Hi Ladies,
I played with a recipe I had that didn't bake consistantly for me. Now, I only buy bread in an emergency. I keep the dry ingredients mixed in a freezer bag in the freezer and it makes for quick baking.

Flax Seed Bread

Flour Mix
6 cups Brown Rice Flour
2 cups Potato Starch
1 cup Tapioca Flour
½ cup Garbanzo Bean Flour

I store this mix in the freezer. For a smaller batch of flour mix reduce all ingredients by half. For a larger batch double all ingredients.

(I use this mix for most of my recipes.)

WET INGREDIENTS
1 Egg plus 2 egg whites, or 2/3 cup of liquid egg substitute
3 Tablespoons melted butter
1 teaspoon apple cider vinegar
1 Tablespoon molasses
1 2/3 cup water
3-4 teaspoons of dry yeast

DRY INGREDIENTS
3 Cups GF Flour Mix (see the Flour mix recipe included you will only be using 3 cups of the mixture).
¼ cup ground flaxseed
2 Tablespoons of Potato buds
2 ½ teaspoons xanthan gum
1 teaspoon gelatin
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon egg replacer
¼ cup dry milk powder or non dairy substitute
¼ cup sugar (set aside 1 teaspoon)

Instructions:

Prepare two “4 ¼ x 8 ¼“ bread pans, coat the pan with vegetable oil spray. If you have a large pan use one to bake the bread.

In a medium bowl, place all the dry ingredients except a teaspoon of sugar. (I keep the dry ingredients mixed in the freezer enough for one recipe in a freezer bag. It saves me time when I want to make some bread).

Dissolve 1 teaspoon of the sugar in the 1 2/3 cups of water called for in the recipe. (The water should be lukewarm) and add the yeast. Set aside to foam.

Break the eggs into the bowl of a heavy-duty mixer. Add the oil, melted butter, plus molasses or honey if you prefer, and apple cider vinegar. Using the heavy mixer, (not the dough hook), beat lightly on low speed. (or this will be all over the kitchen). Add the yeast water. Add the flour mix gradually. (or this too will be all over the kitchen If you dump the flour in all at once). Beat at high speed for 3 ½ to 4 minutes.

Spoon the dough directly into your prepared pans; filling them half full to two-thirds full. If you are using two pans split the dough equally between the two pans.
Allow the dough to raise double the size in the oven at 200 degrees for 45-60 minutes. If you are using rapid rising yeast it may take less time to rise about 30-35 minutes. Keep covered with a flour sack towel or a napkin of the same material. You just don’t want to use a towel or napkin that will leave fuzz on the dough.
Bake at 400 degrees for 30 minutes. Cover with foil after 5 to 10 minutes to prevent burning. The question you may have is how I tell if the loaves are done. Just tap the top of the bread and when there is a hollow sound the bread is done. Remove immediately. Cool and slice. Your bread can be stored in the freezer. I like to put wax paper between each slice to they don’t slice together.
This bread is wonderful at room temperature there is no need to toast it so it doesn’t bread apart.

This is the easiest cake ever. Have you ever been in a place that company is stopping by with little notice for coffee and you don't have anything to serve with it. Here is a quick and easy recipe called,

Dump Cake

1 package of yellow cake mix GF mix works too.
1 can of Crushed pineapple
1/4 cup water or pineapple juice (only if using GF mix)
1 can cherry pie filling (Comstock has GF line)
1/2 chopped nuts
1/2 to 1 cup butter or margarine

Grease a 9 x 13 pan

Dump in undrained pineapple and 1/4 cup water or pineapple juice, swirling it around to fill the corners.

Dump in pie filling and push it around until layers of fruit are quite even.

Sprinkle the dry cake mix over the fruit to cover it all.

Melt butter and dribble over top or distribute bits over the top.
Sprinkle with nuts.

Bake at 350 degrees until browned about 1 hour. Serve with whipped cream or GF icecream or other topping you choose.

My favourite to take to potlucks especially in summer
Quinoa Bean Salad 10 -12 servings
------------------
1 c. Quinoa uncooked
7 oz thin green beans trimmed
14 to 19 oz can azuki beans or black beans
rinsed and drained
2 green onions chopped ( I used equal amt of chives)
1/2 English cucumber (long)
3 Tbsp olive oil
3 Tbsp rice vinegar or white wine vinegar
1 Tbsp fresh tarragon (can substitute anise or basil)
few drops of tabasco (optional)

Directions
Cook quinoa (15 min); Rinse in cold water
Blanch green beans and chop in 1/3 inch segments
Mix all ingredients together
lightly season with salt & pepper
Refrigerate for 1 hr

Since my b-day is coming up I thought I would share a cake recipe. It is from a cookbook called baking classics by annalise roberts. I highly recommend it.
The only draw back is the nutrtionial info is not provided.

Lemon Layer Cake
2 Cups granulated sugar
4 large eggs
2 1/2 cups brown rice flour mix to be posted
1/2 teaspoon salt
1 tablespoon baking powder
1 teaspoon xanthan gum
1 cup canola oil
1 cup milk
1 teaspoon pure vanilla extract
1 teaspoon pure lemon extract
1 Tablespoon lemon rind

1. Preheat oven to 350 degrees. Position rack in center of oven. Line two round 9 inch layer cake pans with parchment paper or wax paper and lightly spray with cooking oil.

2. Beat sugar and eggs in large bowl, of electric mixer at medium speed for 1 minute. Add Flour salt baking powder xanthan gum oil milk vanilla extract lemon extract and lemon rind; beat at medium speed for 1 minute. When adding items add at low speed otherwise it will be all over the place.

3. Pour batter into prepared pans. Place in center of oven and bake about 35 minutes (40 minutes of 8 inch cake; 18-20 minutes for cupcakes) or until center springs back when touched and cake has pulled away from sides of pan

4. Cool Cake layers in the pans on a rack for 5 minutes. Use small knife to cut around pan sides to loosen cake, Invert cake layers onto a rack, peel off paper, and cool completely.

5. Carefully slice each layer in half horizontally to create four layers. (This is more easily done when cake has been chilled). I have a cake cutter that makes cutting the layer easier then I can slide it onto a flat cookie sheet without the sides works great. Spread each of the two layers with ½ of the lemon curd. Cover each bottom layer with one of the two remaining top layers.

6. Place one set of filled layers on a cake plate and spread with about ½ cup frosting. Place the other set of filled layers on top and cover top and sides of cake with remaining frosting.



Brown Rice Flour Mix
Brown Rice Flour (Extra Finely Ground) 2 parts 2 cups 6 cups
Potato Starch (Not potato flour) 2/3 part 2/3 cup 2 cups
Tapioca Flour 1/3 part 1/3 cup 1 cup


Lemon Curd Filling
3 egg yolks
¼ cup plus 2 Tablespoons granulated Sugar
¼ cup fresh lemon Juice
¼ cup unsalted butter, cut into 4 pieces
¼ teaspoon guar gum*
2 Teaspoons grated lemon rind
¼ teaspoon lemon extract

1. Combine egg yolks, sugar, and lemon juice in a small sauce pan and whisk until well blended.
2. Cook over medium- low heat until smooth and so thick that curd coats the back of a wooden spoon (this should take 5-7 minutes). Whisk in butter, one piece at a time, until completely incorporated. Whisk gar gum, lemon rind, and lemon extract.
3. Pour the curd into a small bowl and cover with wax paper or plastic wrap. Chill until very cold.

*Guar gum will add viscosity to the curd and keep it from seeping into the cake layers. You would not use gar gum in a lemon curd tart. It is not necessary to use it here, but the end result will be better.


Lemon Butter Cream Frosting
1 cup unsalted butter
3 ½ cups confectioners’ sugar divided
¼ cup fresh lemon juice
¼ teaspoon lemon extract
2 teaspoons grated lemon rind.

1. Beat butter in large bowl of electric mixer until light and fluffy. Add 1 cup confectioners’ sugar, lemon juice, lemon extract, and lemon rind; beat to blend. Add remaining sugar beat until creamy.
2. When I made this cake I used a 9 x 13 pan and did not use the lemon curd. I cut the frosting recipe in half and frosted cake once cooled in pan. The bake time and I am guessing was probably 40-45 minutes. You will need to keep an eye on the bake time. I lost track of how long I baked it.

Those are some great links, Dot!

I make a rue with cornstarch and butter. Good for Mac and Cheese on Rice or Quinoa noodles, or a base for a white sauce. I see Emeril uses Rice Flour.

I thicken stews with Chickpea flour.

For Thanksgiving Turkey gravy I just purree whatever veggies I've got in the stock pot in yea olde blender, the stock, add a little fat from turkey and make a YUM Turkey Gravy. Sometimes I put in a splash of wine.

Turkey Stuffing, I pretty much gave up on, as I'm the only one that ate it.

But I bet you could make a really yum rice or quinoa stuffing if you add a coupla eggs to bind it, sauted onion, a coupla cloves of garlic, celery and a bunch of mushrooms... season with sage and thyme.

Hi Everyone,
I feel the need to vent.... I get the feeling that this is about the only place that anyone will truly understand what I feel. I have suspected that I have a gluten intolerance for about 6 months now and finally had the upper GI and colonoscopy on Wednesday. I don't get the results until May 4th. Since then I have been told that I should avoid: gluten, dairy, acid foods, caffine, fatty foods and sugar. I am so overwhelmed, what is left? To top everything else off, I have to cook a turkey this Wednesday for Passover and for my own sake, it has to be gluten free. Help??? I am getting the eating part pretty good, however, I am stumped on the turkey stuffing and for some reason I am feeling overwhelmed right now..... Thanks for listening,

Creative pie crusts.

Crushed GF pretzels with some melted butter and baked a bit to take moisture out, makes a great torte crust.

Crushed Pamela's Pecan Shortbread cookies mixed with some melted butter, makes a great Cheesecake crust, too.

Hi, I found this recipe for baking powder on celiac.com. Bob's Red Mill, Barkat & Hain sell gf baking powder on celiac.com, amazon.com, Wegman's & Whole Foods.

Baking Powder (Gluten-Free)
(Gluten & Corn Free)
Ingredients:
1/3 cup Baking Soda
2/3 cup Cream of Tartar
2/3 cup Arrowroot (or potato starch)
Mix well. Store in an airtight container.
1 teaspoon of this mixture = 1-teaspoon of regular baking power

Hi, I am looking for gluten-free baking powder. All I can find and have no bad reaction to is the ingredient found in Pamela's pancake and baking mix. I just love this mix! It is called SAPP 28, or di-soduim pyro-phosphate, or sodium acid pyro-phosphate. It is also found to be medium acting and there is one called SAPP 40 which is a fast acting leavening. My sources only sell it in 50 pound orders or 2500 pound orders. This is the common order if you are ordering for a professional bakery using large volume. I just want a 1 pound amount and that may last me a year! In retail stores a can of baking powder is sold in 4 ounce volume. Than is what I want. Is there a source for smaller amounts somewhere? can I get a few ounce sample from a source you may know, or can we get together and split up the large volume order amongst us? Anyone have experience with this type of leavening in cakes and breads? emoticon

Soy Sauce can be found in GF locations of certain stores. I also heard from a mting that Wal-mart brand is GF. Use caution when using since the sodium content is high. The major brand of soyo sauce is wheat fermented "brewed" so GF may just be a flavor immitation. emoticon

Connie Sarros had this recipe for Soy-Free Soy sauce in her latest newsletterette. I use wheat free Tamari sauce so I haven't tried this. Because it uses broth, it think it shlould be used within a few days.

Soy-free Soy Sauce
It's tough enough trying to find a gluten-free soy sauce, but that search gets more challenging when you are also allergic to soy. Do not despair. In a bowl, mix together the following combination for Mock Soy Sauce

1/4 cup vegan, gluten-free, soy-free broth
1/2 teaspoon molasses
1/4 teaspoon balsamic vinegar
1/8 teaspoon salt (sea salt if you have it on hand)
1/2 teaspoon sesame oil


postscript in response to Yvonne's comment on soy: I can eat soy and in fact when I started drinking soy milk again after a 2 year hiatus, my post menopausal symptoms decreased! I was getting enough estrogen again.

emoticon Hi everyone. Here is my Almond Cookie Recipe that was requested. This is a traditional Greek Recipe and when I share it with others I use the official name as it takes the focus off 'gluten free'. This recipe is thanks to Pat of the Nanaimo Celiac Group who took me under her wing and gave me some cooking lessons with our new approach.

Amigdalota.

2 1/2 c ground almonds
1 c sugar
2 tsp pure almond extract
3 egg whites
sliced almonds

Mix ground almonds and sugar. Beat egg whites to soft peaks with almond extract. Stir into almonds and sugar. Spoon ball and roll in sliced almonds (the last time I made them I omitted this step. I spooned a ball and pressed a whole blanched almond onto the top - less trouble and tasted just as good). Bake at 350 degrees until golden (about 15 min or so)

Makes about 24 cookies.

the oven fried chicken sounds good, i use to make it all the time with bread oven magic mix and bread crumbs, i never thought to use corn meal, i'll have to try that. i made quinoa for the first time. i just used 1/2of quinoa, 1 little red potatoe, 1/2small onion, 1/4 of mixed chopped carrots& celery, and i used 1 tsp. of chicken base(mixed with 1 c boiling water)olive oil non-stick spray, and 1 tsp of olive oil. (soak quinoa for 20mins before cooking)
sprayed the pan used the 1tsp of oil, browned onions for 5mins, add carrots,celery & thin sliced red pot. cook for another 3mins, then add the chicken base, and quinoa, simmer on low for 15-20mins.

I made oven fried chicken last night.. My family loved it.
Instead of breadcrumbs I used corn meal.

One egg, lightly beaten... a dash of milk.
in a baggie I had one cup of corn meal, garlic powder, pepper and a dash of salt. I took chicken breasts and stripped them. put them in the egg mixture.. then in the corn meal mixture bag.. shook them up. then laid them on a cookie sheet with foil that had been greased using PAM.
I baked them in a pre heated oven at 400 .. 30 minutes on one side... flipped them and baked for another 20 minutes.. or until brown.

i've been adding a 1/2package of lite silken tofu with any of my recipes that use lean ground meat as a way to lower the fat more , so far i've used that in my chilli, taco's, sloppy joes. . the tofu picks up the flavor of the seasonings, is low in fat, and a good source of protein. next time i make the recipes i'm going to try using the whole package. i know the regular tofu has more calorie then the lite.

Hi Everyone,
My daughter cooked me this gorgeous gluten free cake for Mother's Day:

Orange & almond flourless cake:
Take 2 whole oranges and boil until soft with rind on
Grind 180g raw almonds
250g castor sugar
6 eggs blended
1 tsp. g/f baking powder
dash vanilla essence
pinch salt

Blend all ingredients in food processor until smooth.
Pour into pan lined with baking paper and bake for 40-50 mins at 180oC (350oF). Will be flat cake but very moist.

Absolutely yummy - calories?? who cares?

Did you draw it??Just kidding,watch out for me,Iam a jokester. Anyways,I do have to watch out what goes into my mouth.I have IBS,"hurts soooo bad" but since I started with Sparks,I have not had a bout!!Last night went off my diet a bit and made a taco layered dip,but with low-fat everything but the sirloin and beans,it was so good. Oh, I'm hungry and that orange cake looks so good and moist!

What I liked at first glance is that the food is different. I must be bored with salads!

Update: I made the orange cake -- it was VERY VERY VERY MOIST - too moist this time around. I would say I baked according to directions, the toothpick came out clean, but I should have probably have given it another 5-10 mins. and foiling the edges.
