I have definitely experienced what you're describing, but I've never had the problem of bitterness from kale chips done in the dehydrator (thankfully.) Might be that they are so coated with flavor-y goodness, though, lol!

I can't do raw Kale. It's kind of bitter to me. I have no sense of smell (literally zero) so it affects how I taste, and anything that is bitter is REALLY bitter to me.

Many thanks! I experimented with some hummus flavored (using lemon juice and chickpea flour, among other tasty ingredients) kale chips this afternoon, and because I couldn't wait so many hours to try them, made them in the oven instead of the dehydrator. They were good, but I can tell they'll be better raw.

You can do them in the oven on the lowest setting. They won't be raw, but will still be delicious!

I used:
-2 bunches kale (preferably organic), in the 4-5 c range when prepped -- it doesn't matter what type
-1/2 c nutritional yeast
-1/4 c apple cider vinegar
-1 T tahini (sesame paste) -- if you don't have it, unsweetened nut butter would work, too
-1 T tamari (wheat-free soy sauce) -- regular soy sauce or Bragg's liquid aminos are also fine
-1 T agave syrup
-1 t garlic powder
-1 t onion powder
-1/2 t paprika -- I used hot, but substitute regular if you don't like spicy

Method:
-Wash kale and pat or spin dry. Cut or tear into pieces a few inches wide, taking care to remove thick stems (the tiny ribs are OK.)
-In a large bowl, combine all other ingredients and whisk to blend.
-Throw in the kale and get your hands messy. It really works best this way.
-Spread evenly on baking sheet(s).
-Heat oven to the lowest possible setting and cook for as long as it takes -- this really depends on the temperature -- probably and hour or two, but I'm not sure since I've never done the coated kind of kale chip in the oven.

Do you have a good recipe for the Kale chips? I haven't tried them yet.

Love Kale. Have you made Kale chips? My vegan adopted daughter loves them.
Kale, Italian Sausage (chicken or turkey type), carrots and a few cans of white beans.... add whatever suits your fancy (tomatoes, shredded cabbage, shell pasta).

OK roasted broccoli w/ a sprinkle of parm isn't heinous. But my BF mostly only used to like broccoli so I made it CONSTANTLY. I suffer from Broccoli Burn Out!
