1lb of fresh or frozen spinach 2 onions chopped up 2 large tomatoes remove skin and cut into small pieces 2 tbsp Butter 200g ground beef 1/2 cup of rice 1 tsp paprika salt & pepper as desired
Melt the butter and add the onions. when the onions turn glassy add the ground beef and brown it. Then add the Tomatoes and the spinach. cook on medium heat for about 10 min. pour the rice on top, add 1 1/2 cups of watter and paprika/salt/pepper and cook for another 15 min or until rice is soft on low heat.
peel and shred the cucumbers. chop the garlic really small and add salt to make a garlic paste. combine the yogurt, cucumbers and garlic and mix. sprinkle the olive oil and paprika on top. I like to mix it in, but thats personal preference.
