers and briscuit and some other side dishes, not sure what yet.

Happy 4th!!! Going to a BBQ today... huge challenge for me.

B - Oatmeal w/ pb and almond milk
L - GF Veg burger w/ vegetables and cheese
D - Black Bean, Mango, Quinoa salad w/ corn and anything else GF at the BBQ (prob not much)
Snacks: Low Fat Ice cream w/ a GF brownie, fruit

Trader Joes latin black bean soup for lunch
