Here is a very easy low cal healthy soup.

Red Lentil Soup (Gourmet Oct 07)
1 lg onion, chopped
1 tb olive oil
4 garlic clolves, finely chopped
1 tsp ground cumin
1 Turkish or 1/2 California bay leaf
1 sprig fresh thyme
1 cup red lentils, picked over and rinsed
3 1/2 cups reduced sodium chicken broth
3 cups water
2 tb chopped flat leaf parsley
Accompaniment: lemon wedges


Cook onion in oil, with 1/2 tsp salt in a medium heavy saucepan over medium heat,stirring occas, until softened, about 8 minutes.

Add garlic, cumin, by leaf, thyme and cook stirring, 1 minute more. Add lentils, broth, water, 1/2 tsp salt, 1/2 tsp pepper and simmer, partly covered, stirring occas, until lentils are very soft and falling apart,
30-45 mins.

Discard bay leaf and thyme sprig, then puree 2 cups in blender (use caution with hot liquids in blender) and return to pan.

Stir in parsley.

(I would use less salt and add some chopped carrots with the lentils)

This week's challenge: MAKE A POT OF HOMEMADE SOUP
Now that cold weather is here where many of us live, time to help your body fight off those cold germs or soothe a cold with some nutritious home made soup. No more oversalted and over processed canned soup, even those white can liners are unhealthy. What a difference in taste with a big pot brimming with good stuff that you make yourself.

Whether it is grandma's chicken soup recipe, trendy yummy butternut squash soup, or a hearty vegetable bean mixture, dig out those recipes, dust off those soup pots and simmer away. So easy, inexpensive, full of nutrients, and helps those pounds drop off with the extra liquid. I also like to puree soups for a different texture. I would love to hear from you with your favorite soup recipes to share with our team.
