Thanks for the info. If you are like me you also have to be careful about corn products too. I am allergic to them too. So I say away from corn products too.

Thanks for mentioning the almond flour cookbook. I will look for it. I use a lot of almond flour for pancakes (which I use instead of bread for sandwiches sometimes) and for muffins. I also make a quick breakfast "pudding" with almond flour/meal.
Gluten Free Baking from the Culinary Institute of America cookbook has that recipe. I've not made those. I'm not much of a baker. I like short easy baking recipes like the ones in the Gluten Free Almond Flour Cookbook. Lots of info on that on my blog. Good luck with the cream puffs.
Most "treats" I don't even want any more but the other night I briefly thought - Wouldn't it be nice to have a gluten and dairy free creme puff. I know I can get vanilla pudding made with soy milk so I just need to find some flakey dough that is gluten free. Perhaps it is already mentioned in your blog and I just need to research it a little more.
