Glad you liked it! It's a staple in my house. We've now been eating half of it as is, then the other half I add some curry and peas like Rhenklaw (sp?) suggested and it changes the soup quite a bit for such a subtle addition. It's DE-LISH!

But I swear ppl who won't eat cauliflower eat this soup.

As a kid my mother always made either peas, carrots, corn or broccoli. So when I grew up I was kind of anti-pea, carrots and anti- broccoli. I'm just not getting to the point where I like peas in lots of odd places where I'd never normally put them. Veggie stews, and now... Cauliflower soup!

Yes I've done it w/ curry (which I LOVE) but never thought of green peas. And they do add a nice punch of color and texture. I'm making it again tonight and adding peas! Thx for the idea. Sometimes it helps when someone else suggests something "outside the box."

That sounds great. Sometimes the simplest recipes are the best. I bet it would also be great with curry spices and a handful of green peas thrown in after it's blended.

I served this as a first course for dinner tonight. One gal does NOT like cauliflower and she had seconds as well as taking the left overs home with her.

Quick Cauliflower soup

1 head cauliflower cut into florets
1/2 onion diced
4-6 cups water OR veggie broth OR chicken broth
1 tsp oregano
salt and pepper to taste.
nutmeg

Put everything in a pot. Simmer for 20 or 30 min or until cauliflower is very soft. Blend w/ immersion blender. Be careful because it will be hot.
Put into bowls and dust with fresh grated nutmeg.
