Liz, did you have a doctor diagnose you through intestinal biopsy or just on symptoms? You may not have problems with gluten, just wheat. I wish I could tolerate rye. Rye bread is yummy!

Liz, you may not be noticing the symptoms as much. Rye is just as damaging to Celiacs as wheat although visible symptoms may be less.
No Celiac/Gluten Intolerant persons should be eating rye. Rye Barley and Wheat all contain the protein gliadin that is damaging to Celiacs.

Thanks! I already have the almond meal flour and also have some rice protein that I might try adding to increase the protein content.

Almond flour is a good replacement for milk powder, if you are looking for the protein. Where there is already almond flour in this, you may be able to just do without it. Or try some soy instead.
Enjoy!

I don't see why you couldn't substitute one of the soy protein powders instead. It might be worth trying.

I wonder if there is anything dairy free that I ccould substitute for the skim milk powder. The rest I could have. I don't have a bread machine but don't mind making bread by hand.

Here's a link to bread I made yesterday. We are vacationing, and I ordered a bunch of flour, but not what I needed for my favorite recipes.

Some mistakes are opportunities for creativity and this bread came out great!

I used my bread machine.

Try it and let me know what you think.
