I served this as a first course for dinner tonight. One gal does NOT like cauliflower and she had seconds as well as taking the left overs home with her.
Quick Cauliflower soup
1 head cauliflower cut into florets
1/2 onion diced
4-6 cups water OR veggie broth OR chicken broth
1 tsp oregano
salt and pepper to taste.
Put everything in a pot. Simmer for 20 or 30 min or until cauliflower is very soft. Blend w/ immersion blender. Be careful because it will be hot.
Put into bowls and dust with fresh grated nutmeg.
