Hi CAHANIM8R, Here is a cake recipe I use for birthdays. I found that even the non-gluten eaters enjoy it.
Lemon Drizzle Cake.
150 grams butter
150 grams castor sugar (ie fine sugar - you can use regular sugar and whisk it in a blender until it is fine)
Add to creamed Mixture:
150 grams Rice flour(or gluten free flour)
1 tsp Baking Powder
1 grated rind of lemon
Add to creamed mixture and mix in:
Juice of 1 lemon
The Flour mixture
Pour into an oiled 7 inch deep round tin (I use an 8 inch round tin). Bake 350 degrees for 45-50 min.
When cake is cooked run a knife around edges to loosen it from the tin. When cool, remove cake from the tin.
Ice with lemon icing.
VARIATION: After loosening the cake with the knife, dissolve 75 grams of icing sugar in the juice of one lemon. Pour over the hot cake. When cake is cool, remove from the baking tin.
