I also use the allrecipes.com yellow cake for many recipes.

I use it in cake mold (I have little kids so I use Pooh, cars etc.) Because this cake deteriorates quickly, I make and frost my cake as quickly as I can(1day if possible). If you make the round cake as suggested it works well; for a rectangle or a mold the edges get dried out a little. If you are going to eat it soon it stores ok at room temp; or I make cupcakes and freeze them for kids birthday parties. then I pull one out and frost.

For a chocolate cake I have found Bob's Red Mill is very good. I Served it at a dinner party not to long ago and everyone was surprised it was gluten free and so good.

Thank you all for providing me with some good recipes.

Barb you are not too late. Mine and my daughter's birthdays are both in December. I posted this question early, because I wasn't sure how long it would take to get recipes and I also wanted time to look at the different recipes to see which one would work better.

My daughter will be turning 4 and I'm trying to figure out what kind cake she would like best. emoticon emoticon

My all time favourite no fail gf cake is a recipe I found on www.allrecipes.com. It uses white rice flour and tapioca flour as you have said you have on hand.

for more recipes, enter gluten free in the search criteria. Allrecipes is a great resource. I love reading the comments and getting hints about what I would like. People say what went wrong as well. Don't be fooled by the photo someone posted. Also, the recipe quantity can be changed - just enter the number of servings you want. It uses Mayo. Best Foods/Hellmans is gluten free.

Hi CAHANIM8R, Here is a cake recipe I use for birthdays. I found that even the non-gluten eaters enjoy it.

Lemon Drizzle Cake.

Beat Together:
150 grams butter
150 grams castor sugar (ie fine sugar - you can use regular sugar and whisk it in a blender until it is fine)

Add to creamed Mixture:
3 eggs.

Mix separately:
150 grams Rice flour(or gluten free flour)
1 tsp Baking Powder
1 grated rind of lemon

Add to creamed mixture and mix in:
Juice of 1 lemon
The Flour mixture

Pour into an oiled 7 inch deep round tin (I use an 8 inch round tin). Bake 350 degrees for 45-50 min.

When cake is cooked run a knife around edges to loosen it from the tin. When cool, remove cake from the tin.

Ice with lemon icing.

VARIATION: After loosening the cake with the knife, dissolve 75 grams of icing sugar in the juice of one lemon. Pour over the hot cake. When cake is cool, remove from the baking tin.

I have found good recipes for 'from scratch' cakes on the web. Bette Hagman's Gluten Free Gourmet books have some good alternative flour mixes that may be used as substitutes in regular recipes. The best results are obtained with the lowest proportion of rice flour, which yields a gritty texture. If you make a chocolate or carrot cake, or something with similarly assertive flavor, the results are usually better.

I'm afraid I'm not much help with a recipe from scratch. I usually start with Pamela's Classic Vanilla Cake Mix and go from there. I have made it into carrot cake (it was yummy!) and into chocolate cake. Now I have a mix that I am planning to make into pumpkin spice cake for company coming next week.

I am trying to find a recipe for a Gluten free cake. Mine and my daughter's birthday are coming up soon and I'm trying to find a recipe that I can use to make birthday cakes that I can eat without getting sick for 3-4 days after eating it. I currently have some Rice Flour and some Tapioca flour, but I don't have any recipes to use them with. Any suggestions would be greatly appreciated.
