All the info. I received has been very helpful. Thank you.
I have been experimenting with different dressings, and today I loved the large salads that I made.
Both times I started with a fruit base, apple and apricots, then added garlic cloves, apple cider vinegar, mustard, various herbs / spices to taste.
I also did some research into raw dressings, and got some ideas there.
This is day 5 for me, and I have not weighed myself, but I can see that I have lost weight, and feel lighter, and very much better for eating this way.
I have some hummus in my fridge, and was wondering what to do with it. Will take your idea, and make dressing with it. Thank you Happileeme.

I make hummus about once very week or two. After I make the hummus, there is still some in the Vitamix container (an ounce or two), so I add an orange (peel cut off but still as much of the whiite around the orange and all the seeds inside the orange), and then I blend it all. I keep it ina a salad dressing container that has a wide mouth and a plastic cap on top, in he refrigerator for 4-5 days as I use it up. To vary the taste on my salads I also add unpasteurized saurkraut sometimes, and horseradish other times. They both blend well with the flavor of this base. Other times I add Bragg's liquid aminos, or other spices. ...hope that's helpful!

Thought of a few more ideas. Blended fruit can make a nice dressing. I blended an orange and used it for salad dressing as part of a recipe and it was delicious. I saw another recipe that was pineapple and orange blended together. I haven't tried that yet though. Sometimes just adding some fruit to the salad helps offset all the greens. I added an apple yesterday and it really did the trick.

I am on Day 3 today and things are going pretty well. I am planning to blog about the experience as I go through the 6 weeks but haven't had a chance yet. My goal is to lose 42 pounds by April 2012. I want to be 150 or less for my next birthday. It's my gift to me.

Bless you all for the great suggestions. I am going shopping tomorrow, and will check into the flavoured vinegars.

Am on day 2 and doing well. Still working on the coffee, but have cut my intake down. I have about 30lbs I would like to lose, so will give this my all.

I have a few flavored vinegars that I use. Balsamic, Pear, and Fig are my current favorites.

I love balsamic vinegar. There are some flavored vinegars like pear and pomegranate but I haven't tried them. I have been marinating mushrooms in balsamic vinegar and adding those to the salad. I have also been using Bragg Organic Sprinkle which is basically an organic Mrs. Dash. It has 24 herbs and spices and no salt. That adds a nice taste. Mixing some fresh basil in the lettuce adds a nice flavor too.

Massaged salads are great as every part of the greens gets a little bit of flavor from the dressing without having to use too much dressing. I have used avocado, salsa, hummus as a dressing.

Hi all,

I recently purchased the book, and love the recipes.

My question concerns lettuce - red leaf/romaine. I have never really enjoyed these vegetables without a good dressing, like Rancher's Choice which makes the salad more palatable. Of course I am not able to eat this dressing at this time.
I have made 2 of the dressings from the book which were quite good. Any ideas on what to put on my salad apart from these in the book? Thanks so much.
