The original recipe used potato starch, but I've been out of all my other starches, so corn it was today.

I never thought of that going to try it but the recipe that you put here I will have to find a substitute for the corn. I am allergic to it.

Todays creation was almost matzoh adapted from: www.livingwithout.com/recipes

Mine had:
2/3 cup oat flour - homemade
1/3 cup corn starch
1/3 cup almond meal - homemade
2 tbsp flax meal
about 1/4 cup extra garbanzo bean flour because it came out too sticky
1/4 cup spectrum shortening
6 tbsp water

They taste pretty good and are somewhat crisp, but they are a bit crumbly so next time I'm adding xantham gum! I wondered why it wasn't in the recipe to begin with.

It's still yummy with my homemade charoset (mixed processed apples, figs, raisins, almonds, walnuts)

I totally just realized that I could make flours in my coffee grinder. I ground up GF oats for oat flour and sliced almonds. The almond was a bit grainier, but I probably could have processed it longer. Anyway, I'm always interested in cheaper almond flours and GF oat flour, and I'm thinking about trying organic coconut pieces too!
