TACOs on Tuesday - every Tuesday...

I can do Tacos in 20 minutes.

Ground Turkey seasoned with GF Taco seasoning, Refried Beans, Shredded lettuce and shredded cheese. If I have time, chopped onions and maybe some avocado. sour cream/salsa/hot sauce on the side.

I use corn Tostada shells warmed in the oven, or just throw together a taco salad with corn chips.

We also buy the Food For Life brown Rice tortillas. They hold up well for quick burritos. I just warm them on a non-stick skillet for a minute or two and then they are bend-able.

So easy and so good, and the family will eat it!!

Tonight's fare: baked halibut and sliced zucchini both w/butter, lemon and Herbes de Provence; leftover Mock Tabouleh and extra parsley (I swear I chew those stems like cud - but I'll do it cause it's good for ya!) or it'll go bad before I make something else with it.

(ha ha Deborah - diagonal! lol)
(IliniteTeacher - ROFL - me too! King size bed and books as my partner! I kicked the dog off - she's too hairy *spits hair out of mouth in the morning* - lol - but I miss her because she comforted me when she'd run in her dreams. I think I'll get her hair cut!)

(Montana - the mushrooms sound great! I'd substitute real mayo for me cause I've never cared for the other stuff: we need fats for our brain. I've been low-fat for YEARS and I have a heart problem...my thinking is is cause of the wheat/gluten on top of that: raises insulin. Fats satisfy and you generally don't overeat - esp if a person takes their time eating. JMHExperience so far.)

Hi Ladies,
I'm having turkey mince meatballs (with cajun pepper seasoning and egg to hold them together)in bottled tomato and garlic sauce served with steamed brown rice with lots of veges. All wheat and gluten free, healthy and no fat.

For our mushrooms peel them and then pull the stems and place them top side down on a cookie sheet. Set your oven to 350. Stuff them with the following mixture.
1 package of softened Cream Cheese
1 Cup of Miracle Whip
3-5 chopped green onions (depends on the size of onions an how much you like them)
3-5 strips of crisp cooked bacon (if I'm in a hurry I use the Hormel Real Bacon that comes in the bag)Mix everything together and then spoon into the mushrooms, about a quarter size dolp in each one. Bake for abour 20-25 minutes. The mushrooms will turn a little brown and juices will start to run. Once thier cool enough to handle, dig in. Good luck getting them to the table! They're fabulous. My BIL likes shrimp or crab in his. You can use fat free and light ingrediants as well. They're not the best for the waist line, but really good!

What is for supper, I have only changed it 3 times. I have piano lessons to give today and so I realized I needed something easier than roast, mashed potato, green beans and melon. So..... I am now having a large green salad and spaghetti. I gave up on trying to have garlic bread as all the ones I tried wasn't worth the calories.

Tonights dinner - seasoned salmon and mixed vegetables (broccoli, summer squash, carrots, snap peas, and there might be something else in there too. I will have to wait and see)
I love sleeping single on a queen size bed. The other side is usually lined with books. :-)

Shoot yeah... give me a double bed over a twin any time. I like to sleep diagonally! LOL!

Last night we had venison Swiss steak (I used tapioca flour) with tomatoes and onion, green salad, artichoke with lemon dill sauce.
I think tonight we will have a green salad with salmon and asparagus.
That's the kind of stuff I make plenty of and take leftovers with me to work!

Sometimes I'll ask my neighbors, "What's for dinner?" and it'll give me ideas - I'm not one to plan cause I'm living single in a double bed right now ;0). We ALL usually eat dinner, so give us your daily dinner ideas for a running thread. You don't have to post the recipe (unless it looks really good and someone asks?!)

Tonight for me? I roasted a turkey to last me the week, so I'm having turkey, salad and maybe a sweet potato.
