This has been my favorite lately:


4 Plum tomatoes
Onion
Garlic
All season
Flounder
Olive Oil
Old Bay seasoning

I saute the garlic and onion in olive oil until translucent. Add in chopped tomatoes and Old Bay then saute until soft. Top with Flounder and cover for 12-15 mins or until fish flakes.Yummo!

Just tried this: 2Pks of Tomato Soup; 1/4 cup of Fat Free Ricotta; 1tsp (or more) of

Italian Seasonings; 1/3tsp. Garlic powder; 1/4tsp. baking powder.....Preheat oven to 425

Spray 2 small breadpans (tiny) with Pam.. Mix all ingredients with water (2TBSP or less)
Spread "dough" in pans and bake for 5-8 minutes....Remove from pans and use as a bread..
I love it!!! This makes two (2) Medifast meals....I also spread with Laughing Cow and enjoy.l

Taco Salad:

ground turkey breast w/ homemade taco seasoning (search: taco seasoning on allrecipes website, then cut out or reduce salt) over chopped romaine. Top w/ salsa. YUM

Tuesday's Recipe -

Spinach Cauliflower Bake with Grilled Chicken
Ingredients:
Head of Cauliflower (2.16 lb cauliflower yielded 9 green servings after trimmed and cooked.)
2 cups of fresh spinach, which should cook down to 1 cup.
2 cups of Egg Beaters
4 pieces of chicken breast

1. Steam 1 head of cauliflower.
2. Puree cauliflower in food processor.
3. Pour in 2 cups of Egg Beaters and mix until smooth.
4. Spray a 3 qt. casserole dish with Pam. Pour mixture in.
5. Add 2 cups of spinach. This should cook down to equal about 1 cup cooked spinach. Mix together.
6. Bake at 350 degrees for 35 minutes.
7. While baking, grill 4 pieces of chicken. You want 4.5 ounce cooked weight pieces. Season your chicken however you prefer, remembering to count your seasoning in your condiment usage.
8. Remove cauliflower bake from oven and cut into quarters. Each piece is 3 green servings and 1/4 leanest serving. Serve with 4.5 ounce piece of grilled chicken. With a 4.5 ounce piece of grilled chicken, this is completes for your lean requirements for the day. Don't forget to add a healthy fat!

This recipe makes 4 servings. Each serving is 1 lean and 3 green, fully on plan.

Veggie-rific Noodle-Free Lasagna

1-1/2 Cups or 5.97oz medium zucchini, ends removed, sliced lengthwise (3 Green Options)
1 Cup portabella mushroom, sliced into strips (2 Green Options)
1-1/2 Cups or 4.35oz eggplant, ends removed, sliced lengthwise (3 Green Options)
1 cups canned crushed tomatoes (No Sugar added)(2 Green Options)
1/4 teaspoon garlic powder (1 Condiment)
1/4 teaspoon onion powder 1/2 Condiment)
1/4 teaspoon Italian seasoning (1/2 Condiment)
1 cups package frozen chopped spinach, thawed, thoroughly drained and patted dry (2 Green Options)
2 tablespoons fat-free liquid egg substitute
1-1/2 cup fat-free ricotta cheese 1-1/2 Lean Option
1 tablespoon chopped fresh basil
1/4 teaspoon salt (1 Condiment)
Dash ground nutmeg
2 cup ground-beef-style soy crumbles, thawed from frozen (1 Lean Option)
6 oz shredded part-skim mozzarella cheese (1-1/2 Lean Option)
1 tablespoon reduced-fat Parmesan-style grated topping (1 Condiment)

Preheat oven to 425 degrees F.
Lay several paper towels next to the stove; as you cook the veggies, transfer them to the paper towels to drain excess moisture. Bring a very large grill pan sprayed with nonstick spray to medium-high heat on the stove. Add zucchini, portabella mushroom, and eggplant, and cook until softened, about 2 minutes per side. Set aside. In a large bowl, combine crushed tomatoes with garlic powder, onion powder, and Italian seasoning. Mix well and set aside. In another large bowl, combine spinach, egg substitute, ricotta cheese, basil, salt, and nutmeg. Mix thoroughly and set aside. Evenly coat the bottom of an 8-inch by 8-inch pan with about half of the seasoned crushed tomatoes. Evenly layer half of the sliced veggies over the tomatoes. Spread half of the spinach mixture into an even layer over the veggies. Top evenly with soy crumbles. Evenly layer remaining veggies into the pan, placing them perpendicular to the first layer, followed by the remaining spinach mixture. Evenly cover with remaining seasoned crushed tomatoes. Evenly distribute mozzarella cheese and grated topping over the crushed tomatoes. Bake in the oven until lasagna is hot and mozzarella cheese is golden brown, about 30 minutes. Allow to cool slightly, cut into quarters, and enjoy!

Friday's Recipe

Tilapia Al Ajillo (Garlic Tilapia)

Ingredients:
9.5 oz tilapia - thawed if frozen - should yield 7 oz (1 Lean)
1 clove garlic, sliced (1 Condiment)
2 tsp olive oil (2 Healthy Fats)
1/8 tsp seasoned salt or salt (1/2 Condiment)
1/8 tsp black pepper (1/4 Condiment)
2 tsp fresh lemon juice (1 Condiment)
1/8 tsp dried basil leaves (1/4 Condiment)

Directions:
Season tilapia with salt and pepper. Heat oil in a skillet over medium heat. Put fillets in oil and brown for 2 minutes. Add garlic slices to the oil. Continue cooking for 4 more minutes and then flip fillets.
Fry until cooked through and fish flakes easily with a fork. I cooked the fish for an additional 2 minutes, but it will depend on how thick your fillet is. Mine were thin.
The garlic should turn golden brown, but not be burned. If they begin to burn, spoon the garlic over the fish so they are no longer touching the pan. When cooked, drizzle the fish with lemon juice and sprinkle with basil or parsley.

1 Lean Serving with 3 Condiments and 2 Healthy Fats

Add your veggie and you're got a complete L & G.

Thursday's Recipe -


Stuffed Green Peppers

Ingredients:
3.75 oz 93% fat free lean ground beef, cooked (3/4 Lean)
1 oz 2% reduced fat Mexican Cheese (1/4 Lean)
1/2 cup or 90 grams cooked from frozen cauliflower, grated (1 or 2 peppers to cook the meat in) (1 Green)
1/2 cup Rotel diced tomatoes with green chilies (1 Green)
1/2 cup or 68 grams green pepper, cooked (1 Green)
2 tsp low sodium taco seasoning mix (3 Condiments)

Directions:
Preheat oven to 350 degrees. Cut the top off of the green pepper and set aside. Take out the insides of the green pepper and discard. Boil the top and bottom for about 5 minutes or until tender. Drain.

Brown ground beef until done and drain excess grease. Take out 3.75 oz and reserve the rest for another use. Combine ground beef, rotel tomatoes, grated cauliflower, taco seasoning, half the cheese, and a little bit of water. Stir over medium heat until cheese melts and until well blended. Pour mixture into green pepper and sprinkle the top with the other half of cheese. Place top of green pepper back on and bake for 25 to 30 minutes. To make sure I get the right amount of green peppers, I empty the meat mixture on a plate and chop the green pepper into pieces. Then I weigh the green pepper until I get 68 grams and reserve the rest for another recipe. Combine the meat mixture and green peppers together. Enjoy!

*Note: For an Italian flavor, use 1/2 cup Italian diced tomatoes that is less than 5 grams of carbs per serving and Italian seasonings as your condiments

Chinese Orange Chicken

Ingredients:
9 oz raw chicken breasts, cubed - should yield 6 oz cooked (1 Lean)
1/4 cup chicken broth (1/4 Condiment)
1 1/2 cups diet orange soda with 0 carbs such as diet Crush or diet Rite Tangerine Soda (I used only 1 cup)
1/2 tsp Chinese Five Spice Blend (2 Condiments)
1/2 cup green and red peppers, sliced (1 Green)
1 tsp olive oil (1 Healthy Fat)
1 clove garlic, minced (1 Condiment)
1 cup grated, cooked cauliflower (2 Greens)
Red pepper flakes (optional)

Directions:
Heat oil in a medium skillet over medium high heat and saute garlic with peppers until garlic is lightly brown. Add chicken broth, soda, and Chinese 5 spice and stir until blended. Add cut-up chicken breasts, and sauté until cooked through. Serve over grated, cooked cauliflower.

1 Lean and Green Meal with 3 Condiments and 1 Healthy Fat

When the meat simmers down with the peppers and garlic in the orange sauce, it really adds a lot of flavor! Very good and a nice change from the traditional stir fry made with soy sauce. Serve it over a bed of cauliflower as a substitute for rice and you have a great Chinese stir fry. Enjoy!
